3 tablespoons butter
1 can (15 to 16 ounces) mixed nuts
1/4 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon chili powder
1/8 teaspoon ground cumin

Steps:

  • In a large skillet, melt butter over low heat. Add nuts and Worcestershire sauce; cook and stir 5-7 minutes. Drain on paper towels. Place nuts in a large bowl. Combine remaining ingredients; sprinkle over nuts, tossing to coat. Cool. Store in an airtight container at room temperature.

2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon cayenne
salt, pepper
1/2 teaspoon allspice
1 pinch onion salt
2 cups peanuts or 2 cups hazelnuts
1 cup pecans
1/2 cup shelled sunflower seeds
1/2 cup shelled pumpkin seeds
2 tablespoons sesame seeds
cooking spray

Steps:

  • combine all ingredients in a large bowl.
  • preheat oven to 300.
  • line a baking pan with tin foil, spray with cooking spray.
  • spread the mixture in pan and bake for 15 minutes, stirring once.
  • cool in pan, about 15 minutes.

These are the best of all the recipes I have tried. A couple tips after the first review that I didn't bother to write. Don't pour the nuts onto a cookie sheet. Use a slotted spoon and leave the extra "sauce" in the pan. Use the times suggested, otherwise you will get burnt nuts, not tasty. You may reduce the amount of butter slightly depending on the nuts you use. I use whatever nuts I have on hand. This is a recipe that is sweet to the tongue, then lets out a long slow heat. A beautiful balance. Hope you will try and enjoy.

3/4 cup unsalted butter
3/4 cup packed dark brown sugar
6 tablespoons water
1 1/2 teaspoons salt
1 tablespoon Chinese five spice powder
1 teaspoon cumin
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
2 cups pecan halves
2 cups whole natural cashews
2 cups walnut halves

Steps:

  • Preheat oven to 350 degrees. Butter 2 rimmed baking sheets. Melt 3/4 sup butter in large non-stick skillet over medium heat. Add sugar, 6 tableshppons water, salt, and spices; stir until sugar dissolves.
  • Add all nuts; stir. Cook until liguid thickens and coats nuts, stirring often, about 4 minutes. Divide nuts and syrup between sheets; spread in single layer. Bake until glaze is golden and crisp, stirring often, about 15 minutes. Cool on sheets.
  • Store airtight at room temperature.

3 cups raw nuts, such as walnuts and almonds
1/4 cup flaxseed
1/4 cup raw hulled sunflower seeds
1/4 cup quinoa
2 large egg whites
Coarse salt
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
2 tablespoons honey

Steps:

  • Preheat oven to 325°F. Mix nuts, flaxseed, sunflower seeds, and quinoa in a bowl. In another bowl, whisk together egg whites and 1 1/2 teaspoons salt with the cayenne, cumin, cinnamon, and honey. Pour over nut mixture, and toss to combine.
  • Spread evenly on a parchment-lined baking sheet, and bake until dry and darkened, stirring occasionally, about 30 minutes. Season with more salt, if desired. Remove mixture from parchment while cooling so it does not stick. Nuts can be stored for up to 2 weeks in an airtight container at room temperature.

1 egg white
2 tablespoons cold water
⅔ cup walnut halves
⅔ cup pecan halves
⅔ cup whole almonds
½ cup sugar
1 ½ teaspoons cinnamon
¼ teaspoon ginger
¼ teaspoon nutmeg

Steps:

  • Beat egg white and water until frothy. Stir nuts into mixture to coat, then drain slightly in a colander, 3-4 minutes. Mix sugar and spices in a plastic bag. Add nuts and shake to coat. Spread wet nut mixture in a single layer on a microwave-safe plate; microwave on high for 1 1/2 minutes, or until mixture is bubbly. Stir.
  • Microwave another 1 1/2 minutes. Remove; stir to separate. Cool. Store in a sealed container.

1 teaspoon cumin seeds, dry-roasted and coarsely ground

1 1/2 to 2 teaspoons Chaat Masala or store-bought
1/4 teaspoon cayenne pepper, or to taste
1/4 teaspoon black salt (optional)
1/2 cup peanut oil for deep frying
2 cups mixed shelled raw nuts such as almonds, cashews, peanuts, pistachios
1/2 cup mixed shelled raw seeds, such as sunflower seed, pumpkin seeds or melon seeds

Steps:

  • 1. Prepare the cumin seeds and chaat masala. Then, in a small bowl, mix together the cumin seeds, chaat masala, cayenne pepper, and black salt.2. Heat the oil in a medium-size nonstick wok or saucepan over medium heat and fry the nuts until golden, about 1 minute. Before removing them from the wok, hold them for a few seconds between the slotted spatula and the sides of the wok to drain out as much oil as possible. (Do not drain them on paper towels, or the spices will not adhere.) Transfer them to a medium bowl, quickly add the spice mixture and toss well, making sure that the nuts are well coated.3. Remove all the oil from the wok, then in whatever oil remains on the wok surface, stir-fry the seeds over medium-low heat until the seeds are fragrant and golden, 1 minute. Add to the spiced nuts and toss together. Taste and adjust seasonings. (Keep in mind that the warm nuts will be soft, but will harden as they cool.)
