For crisp bacon without overcooking the scallops, I partially cook the bacon first before wrapping the scallops.

16 large sea scallops (cleaned and pat dry with paper towels)
8 slices center cut bacon
16 toothpicks
olive oil spray
freshly ground black pepper (to taste)

Steps:

  • Preheat air fryer to 400F 3 minutes.
  • Place the bacon in the air fryer to partially cook 3 minutes, turning halfway. Remove and set on a paper towel to cool.
  • Remove any side muscles on the scallops. Pat the scallops dry with paper towels to remove any moisture.
  • Wrap each scallop in slice of bacon and secure it with a toothpick.
  • Spritz olive oil over scallops and season lightly with black pepper.
  • Arrange scallops in a single layer in the air fryer, cook, in batches 8 minutes turning halfway until scallop is tender and opaque and bacon is cooked through. Serve hot.

16 sea scallops
8 slices bacon
olive oil
salt (to taste)
pepper (to taste)

Steps:

  • Start by patting your sea scallops dry with a paper towel.
  • Cut your bacon in 1/2 (half).
  • Wrap your scallop with 1/2 a piece of bacon. Secret it with a toothpick. Continue to wrap your scallops until they are all done.
  • As you prepare them, set them into the air fryer.
  • Spray them with olive oil and season with salt and pepper.
  • Set your air fryer to degree 370F. Air fryer setting, for 5 minutes.
  • After 5 minutes, flip and set your timer for another 5 minutes.
  • Check the scallops and bacon for doneness. When they are done, remove them.
  • Plate, serve, and enjoy!

1 can (14-1/2 ounces) vegetable broth
1 cup quinoa, rinsed
1/4 teaspoon salt
1/8 teaspoon plus 1/4 teaspoon pepper, divided
10 bacon strips
16 sea scallops (about 2 pounds), side muscles removed
1 cup drained canned pineapple tidbits

Steps:

  • In a small saucepan, bring broth to a boil. Add quinoa, salt and 1/8 teaspoon pepper. Reduce heat; simmer, covered, 12-15 minutes or until liquid is absorbed., Meanwhile, preheat air fryer to 400°. Arrange 8 strips of bacon in a single layer on tray in air-fryer basket. Cook 3 minutes or until partially cooked but not crisp. Remove and set aside. Add remaining 2 bacon strips; cook until crisp, 5-6 minutes. Finely chop crisp bacon strips. Cut remaining partially-cooked bacon strips lengthwise in half., Wrap a halved bacon strip around each scallop; secure with a toothpick. Sprinkle with remaining pepper., Arrange scallops in a single layer on greased tray in air-fryer basket. Cook until scallops are firm and opaque, 8-10 minutes. Discard toothpicks., Remove quinoa from heat; fluff with a fork. Stir in pineapple and chopped bacon. Serve with scallops.

This delicious appetizer is prepared quickly and easily in the air fryer and served with a spicy Sriracha mayo dipping sauce. I use the smaller bay scallops for this. If you are using jumbo scallops it will require a longer cooking time and longer strips of bacon.

½ cup mayonnaise
2 tablespoons Sriracha sauce
1 pound bay scallops (about 36 small scallops)
1 pinch coarse salt
1 pinch freshly cracked black pepper
12 slices bacon, cut into thirds
1 serving olive oil cooking spray

Steps:

  • Mix mayonnaise and Sriracha sauce together in a small bowl. Refrigerate Sriracha mayo until ready to serve.
  • Preheat the air fryer to 390 degrees F (200 degrees C).
  • Spread scallops out onto a plate or cutting board and blot dry with a paper towel. Season with salt and pepper. Wrap each scallop with 1/3 slice of bacon and secure with a toothpick.
  • Spray the air fryer basket with cooking spray. Place bacon-wrapped scallops in the basket in a single layer; split into 2 batches if necessary.

2 bacon strips
2 beef tenderloin steaks (5 ounces each)
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
2 cups sliced baby portobello mushrooms
1/4 teaspoon dried thyme
2 tablespoons butter, divided
1-1/2 teaspoons olive oil
1/4 cup Scotch whiskey
1/2 cup diet ginger ale
1 tablespoon brown sugar
1-1/2 teaspoons reduced-sodium soy sauce
1/4 teaspoon rubbed sage

Steps:

  • Place bacon in a single layer in air-fryer basket. Cook at 350° until partially cooked but not crisp, 3-4 minutes. Remove to paper towels to drain., Preheat air fryer to 375°. Sprinkle steaks with salt and pepper; wrap a strip of bacon around the side of each steak and secure with toothpicks. Place steaks in a single layer on greased tray in air fryer basket. Cook until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 7-10 minutes, turning halfway through., Meanwhile, in a large skillet, saute mushrooms and thyme in 1 tablespoon butter and oil until tender; remove from heat. Add whiskey, stirring to loosen browned bits from pan. Stir in ginger ale, brown sugar, soy sauce and sage., Bring to a boil. Reduce heat; simmer, uncovered, until reduced by half, 3-5 minutes. Stir in remaining tablespoon butter. Serve with steaks.
