A snazzy way to play with avocados *UPDATE* Some have said it's kinda mild and I agree. I came up with this originally for a cpl. fambly members who like it that way. BUT, I just now (02/24/2012) added the creole seasoning to help perk it up a bit. I hope this helps some of ya'll to enjoy it more and for those that like it mild just kinda ignore the creole addition. Have a good day peeps.

1 cup lager beer or 1 cup ale
1 cup all-purpose flour
1 1/2 teaspoons paprika
2 garlic cloves, chopped finely
2 california avocados
1 1/2 teaspoons tony chachere's creole seasoning (optional)
vegetable oil, as needed (for deep frying)
salt, as needed
favorite salsa

Steps:

  • To make beer batter, whisk together beer, Tony's seasoning, flour, paprika, and garlic until well blended.
  • Let stand at least 2 hours.
  • Peel avocados; cut each into 6 wedges.
  • Dredge 6 wedges in reserved beer batter.
  • Deep fry in hot oil (370 F) until golden about 3 minutes.
  • Repeat with remaining wedges.
  • Serve wedges with fav.
  • salsa.

  • Combine a 12-ounce bottle of beer, 1 cup barbecue sauce, 1 seeded habanero chile, 1/4 cup chopped pickled jalapenos, 1 teaspoon chipotle chili powder and 1 clove garlic in a saucepan. Simmer until thick, stirring, 30 minutes. Remove the garlic and chile.

  • Heat the oil in a large heavy-bottomed skillet or saucepan over medium heat. You want it to be shimmering and when you drop a small spoonful of batter into the oil and is starts to fry, you’re good to go.
  • In a bowl, combine the flour, garlic powder, smoked paprika and salt and whisk to combine. Pour in the beer and whisk until a smooth batter forms. Dip each avocado slice in the batter and gently place it in the skillet. Don’t overcrowd the skillet – you can fill the bottom but do a few batches at a time. As soon as the avocado is golden and crispy, turn it over and fry for another minute or so, frying for about 2 to 3 minutes total. Place each avocado slice on a paper towel to drain any excess grease.
  • To build the tacos, place 2 to 3 slices in the center of the tortilla and add the pickled onions, microgreens and/or cilantro, queso fresco and chipotle crema. Add a lime spritz and you’re good to go!
  • Place the onions in a jar or cup. In a bowl, whisk together the vinegar, sugar and salt until the sugar and salt dissolve. Whisk in the water. Pour over the sliced onions. Let sit at room temperature for an hour. You can obviously make this ahead of time and once made, store it in the fridge in a sealed container or jar.

  • Heat oil in a heavy bottomed pot over medium-high heat to 375-degrees F. Oil should be at least 2-inches deep.
  • Spread 1/4 cup of the all-purpose flour on a small baking sheet or plate. Lightly coat avocado slices in flour.
  • In a shallow bowl or rimmed plate, whisk together remaining flour, Italian seasoning, garlic powder, salt and pepper. Add hot sauce and beer; mix until smooth.
  • Working in batches, add coated avocado to the batter, gently toss to coat. Carefully add batter coated avocado to the hot oil one at a time. Fry for about 1 1/2-2 minutes or until golden. Remove and let drain on paper towels. Monitor oil temperature as batches are frying to maintain consistent 375-degrees F.
