SPICY MEXICAN BROWNIE CAKE
With a cayenne kick and plenty of cocoa, this Mexican Brownie Cake is sure to become a spicy new favorite.

Steps:
- Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening; lightly flour. In small bowl, stir 1 1/4 cups butter and 3/4 cup cocoa until blended. In large bowl, beat eggs with electric mixer on high speed 3 minutes. On low speed, beat in remaining cake ingredients and cocoa mixture, just until blended. Spread in pan.
- Bake 35 to 40 minutes or until top edge of cake just begins to pull away from sides of pan. (Top may appear irregular with slight dips in some spots.) Cool completely in pan on cooling rack, about 2 hours.
- In large bowl, beat 1/3 cup butter with electric mixer on medium speed until fluffy. Beat in crema, 1/4 teaspoon cinnamon and 3/4 teaspoon vanilla until light and fluffy, scraping bowl frequently. On low speed, add powdered sugar, 1 cup at a time, scraping bowl occasionally. Stir in milk, one teaspoon at a time, until smooth and spreadable. Frost cake. Sprinkle lightly with cocoa. Store in refrigerator.

AARON SANCHEZ'S MEXICAN BROWNIES
Steps:
- Preheat the oven to 350 degrees. Line a 9-by-13-inch baking dish with parchment paper, leaving an overhang on two sides. Press the paper into the corners of the pan and lightly grease the paper with butter.
- Melt the 2 sticks of butter in a nonstick saucepan over medium-low heat; do not boil. Remove from the heat and let cool slightly. Add the sugar, eggs and vanilla to the saucepan and stir with a wooden spoon until combined.
- Add the cocoa, flour, cinnamon, chili powder, salt and baking powder and mix until smooth. Spread the batter in the prepared pan and bake until a toothpick inserted in the middle comes out fudgy, 20 to 25 minutes. Cool in the pan on a rack, then use the parchment paper to lift out the brownies before slicing.
MEXICAN BROWNIES
I found this recipe a while ago, but I changed it quite a bit, so here is my version. This type of brownie is not too sweet nor too dense. I would definitely say this is a mature brownie.

- Preheat oven to 350 degrees F (175 degrees C). Line a 12x15-inch baking pan with parchment paper, leaving about 3 inches of paper overhanging 2 sides to use as handles.
- Place the butter in a microwave-safe bowl, and cook on Medium until the butter is about half melted, about 1 minute. Mash the butter with sugar until well combined, and stir in eggs one at a time, incorporating each one before adding the next. Mix in vanilla extract.
- Sift the cocoa, flour, cinnamon, pequin pepper, salt, and baking powder into a bowl. Sprinkle in any salt caught in the sifter. Mix the flour mixture into the butter mixture, stirring to blend well, and pour the batter into the prepared baking pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out with moist crumbs, 20 to 25 minutes. Let cool in the pan, and use parchment paper handles to remove the brownies for slicing.

- Preheat the oven to 350 degrees F. Melt the butter and baking chocolate together in the microwave or over a double-boiler. Allow to cool. Whisk eggs, sugar and vanilla together. Then once the chocolate has cooled a little, whisk the egg mixture and chocolate together.
- Stir in the flour, coffee granules, salt, cinnamon and cayenne. Once the batter is well combined, add the chocolate chips. Grease a 9x13 inch baking dish. Pour the batter into the dish and bake for 35-40 minutes.
- Test the brownies with a toothpick—if it comes out mostly clean, take them out of the oven. The brownies continue to cook a little as they're cooling, but you don’t want them to be overcooked. Allow the brownies to cool completely. Cut into 24 squares. Clean the knife with a paper towel in between cuts to insure the edges are smooth.
- Mix 1 tablespoon cocoa powder, 1 tablespoon powdered sugar, and 1/4 teaspoon of cayenne pepper together. Using a sifter or small sieve, dust the brownies while they are still in the pan. Then carefully remove them with a spatula.
