SAUTéED SIRLOIN TIPS WITH BELL PEPPERS AND ONION
Steps:
- Rinse, pat dry and cut the sirloin steaks into 1-inch pieces.
- Whisk together the teriyaki sauce, brown sugar, olive oil, chopped parsley, 3 clove minced garlic and red pepper flakes. Place into a plastic storage bag and refrigerate for several hours or overnight.
- To prepare, remove the sirloin tips from the marinade. Discard the marinade.
- Heat a few drizzles of olive oil in a large cast iron or heavy skillet over medium-high heat. Add the sirloin tips. Cook for 5-7 minutes until browned and to your preferred doneness. Season with 1 tsp of steak seasoning. Remove from the pan to a platter to rest.
- Add the sliced bell peppers and onion wedges to the pan. Season with 1 tsp steak seasoning and black pepper to your taste. Add additional olive oil if needed. Cook for 5 minutes scraping the brown bits from the bottom of the skillet. Cook until browned and crisp tender.
- Add the sirloin beef tips back to the pan. Stir until heated through then serve.

Steps:
- Add the steak to a mixing bowl and season with salt and pepper. Stir until well combined.
- Heat a large skillet over medium-high heat. Once the skillet is hot, you can add in the ghee. Next, add the steak bites to the skillet cook for 3-5 minutes until browned on all sides. Remove the meat from the pan and set aside.
- Add the apple cider vinegar to the skillet to deglaze the pan. Then, add the minced garlic, onion, mushrooms, and diced peppers. Cook the veggies for 10-12 more minutes until the sliced onion is translucent and the bell peppers are tender yet crisp.
- Add the steak and its juices back to the skillet. When the beef is back in the pan, give everything a good stir until well combined and cook for 2-3 more minutes until the steak is hot.
- Remove the skillet from the heat and garnish with fresh sliced green onion before serving.

This is a recipe that I created, using some simple ingredients and spices I had available. The rich flavors and ease with which it is created is incredible in that it uses only one pan and one cutting board (cleaned between cuttings, of course).

- Preheat olive oil in a skillet at 350 degrees Farenheit.
- Once oil is hot, add onion and carrot; saute until onions are translucent.
- Add steak, salsa, salt, oregano, garlic powder, white pepper, cayenne pepper, and black pepper.
- Stir.
- Cook uncovered until meat is browned.
- Lower heat and simmer until carrots are tender.
- Serve.

- In a large skillet heat oil over high heat. Saute the onion until almost translucent.
- Add the stew meat and cook on high heat until meat is browned on all sides; about 3 to 5 minutes.
- Pour 2 cups water, soy sauce, and Worcestershire sauce into the skillet. Stir in garlic powder, salt and pepper. Bring to a boil and reduce heat. Cover and simmer for 1 1/2 to 2 hours.
- Meanwhile combine the gravy mix with 1 cup water. Mix thoroughly and stir into the meat mixture. Bring to a boil stirring frequently until slightly thickened.

- Combine 1 cup flour, paprika, cayenne, salt, and pepper in a shallow dish.
- Heat oil in a medium pan over medium-high heat.
- Coat beef tips thoroughly with flour mixture.
- Cook beef in oil until well browned. Remove beef.
- Add 1/2 cup flour to pan and brown to a light brown roux, adding water to desired thickness, about 20 minutes. You can also add the seasoned flour if you want more spice.
- Season to taste with salt and pepper.

- FOR THE PAN SAUCE: Melt the niter kibbeh (or butter) in a heavy saucepan over medium heat. Add onions, both bell peppers, ginger, garlic, berbere and cardamom. Reduce heat to medium-low and cook, stirring frequently, for about 30 minutes or until onions are starting to brown and vegetables are soft. Adjust seasoning and "heat", if desired.
- FOR THE BEEF: Season beef on all sides with kosher salt. Heat oil in a large cast-iron (or heavy-duty) skillet over high heat until smoking lightly. Add the beef and spread in a single layer to ensure even browning. Cook without stirring for about 3 minutes or until well seared on one side. Turn, and cook other side another 3 minutes or until other side is well seared. Continue to cook the beef, stirring occasionally, until cooked to preference.
- Toss beef into the spicy sauce in the saucepan. Stir in lemon juice, and serve immediately.
