GINGER-HONEY GLAZED BARBECUED PORK CHOPS



Ginger-Honey Glazed Barbecued Pork Chops image

A quick and easy low fat and low carb recipe adapted from a weight loss tracking website's newsletter.

Yield 1 pork chop, 6 serving(s)

Number Of Ingredients 6

1/3 cup honey
1/3 cup low sodium soy sauce
1/3 cup rice vinegar
2 garlic cloves, crushed
1 tablespoon gingerroot, freshly grated
6 pork loin chops, center-cut, boneless about 1 inch thick

Steps:

  • In a small saucepan combine the honey, soy sauce, vinegar, garlic and ginger. Over high heat cook until mixture reduces by half. Set aside to cool.
  • Spray the grill grate with non-stick spray or wipe down well with oil, preheat grill to medium-high.
  • Season the pork chops with salt and pepper.
  • Grill the chops on each side for approximately 4 to 6 minutes depending on thickness. Brush the honey mixture on both sides of the chops and grill 2 to 3 minutes more on each side.
  • Remove from grill and place chops on platter. Drizzle the remaining honey mixture over them and serve.

Glaze
1/2 cup pure maple syrup
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
4 cups fruit chunks such as pineapple, peaches, and/or bananas

Steps:

  • Build a charcoal fire for direct grilling. Soak the bamboo skewers in a bowl of water and set aside.
  • Combine the glaze ingredients in a medium bowl and mix well. Add the fruit and toss gently to coat with the glaze. Cover and refrigerate.
  • Thread the fruit on the soaked skewers, alternating each fruit type. Place the skewers on the grill and cook directly over medium-high heat for 1 1/2 minutes on each side, or until browned and caramelized. Serve warm.

1/2 cup balsamic vinegar
1/2 cup honey
Dash salt
6 medium peaches or nectarines, halved and pitted
Vanilla ice cream, optional

Steps:

  • In a small saucepan, combine vinegar, honey and salt; cook and stir over low heat until blended, 2-3 minutes. Reserve 1/3 cup mixture for brushing peaches., Bring remaining mixture to a boil over medium heat; cook and stir just until mixture begins to thicken slightly (do not overcook), 4-6 minutes. Remove from heat., Brush peaches with some of the reserved balsamic mixture. Grill, covered, on an oiled rack over medium heat until caramelized, brushing occasionally with remaining reserved balsamic mixture, 6-8 minutes on each side. Serve with glaze and, if desired, ice cream.

A sweet and spicy finishing glaze that's great on barbecued pork chops, ribs, chicken, or ham. We think it's much fresher tasting than store-bought. Can also be used as chutney.

Number Of Ingredients 12

3/4 cup water
2 tablespoons cider vinegar
2 tablespoons red wine vinegar
2 tablespoons honey
2 tablespoons light brown sugar
1 tablespoon freshly grated ginger or 1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1 -1 1/2 teaspoon crushed red pepper flakes
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/2 small onion, minced
1 1/2 cups fruit preserves (such as raspberry, peach, apricot, cherry or your favorite)

Steps:

  • In a small saucepan over low heat, stir together water and the next 10 ingredients. Simmer, uncovered, until onion bits are very soft, about 5 minutes. Add preserves and simmer, uncovered, about 20 minutes. Mixture may appear a little thin, but will thicken.
  • Cool to room temperature then refrigerate until ready for use. Refrigerate up to 2 weeks.
  • Apply as you would barbecue sauce in the last few minutes on the grill.
