1/3 cup creole mustard or 1/3 cup stone ground mustard
1 tablespoon orange marmalade
1 teaspoon Tabasco sauce
2 bunches green onions
1 lb large shrimp, peeled and deveined
1 lb andouille sausage
2 tablespoons Tabasco sauce

Steps:

  • To prepare sauce: Combine mustard, orange marmalade and Tabasco sauce in small bowl. Set aside.
  • To prepare skewers: Cover bamboo skewers with water; soak for at least 30 minutes.
  • Preheat grill or broiler.
  • Trip tops and white bottoms from green onions. Blanch green onions in boiling water for 30 seconds.
  • Drain skewers. Thread 2 shrimp and 1 sausage slice onto each skewer, twisting a strip of green onion around each skewer. Brush shrimp with Tabasco sauce.
  • Cook skewers 5 to 8 minutes or until shrimp are cooked through, turning once. Serve with sauce.

Steps:

  • Soak skewers completely in water at least 30 minutes.Combine mustard, orange marmalade and TABASCO® Sauce in small bowl. Set aside.Preheat grill or broiler.Divide scallions into individual strips. Blanch strips in boiling water for 30 seconds. Drain skewers. Thread 2 shrimp and 1 sausage slice onto each skewer, twisting a scallion strip around each skewer. Repeat with remaining skewers, shrimp, sausage and scallions. Brush shrimp with TABASCO® Sauce.Place skewers on grill. Grill 5 to 8 minutes, turning once until shrimp are cooked through.

These delicious kebabs are a Spanish take on surf and turf. Because the skewers aren't on the grill long enough to cook fresh sausages, fully cooked sausages are used here.

3/4 cup olive oil
4 large garlic cloves, pressed
2 tablespoons chopped fresh thyme
5 teaspoons smoked paprika*
4 teaspoons Sherry wine vinegar
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried crushed red pepper
12 uncooked extra-large shrimp (13 to 15 per pound), peeled, deveined
12 1-inch-long pieces andouille or other fully cooked smoked sausages (such as linguiça; about 16 ounces)
12 cherry tomatoes
12 2-layer sections of red onion wedges
Nonstick vegetable oil spray
Special Equipment
6 long metal skewers

Steps:

  • Whisk oil, garlic, thyme, smoked paprika, Sherry wine vinegar, salt, black pepper, and crushed red pepper in medium bowl to blend for glaze. Transfer half of glaze to small bowl and reserve for serving.
  • Alternately thread shrimp, sausage pieces, cherry tomatoes, and sections of onion wedges on each of 6 long metal skewers. Arrange skewers on large rimmed baking sheet. DO AHEAD: Can be made up to 6 hours ahead. Cover and chill skewers and bowls of glaze separately.
  • Coat grill rack with nonstick spray and prepare barbecue (medium-high heat). Brush skewers on both sides with glaze from 1 bowl. Grill until shrimp are opaque in center, turning and brushing occasionally with more glaze, 6 to 8 minutes.
  • Arrange skewers on platter. Serve with remaining bowl of glaze.

1/4 cup sesame oil
1/4 cup chopped fresh parsley
2 tablespoons hot sauce
2 tablespoons minced garlic
1 tablespoon ketchup
1 tablespoon asian chili paste
1 teaspoon salt
1 teaspoon black pepper
3 tablespoons lemon juice
2 lbs large shrimp, peeled and deveined
12 wooden skewers, soaked in water

Steps:

  • Whisk together the olive oil, sesame oil, parsley, hot sauce, minced garlic, ketchup, chile sauce, salt, pepper, and lemon juice in a mixing bowl. Set aside about 1/3 of this marinade to use while grilling.
  • Place the shrimp in a large, resealable plastic bag. Pour in the remaining marinade to use while grilling.
  • Preheat an outdoor grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 2 minutes per side until opaque, basting frequently with reserved marinade.

5 tablespoons cajun seasoning
1/4 cup sesame oil
1/4 lemon juice
2 tablespoons minced ginger
2 tablespoons dry mustard

32 large shrimp

Steps:

  • Soak wooden skewers in water for about 30 minutes prior to preparing shrimp.
  • Peel and devein shrimp.
  • Rinse shrimp with cool water, and set aside, to drain excess water.
  • Whisk together all ingredients except for shrimp.
  • Let mixture stand for about 5 minutes.
  • Add shrimp to mixture and let marinate for approximately 30 minutes.
  • Prpare grill on medium-high heat.

1 large onion, halved, thinly sliced
1 large red bell pepper, cut into 1/3-inch-wide strips
1 tablespoon chopped fresh thyme
1 cup low-salt chicken broth
5 tablespoons Creole mustard (such as Zatarain's)
2 teaspoons red wine vinegar
*Available in the spice section of most supermarkets.

Steps:

  • Toss shrimp with Creole seasoning in medium bowl to coat. Heat 1 tablespoon oil in heavy large skillet over high heat. Add sausage pieces, cut side down. Cook until browned on both sides, about 5 minutes. Transfer sausage to bowl. Add shrimp to skillet; cook until browned and just opaque in center, about 3 minutes. Transfer to bowl with sausage.
