SUNNY'S 1, 2, 3 SPICY BEAN DIP



Sunny's 1, 2, 3 Spicy Bean Dip image

Number Of Ingredients 6

Two 15-ounce cans black beans, one rinsed and drained
3 tablespoons plain Greek yogurt
1 tablespoon chile garlic sauce, plus additional for garnish (I like sambal oelek)
Kosher salt and freshly ground black pepper
Olive oil, for drizzling
Nut crackers (I like Blue Diamond Nut Thins), pita chips or any other dippable snacks

Steps:

  • Combine drained and rinsed beans, undrained beans, yogurt, chile garlic sauce, a pinch of salt and a few grinds of pepper in a food processor. Blend until smooth while drizzling in a bit of olive oil to help the process along and to get the desired thickness.
  • Pour the dip into a serving bowl and garnish with a drizzle of olive oil and a dollop of chile sauce in the center. Serve with nut crackers, pita chips or any dippables.

1 tablespoon canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder
1/4 teaspoon cayenne pepper
One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

This is an Ecuadorian recipe which I got from the book, "South American Cooking". The author suggests that it is good for tailgate parties. Unusual and maybe even a little "weird", but one of those combos that surprises you with how good it is. This would halve easily if you're not feeling daring and would rather make a smaller quantity. :)

Number Of Ingredients 8

2 chorizo sausages or 2 mild Italian sausage, skinned and chopped
1 onion, finely chopped
2 garlic cloves, minced
2 -3 poblano chiles or 2 -3 other mildly hot chili peppers, seeded and minced
1/2 cup tomato sauce
2 cups cooked kidney beans (reserve some of the can or cooking liquid) or 2 cups canned kidney beans, slightly mashed (reserve some of the can or cooking liquid)
4 bananas, ripe but firm
tortilla chips, to serve

Steps:

  • In a large saucepan, sauté the sausage over medium-high for 5 minutes, stirring constantly to prevent sticking and break up the meat.
  • Add onion and continue to sauté until onion is soft.
  • Reduce heat to medium and add garlic, chiles, tomato sauce and cook for 5 more minutes.
  • Add beans and bananas and enough bean liquid to make a thick dip consistency.
  • Mash beans slightly with a spoon or potato masher and mix well.
  • Cover and cook over low heat for 5 minutes.
  • Serve warm with tortilla chips.

I was looking for something savory to make with bananas and found a banana dip recipe online. I adjusted it by adding black beans. It comes across like a creamy chutney and the black beans give it texture. It's great with corn chips. A nice alternative to salsa.

2 tablespoons olive oil
1 medium onion, chopped
1 teaspoon sea salt
2 teaspoons ginger, grated
2 garlic cloves, grated
1 teaspoon chili powder (or use fresh chiles if you have them)
2 bananas, mashed
1/4 cup black beans, cooked
2 tablespoons apple cider vinegar
4 tablespoons water
3 tablespoons cilantro, chopped

Steps:

  • 1. Sautee the onions in the oil until golden.
  • 2. Add sea salt, ginger, garlic and chili powder and cook for 1 minute.
  • 3. Add bananas, black beans, vinegar and water. Simmer for 5 minutes.
  • 4. Remove from heat. Let cool and add cilantro.

1 cup picante salsa or 1 cup favorite salsa
1/2 cup shredded Mexican blend cheese

1/4 teaspoon garlic powder

1 teaspoon olive oil
1 green pepper, chopped
1 red onion, chopped
2 (15 ounce) cans black beans, drained & rinsed & 1/4 cup liquid reserved
1 1/2 teaspoons cumin
1/2 teaspoon salt
2 tablespoons cider vinegar
1/2 teaspoon chili powder (more or less as you like)

Steps:

  • Heat olive oil in large nonstick skillet over medium heat.
  • Add the green pepper & red onion.
  • Cook, stirring occasionally, until softened (about 5 minutes).
  • Add beans with reserved liquid to the skillet.
  • Simmer, covered, for about 10 minutes.
  • Place the mixture along with remaining ingredients in a food processor.
  • Pulse to combine, but do not puree. Leave it a little chunky for better scooping.

1 (14.5 ounce) can diced tomatoes, drained
1 cup Italian-style salad dressing
½ teaspoon garlic salt

Steps:
