PORK BACK RIBS WITH SPICY DIPPING SAUCE



Pork Back Ribs with Spicy Dipping Sauce image

2 racks back ribs, membrane removed
1/2 cup Pork Rub, recipe follows
Olive oil
1/4 cup apple cider vinegar
2 tablespoons honey
1 red jalapeno, seeded and minced
1 tablespoon chopped fresh oregano leaves
Kosher salt
4 tablespoons brown sugar
4 tablespoons onion powder
4 tablespoons garlic powder
4 tablespoons dried thyme
4 tablespoons dried oregano
2 tablespoons mild paprika
2 tablespoons hot paprika
4 teaspoons cayenne
4 teaspoons ground coriander
2 teaspoons black pepper
2 teaspoons white pepper
2 tablespoons kosher salt

Steps:

  • Sprinkle the ribs all over with the rub and rub in well with your hands. Cover and refrigerate for 1 hour, up to overnight.
  • Make sure the racks of the grill are set so they are 6-inches above the fire. Preheat the grill to high. When the grill is hot, turn off 1 side, or push the coals to 1 side. Place the ribs, fattier side down, on the cooler side of the grill and close the cover. Cook until browned, about 20 minutes. Turn the ribs over and continue to cook until the bones wiggle easily when twisted, about 1 1/2 hours, turning every 20 minutes or so.
  • Remove from the grill and let rest for 10 minutes before slicing.
  • Make the Spicy Dipping Sauce: In a small bowl, combine the vinegar, honey, jalapeno, oregano, and salt and whisk well. Pour into a decorative bowl.
  • Slice the ribs into desired size and serve with the Spicy Dipping Sauce.
  • Mix all ingredients together and stir well.

4 teaspoons cumin seeds
4 teaspoons coriander seeds
4 teaspoons packed dark brown sugar
4 teaspoons smoked paprika
1/2 teaspoon red pepper flakes
2 1 1/2- to 2-pound racks baby back pork ribs, membranes removed
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
1/4 cup honey
2 tablespoons apple cider vinegar

Steps:

  • Preheat the oven to 325˚ and set a wire rack on a rimmed baking sheet.
  • Put the cumin and coriander seeds in a resealable plastic bag and crush with a heavy skillet. Transfer to a bowl and add the brown sugar, paprika and red pepper flakes. Season the ribs generously with salt and pepper, rub all over with the vegetable oil, then rub all over with the spice mixture, pressing to adhere. Transfer the ribs meat-side up to the rack.
  • Stir together the honey and vinegar in a small bowl. Bake the ribs, rotating the baking sheet after 45 minutes, until well browned, 1 hour 30 minutes to 1 hour 45 minutes. Brush half of the honey mixture on both sides of the ribs and bake 15 more minutes, then brush with the remaining honey mixture and continue baking until the ribs are deeply browned and tender, about 15 more minutes. Transfer the ribs to a cutting board and let cool slightly before carving.

1 cup soy sauce
1 cup sake, optional
1 teaspoon ground dried chile flakes
4 tablespoons honey
2 tablespoons minced fresh ginger
2 tablespoons minced fresh garlic
6 tablespoons sesame oil
2 sides (about 3 pounds) baby pork ribs

Steps:

  • In a bowl, mix together all of the ingredients for the marinade. Place the ribs in a container just large enough to hold them 1 side on top of the other. Pour the marinade over the ribs, cover with plastic wrap or aluminum foil and let marinate in the refrigerator overnight.
  • Preheat the oven to 300 degrees F.
  • Place half of the marinade in a baking pan with the ribs and bake, turning the ribs frequently, for 2 hours, or until the meat is tender. Reserve the remaining marinade.
  • Under a preheated broiler or on a wood-fired grill, glaze the ribs for 3 to 4 minutes on each side. Watch carefully so they don't burn. Remove the ribs and cut each side into individual pieces. Bring the reserved marinade to a boil.
  • Arrange the ribs in an overlapping fashion on each plate or on a large serving platter. Spoon the warm marinade over them.

I remember eating at Spago in the early 1980s when I was in law school in LA (this was a treat) and I was in my 20s loving every minute of it. Faye Dunaway was waiting in line in front of me to use the ladies room! Anything "Wolfgang Puck" reminds me of that! By the way, I have no memory of what I ate! This recipe requires overnight marination.

These spicy "baby backs" are easy to prepare and are sure to please your guests. They are complimented when served with fresh fruit salad, topped with my Creamy Orange Fresh Fruit Salad Dressing, Recipe # 242306 and my Onion Rings, Recipe 211428. Add some fresh Lemonade, my recipe #235288 and you've got a meal all will remember.

2 (10 -12 ounce) racks of baby-back pork ribs
1/4 cup brown sugar
2 tablespoons chili powder
2 teaspoons ground nutmeg
2 teaspoons ground coriander
2 teaspoons dried sage
2 teaspoons dry oregano
1/2 cup black cherry jam
1/2 cup wine vinegar
1 teaspoon crushed red pepper flakes
2 tablespoons finely minced fresh ginger
2 garlic cloves, finely minced

Steps:

  • Remove the membrane from the underside of the ribs. If you've not done this before, Google the technique. It's important. In face, to it every time you prepare ribs for any recipe.
  • Place the ribs in a rectangular dish or baking dish.
  • To make the rub, combine the dry rub ingredients.
  • Using your fingers, vigorously rub the dry rub on both sides of the ribs.
  • Cure the ribs, refrigerated, for 2 hours, or for more flavor, up to 24 hours.
  • To make the glaze:.
  • In a small bowl, combine the glaze ingredients.
  • Stir well.
  • To grill the ribs:.
  • Grill over a medium indirect fire, basting occasionally, for about 75 minutes or until the meat shrinks from the rib bones.
  • Or, cook in a preheated 325 degree oven for the same time.
  • Baste the ribs with the glaze only during the last 30 minutes or the glaze will burn.
  • To serve:.
  • Cut ribs into individual pieces.
  • Transfer to a garnished serving platter or to four individual garnished plates.
  • Serve at once, with the extra cherry glaze, and the fresh fruit and onion rings.

