1 to 2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts (about 1 1/4 lb)
1 tablespoon vegetable oil
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (11 oz) whole kernel corn with red and green peppers, undrained
1/3 cup Old El Paso™ Thick 'n Chunky salsa
2 cups hot cooked rice

Steps:

  • In small bowl, mix chili powder, salt and pepper; sprinkle evenly over both sides of chicken breasts.
  • In 10-inch nonstick skillet, heat oil over medium heat. Add chicken; cook 8 to 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).
  • Stir in beans, corn and salsa. Heat to boiling. Reduce heat. Cover and simmer 3 to 5 minutes or until vegetables are hot. Serve with rice.

1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (about 1 1/4 pounds)
1 tablespoon vegetable oil
1 (15 ounce) can black beans, rinsed and drained
1/3 cup thick & chunky salsa
1 cup frozen whole kernel corn
1 tablespoon chopped fresh cilantro (optional)

Steps:

  • Mix chili powder, salt and pepper. Sprinkle evenly over both sides of chicken breast halves.
  • Heat oil in 10-inch skillet over medium heat. Cook chicken in oil 8 to 10 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut.
  • Stir in beans, corn and salsa. Heat to boiling; reduce heat.
  • Cover and simmer 3 to 5 minutes or until vegetables are hot. Sprinkle with cilantro if desired.

1 large tomato, chopped (about 1 cup)

Steps:

  • Mix chili powder, salt and pepper. Sprinkle evenly over both sides of chicken. Heat oil in 10-inch skillet over medium-high heat. Cook chicken in oil 10 minutes or until brown on both sides. Stir in remaining ingredients. 1 cup breadcrumbs
3 teaspoons ground hot paprika
2 teaspoons ground cumin
1 teaspoon onion salt
1 teaspoon dried oregano
4 chicken breast fillets
1/3 cup plain flour
2 eggs, lightly beaten
1/2 cup olive oil, for shallow frying
1 large avocado
1/2 cup low-fat sour cream
2 medium tomatoes, diced
1/3 cup low-fat sour cream, extra
1/2 cup hot salsa

Steps:

  • Process the avocado until smooth. Fold in 1/2 cup sour cream. Set aside in the fridge.
  • Combine breadcrumbs, hot paprika, cumin, onion salt, and oreganoin a bowl.
  • Toss chicken in flour, shake away excess. Dip in eggs, then coat in breadcrumb mixture.
  • Shallow fry chicken in hot oil until browned on both sides. Approximately 5-10 minutes either side.
  • Place in oven, on a hot tray. Bake at 180C for 10 minutes.
  • Top each breast with the avocado mixture, tomatoes, sour cream, and hot salsa.

This is my family's go-to meal when we want something quick and delicious. The best part of all is there is only one pan to clean. We use La Victoria Hot Salsa, but any salsa works great. You can eat this dish alone or put it in tortillas for burritos.

1 lb chicken breast tenders
1 (1 1/4 ounce) packet taco seasoning mix, Lawry's
1 cup salsa
2 cups water
2 cups Minute brown rice
1 (14 1/2 ounce) can black beans, rinsed
1/3 cup sour cream
1/3 cup cheddar cheese, shredded
tortilla (optional)

Steps:

  • In a deep skillet combine chicken tenders, taco seasoning packet, salsa and water and bring to a boil.
  • Reduce heat, cover and simmer for 10 minutes.
  • Remove lid and stir in rice and beans and bring back to a boil.
  • Then reduce heat and cook on low for 5 minutes or until rice is tender.
  • Top with sour cream and cheddar cheese.
  • To use as burrito filling reduce water by 1/2 cup.
