Sarson Ka Saag (Indian Mustard Greens) image

North Indian vegetarian recipe. Using ghee (Indian butter made from cow's milk) is important, since ghee gives that special taste.

2 large dried red chile peppers
2 bunches fresh spinach, washed and chopped
1 bunch mustard greens, washed and chopped
2 tablespoons ghee (clarified butter)
½ teaspoon cumin seeds
¼ cup finely chopped onion
½ teaspoon ginger paste
2 teaspoons garlic paste
½ tomato, chopped
salt to taste
½ teaspoon white sugar, or to taste
¼ cup water

Steps:

  • Place the chiles into a dry skillet over medium heat, and cook and stir until the chiles turn dark red-brown in color and give off their fragrance, 1 to 2 minutes. Remove from heat, allow to cool, and remove stems of chiles; shake out the seeds, and tear the flesh of the roasted chiles into pieces. Set aside.
  • Place the spinach into a saucepan over medium heat; place mustard greens into a separate saucepan. If leaves are dry, mix in 1 or 2 of tablespoons of water. If leaves are still wet, just cover the pans and simmer the greens until tender, about 10 minutes. Allow to cool.
  • Place greens together into the work bowl of a food processor, and pulse several times to break up the greens, then process to a paste, about 1 minute.
  • Heat ghee in a large saucepan over medium heat, and stir in the cumin seeds, stirring for about 30 seconds or until the seeds sizzle and turn a darker brown color. Mix in the onion, cook and stir until lightly browned, about 3 minutes, and mix in the roasted peppers, ginger paste, garlic paste, and tomato. Mix in the pureed greens, bring to a simmer, and stir in salt and sugar to taste. If dish is too thick, mix in up to about 1/4 cup of water, 1 tablespoon at a time, until the greens are the desired thickness.

1 tbsp vegetable oil
1 tsp cumin seed
½ tsp mustard seed
4 green chillies , finely chopped
large piece fresh root ginger , grated
½ tsp turmeric
500g shredded greens, such as kale , Brussels sprouts, or any other
100g pea
juice 1 lemon
½ tsp ground coriander
small bunch coriander , roughly chopped
2 tbsp unsweetened desiccated coconut

Steps:

  • Heat the oil in a large non-stick pan or wok, sizzle the cumin and mustard seeds for 1 min, then add the chilli, ginger and turmeric. Fry until aromatic, then add the greens, a pinch of salt, a splash of water and the peas.
  • Cover the pan and cook for 4-5 mins until the greens have wilted. Add the lemon juice, ground coriander, half the fresh coriander and half the desiccated coconut, then toss everything together. Pile into a serving dish and scatter with the rest of the coconut and coriander.

3 cups kale (1 bunch)
3 cups mustard greens (1 bunch)
1 teaspoon olive oil or 1 teaspoon butter
1/4 teaspoon cumin seed
1/4 teaspoon mustard seeds
3/4 teaspoon salt
1/4 teaspoon green chili pepper
1 teaspoon garlic (minced or crushed)
1 lime wedge
4 teaspoons water

Steps:

  • Prepare the kale and mustard greens by cutting middle stem out of each leaf. Rinse the leaves thoroughly.
  • Cut the greens into strips that are about 1 inch by 3-4 inches.
  • Add 4 tsp of water to a 2 quart pot. bring to boil on medium heat.
  • Add the kale first, then the mustard greens pour 1/4 teaspoon into the greens and cover tightly with lid.
  • Cook for 5-10 minutes, stirring occasionally, until the greens are wilted and tender.
  • When the greens are done cooking, they should be dark green. Keep the lid on the pot and set aside.
  • In a small saucepan heat 1 tsp oil or butter until almost smoking at medium high heat.
  • Add mustard seeds and cumin seeds. They will pop and sizzle. turn heat to medium.
  • Add green chili pepper and crushed garlic and fry until lightly browned. Optional: add 1/8 teaspoon red chili pepper.
  • Pour mixture over greens. Add remaining salt (1/2 tsp) to taste.
  • Serve with a dash of lime juice (brings out the flavor of the greens).

1/2 cup tarragon or cider vinegar
1/2 cup water
1/4 cup olive oil
2 tablespoons prepared horseradish
1/2 teaspoon lemon juice
1 cup ground mustard
1/2 cup sugar
1/2 teaspoon salt

Steps:

  • In a blender or food processor, combine all ingredients; cover and process for 1 minute. Scrape down the sides of the container and process for 30 seconds. , Transfer to a small saucepan and let stand for 10 minutes. Cook over low heat until bubbly, stirring constantly. Cool completely. If a thinner mustard is desired, stir in an additional 1-2 tablespoons water. Pour into small airtight containers. Store in the refrigerator.

1/2 pound ground pork
2 garlic cloves, finely chopped
2 teaspoons finely grated peeled ginger
1 teaspoon Sichuan peppercorns, crushed
3/4 teaspoon crushed red pepper flakes
1/2 teaspoon cumin seeds, coarsely chopped
1 tablespoon vegetable oil
Kosher salt, freshly ground black pepper
4 cups low-sodium chicken broth
1 bunch mustard greens, torn (about 4 cups)
4 scallions, thinly sliced
2 tablespoons reduced-sodium soy sauce
1 teaspoon fish sauce (such as nam pla or nuoc nam)
8 ounces wide rice noodles

Steps:

  • Mix pork, garlic, ginger, Sichuan peppercorns, red pepper flakes, and cumin in a medium bowl. Heat oil in a large pot over medium heat. Add pork mixture; season with salt and pepper and cook, stirring and breaking up with a spoon, until browned and cooked through, 8-10 minutes.
  • Add broth and bring to a boil; reduce heat and simmer until flavors meld, 8-10 minutes. Add mustard greens, scallions, soy sauce, and fish sauce and cook, stirring occasionally, until greens are tender, 5-8 minutes; season with salt and black pepper.
  • Meanwhile, cook noodles according to package directions; drain.
  • Divide noodles among bowls and ladle soup over.

Transfer to bowl and serve hot or at room temperature.