This is simply fabulous and the best I have ever made & eaten, YUM! It's got to be the panko and peanut oil. My children love it as does everyone we have served it to. The original recipe suggests 6 oz. cutlets. I typically get very thin slices from the butcher and they don't need further flattening w. a meat mallet. They are probably 2-4 oz each. 4 veal cutlets, VERY thin
salt
pepper
1/2 cup flour, for dredging
2 eggs
2 tablespoons water
1 -1 1/2 cup panko breadcrumbs, crushed
1/2-1 cup peanut oil, for frying, add more as needed
1 lemon, cut into wedges

Steps:

  • Preheat oil to 375 degrees F. in a heavy, deep saucepan.
  • Beat eggs with 2 T water to make an egg wash.
  • To prepare Wienerschnitzle:.
  • Pound out the cutlets if necessary.
  • Season the veal cutlets with salt and pepper.
  • Score the coat the veal cutlets with four shallow knife cuts in a cross-hatch pattern to help prevent curling while cooking.
  • Dredge in flour. Dip in egg wash. Coat with crushed panko crumbs. *You may need more flour and panko crumbs.
  • Deep fry about 2-3 minutes PER SIDE, or until golden brown and cooked through. Transfer to paper towels to drain. Replenish oil as necessary.
  • My notes:.
  • Panko (Japanese) bread crumbs can be found in the Asian aisle/ market to often times with "regular" bread crumbs. I highly recommend using panko. They are lighter & much crunchier than standard bread crumbs. To crush, pour them in the food processor and give a quick whirl or in a ziploc bag and run over them with a rolling pin.
  • I would recommend slicing each cutlet in half to ease in cooking.
  • The cutlets should be sliced very thinly. If not you may have to use a meat mallet to tenderize and pound flatter.
  • I serve with basmati rice, lemon wedges and recipe#390832.

There are many recipes for tiramisu, but what sets this one apart are both the simplicity- and the fact that Wolfgang teaches how to make the ladyfingers making it a little more economical to make. Try it, you will find it to be fairly easy. Great make-ahead dessert that makes a great impression!

6 eggs, separated
1/4 cup sugar, plus 1/4 cup
1 cup cake flour, sifted
melted butter, for brushing pan
6 egg yolks
1 cup sugar
1/4 cup marsala
1/4 cup brandy
2 lbs mascarpone cheese
1 cup espresso, hot
3 tablespoons brown sugar
1 tablespoon sugar
1 teaspoon lemon juice
1 teaspoon vanilla extract
1/2 cup grated bittersweet chocolate

Steps:

  • Ladyfingers:
  • Preheat oven to 350 degrees F.
  • Butter a 12 by 16-inch baking tray. Line with parchment paper and brush again with butter.
  • In a mixing bowl, whip the egg yolks with 1/4 cup sugar until ribbony and light in color. Reserve. In another mixing bowl, whip the egg whites to soft peaks. Slowly add the remaining 1/4 cup sugar and continue to whip to medium peaks.
  • Sift the flour again. With a rubber spatula, fold half of the flour mixture into the yolk mixture. Fold in 1/2 of the egg white mixture. Then fold in the remaining 1/2 flour mixture. Lastly, fold in the remaining 1/2 egg white mixture.
  • Pour the batter into prepared baking tray and with an offset spatula, carefully spreading the batter to fill the tray.
  • Bake for 12 to 15 minutes until done and golden in color. Remove from the oven and allow to cool to room temperature. Use as needed.
  • This can be made up to 2 weeks in advanced, wrapped in plastic wrap and foil and stored in the freezer.
  • Mascarpone Cream:
  • In a medium bowl, whisk together the egg yolks and sugar. Add the Marsala and brandy. Place over a double-boiler and cook until mixture reaches 160 degrees F. Continue to cook mixture for another 5 minutes, until the mixture resembles a thick paste (this is a sabayon).
  • Remove from the double-boiler and cool mixture over ice bath, until room temperature.
  • Whip the mascarpone cheese to soft peaks. Fold into the cooled sabayon until well incorporated.
  • Use as layers in the tiramisu or as needed. Can be made up to 4 hours ahead.
  • Espresso Syrup:
  • Brew fresh espresso. To 1 cup of hot espresso, add the brown sugar, sugar, lemon juice and vanilla extract. Stir until dissolved.
  • Assembly:
  • Divide the sheet of ladyfinger into 2 (8 by 10-inch) sheets. Divide espresso syrup into 2 portions. Divide the mascarpone cream into 3 portions.
  • To assemble, spread the first portion of the mascarpone cream at the bottom of a deep (8 by 10-inch) mold topped with 1 sheet of ladyfinger.
  • Pour 1 portion of espresso syrup on to layer of ladyfinger until soaked. Repeat process. Lastly, top with the remaining mascarpone cream and cover with grated chocolate.
  • Cover mold and refrigerate at least 2 hours before serving.
