CHEESY CRAB QUESADILLAS
This tasty quesadillas are made with crab, cheese, olives and chiles.

Steps:
- Heat oven to 400°F.
- Combine all quesadilla ingredients except tortillas and butter in bowl. Brush 1 side of each tortilla with butter. Place tortillas, buttered-side down, onto ungreased baking sheet.
- Spread about 1/2 cup filling on each tortilla; fold in half. Press together lightly.
- Bake 7-10 minutes or until heated through. Cut each quesadilla into 4 wedges. Serve with desired toppings.

CRAB QUESADILLAS
Quesadillas make a great snack as well as an easy lunch or supper! Kids just love them! This one can be easily made with shrimp, as well. :)

Steps:
- Shred crab meat; mix together with sour cream, lime juice, and green onions in a small bowl.
- Season to taste with salt and pepper.
- Heat griddle or small frying pan with a small amount of oil or cooking spray.
- Take a tortilla, place about 1/8 of crab mixture on it and spread evenly.
- Top with 1oz.
- (about 1/4 cup) cheese and sprinkle with some chopped cilantro.
- Place on hot griddle; when cheese starts to melt, fold in half.
- Allow to heat through and brown nicely, then remove from heat.
- Repeat with other tortillas.
- Quesadillas can be kept warm on a stoneware plate or baking dish in the oven on warm while you are busy with the others.
- Serve topped with a dallop of sour cream or guacamole, and wedges of lime, if you wish.

BAKED CRAB QUESADILLAS APPETIZERS
Unlike most quesadillas, these are baked, not fried. These are also cut into thirds for appetizers, but if you'd like, leave them whole and have them for a meal! I love crab, and I love cheese. I also tend to like flour tortillas! So this is something that worked out well in my appetizer repertoire!

Steps:
- Combine butter and oil; set aside.
- Saute onion, peppers, and garlic in 2 tbsp reserved butter mixture in a medium saucepan over medium heat, stirring constantly until tender. Remove from heat. Gently stir in crabmeat and next 3 ingredients.
- Place on tortillas on baking sheets; brush 1 side of each tortilla with remaining butter mixture. Turn tortillas over; spread crabmeat mixture evenly over half of each tortilla, and sprinkle with cheese. Fold tortillas in half.
- Bake at 475 degrees for 4 minutes or until golden. Cut each tortilla into thirds. Serve warm.

- Combine chicken, cheese,dressing and chiles together in a bowl.
- Place about 1/2 cup of chicken mixture on each torilla.
- Fold in half to seal.
- Place quesadillas on a baking sheet.
- Bake at 350 F for 15 minutes or until cheese is melted.
- If desired garnish with salsa and guacamole.
- You can put any kind of cheese you like.
BAKED QUESADILLAS
If you don't like frying them, try baking! Quesadillas can be made with whatever filling ingredients you have on hand and can easily be made into a vegetarian meal. (I've merely included what I normally use.) Ingredient amounts are very rough, adjust to suit your taste. You can saute the veggies first if you like, but I personally can't tell a difference in taste, so I leave them raw.

- Preheat oven to 350 degrees.
- Lay out two tortillas on two baking sheets.
- Sprinkle a layer of cheese over each tortilla.
- Sprinkle other toppings over each tortilla.
- Sprinkle the remaining cheese over the fillings.
- Lay the other tortillas on top.
- Bake for about 10 minutes, or until cheese is melted and tortillas have reached desired crispiness.
- Top with salsa and sour cream.
- Other ideas: fill with onions, jalapenos, tomatoes, cilantro, whatever leftover meats you have on hand, diced or ground. You could also top with guacamole.
