I sometimes chop up a chipotle pepper and throw it in with some adobo sauce for a twist. I don't measure spices, so my measurements are conservative.

Steps:
- Arrange the chicken breasts in the bottom of a slow cooker, and pour in the salsa and tomato sauce. Add the garlic and onion, and sprinkle in the cumin, chili powder, salt, and pepper. Set the cooker on Low, and cook until the chicken is very tender, 4 to 5 hours. Shred the chicken with two forks for serving.

- Add chicken; turn to coat.

SPICY CROCK-POT CHICKEN
A friend gave me a variation of this recipe. I tweaked it come up with this tasty version. Being a "dump" cook, this recipe is exactly that....dump in a little of this, dump in a little of that, etc. Put it in the crockpot in the morning and viola', dinner is done when you get home. This recipe has many uses....soft tacos, cruncy tacos, or simply enjoy over rice!

Steps:
- Put frozen chicken breasts in crockpot.
- Sprinkle with taco seasoning mix.
- Drain diced tomatoes and green chilies, but reserve the liquid for possible use later.
- Add vinegar to crockpot.
- Cover and cook on low for 8-10 hours.
- After 6 hours of cooking, you may need to shred the chicken using 2 forks.
- Stir and continue cooking. May need to add all or part of the reserved liquid if it looks too dry.

- In a medium bowl, mix together peanut butter, lime juice, soy sauce, ginger, sweet chili sauce and sambal oelek.
- Brown the chicken using a small amount of oil or use a stovetop grilling pan.
- Once the chicken is browned, dip the chicken in the sauce and place in slow cooker.
- Pour the rest of the sauce over top of the chicken.
- Cook on Low 8 hours or on High 4 hours.
- Garnish with peanuts and cilantro, if using.
- **This is very hot! It's best to add the Sambal Oelek after everything else and adjust the amount to your preference.

- Cook chicken pieces until browned in skillet. Remove and drain.
- Place onion, garlic and jalapeño pepper in skillet and sauté until slightly cooked.
- Add all ingredients to stoneware and stir to combine. Add hominy in the last hour. Cover cook on Low 7 to 9 hours or on High 3 to 4 hours.

SWEET AND SPICY CROCK POT CHICKEN
An easy-to-make crock pot chicken dish that is sweet and spicy at the same time. Adjusting the cayenne will adjust the heat in this dish (I always add more).

Steps:
- Heat oil in skillet.
- Add chicken and brown on all sides.
- While chicken is browning, make sauce by combining garlic, brown sugar, soy sauce, chicken broth, lemon juice, and cayenne in a mixing bowl.
- Remove browned chicken from skillet and season to taste with salt and pepper.
- Place chicken into crock pot and cover with sauce.
- Cover and cook on low for 4-8 hours or until chicken is done, depending on your crock pot.
- Remove chicken from crock pot and turn crock pot to High.
- Mix corn starch and water thoroughly together, then add to crock pot liquid.
- Place cover on crock pot so that the lid is slightly ajar.
- Cook until sauce thickens, about 20-30 minutes.
- Return chicken to crock pot to coat, then serve either alone or over a bed of rice and topped with sauce.
