Blackberry Balsamic Vinaigrette Recipe image

This recipe will enhance any salad it touches, and it's also a fantastic marinade for chicken.Makes about 2 cups / serving size: about 1 tablespoon

Provided by Valentina K. Wein

Categories     Condiments, Sauces, Dressings and Vinaigrettes

Time 10m

Number Of Ingredients 9

1¼ cup fresh blackberries
½ cup balsamic vinegar
1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard
2½ teaspoons granulated sugar
1 teaspoon salt
¾ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper
1 cup extra virgin olive oil

Steps:

  • Add the everything except the oil to a small saucepan and place it over low heat. Stirring a bit, cook just to dissolve the sugar and warm the mixture, about 3 minutes.
  • Remove the pan from the heat and use the back of a fork to macerate the blackberries. (I like keeping them partially intact.)
  • Gradually whisk in the oil and blend until it's completely emulsified.

FILIPINO-STYLE SPICED VINEGAR

Filipino-Style Spiced Vinegar image

You can store this all-purpose sweet-and-spicy vinegar in clean mason jars, but it is easier to keep it in repurposed glass bottles. Note that this recipe can be adjusted as you like-try using different chiles or other spices like bay leaf.

Yield Makes 3 cups (720 ml)

Number Of Ingredients 7

1 tablespoon whole black peppercorns
3 to 4 cups (720 ml to 1 L) white sugarcane vinegar
1/4 cup (60 ml) fish sauce

BLACKBERRY VINEGAR

Blackberry Vinegar image

Make a nice vinegarette by adding oil, honey, and poppy seeds then splash on the salad or over coleslaw for a nice change. There are lots of other uses for flavored vinegars too. Why pay the store cost when it is easy to make? NOTE: Please follow sterile canning procedures for your safety. Do not cut corners or skip steps. Also note the nutrition at the side is including the whole berry not the correct removed berry amounts.
