LEMON GARLIC BAKED TILAPIA RECIPE
This lemon garlic baked tilapia is super easy to make and comes together in under 20 minutes. It's low carb, gluten-free, keto-friendly, and very flavorful. Here is how to make it.

- Preheat the oven to 350 degrees F (180 degrees C). Wash 4-5 medium-sized tilapia fillets with water and pat them dry using a paper towel. Line the tilapia fillets on a 9×13 inch baking tray.
- Note - if using frozen fillets, thaw them before using.
- Stir together 1 tbsp lemon juice, 3 tbsp melted unsalted butter, 1 tsp minced garlic, ½ tsp hot paprika (or Kashmiri red chili powder), ½ tsp salt, and ½ tsp freshly cracked black pepper in a small mixing bowl.
- Pour the marinade over the Tilapia fillets. Arrange 3-4 slices of lemon over the fish.
- Bake uncovered for 15-20 minutes or until the fish is flaky and fork-tender. Garnish with pepper flakes, lemon slices, and chopped parsley or cilantro, and serve hot.

- Sprinkle fillets with seasoned salt; drizzle with lemon juice. In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender. Add tomatoes, peppers, broth, tomato paste, garlic powder and oregano; cook and stir 2-3 minutes longer., Place fillets over tomato mixture; cook, covered, 6-8 minutes or until fish flakes easily with a fork. If desired, serve with pasta.

SPICY BAKED TILAPIA AND TOMATOES
This is a recipe that my wife created and I simply LOVE! This has become one of our two top favorite fish recipes ever. It is a little spicy, and that can be adjusted as desired. But this one is never fishy, and is a nice blend of seafood and Mexican-style food. We always make this with frozen or fresh tilapia, but you could substitute any light, thin white fish fillet.

Steps:
- Sauté the onion in olive oil until lightly brown.
- Add garlic and sauté for a minute longer, then scoop out and set aside.
- Pat fish dry, then sprinkle with lemon juice and salt (optional) on one side. Lightly sprinkle with bread crumbs on that side for a light coating.
- Place fish in the hot pan breading side down and repeat the sprinkle with lemon juice, salt, and bread crumbs for the top side.
- Fry fish over medium-high heat till done through, about 10 minutes, flipping once. remove fish and set aside in a baking dish.
- Add onions, garlic, crushed tomatoes, and Mexican tomato sauce to pan and heat over medium heat. Be sure to scrape all the leftovers from frying into the sauce by scraping/stirring.
- Pour the cooked sauce over the fish in the baking dish to cover completely and bake in the oven at 350° for about 20 minutes.

BAKED TILAPIA WITH TOMATOES AND POTATOES

- Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.
- Meanwhile, toss the tomatoes, olives, capers and garlic with 1 teaspoon olive oil, 2 tablespoons vinegar and 1 teaspoon thyme in a bowl. Coat another baking sheet with cooking spray; add the tomato mixture and spread in an even layer. Roast until softened, 15 minutes.
- Mix the remaining 2 teaspoons olive oil and 1 teaspoon thyme, 2 tablespoons vinegar, 1/4 teaspoon salt, and pepper to taste in a bowl; brush on the fish. Place the fish on top of the roasted tomato mixture and return to the oven until just cooked through, about 10 minutes. Divide among plates and serve with the potatoes.
SPICY BAKED TILAPIA
I found this recipe on the back of a Market Pantry tilapia package, and fell in love. This is a great recipe for a delicious, spicy and crunchy quick meal. Note: add more pepper to make spicier, but consider using frosted corn flakes to help counteract the zing!

- Spray baking pan with nonstick cooking spray.
- Toss together cornflakes, parmesan cheese and cayenne pepper in a shallow bowl or pie plate.
- Whisk together egg and milk in a second shallow bowl or pie plate.
- Dip each fillet in egg mixture; then coat with cornflake mixture.
- Salt and pepper to taste.
- Bake 12 to 14 minutes or until fish flakes easily with fork.

- Preheat oven to 450°F Spray baking dish with non-stick cooking spray.
- Combine salt, paprika, onion powder, dry mustard, garlic, pepper, cumin, basil, oregano, thyme, & rosemary.
- On plate, mix bread crumbs, parsley, and scallions.
- Sprinkle about 1 T of spice mixture on fish. Mix rest of it in with bread crumbs and olive oil.
- Dredge fish in crumb mixture.
- Place on baking pan and bake 12-15 minutes, turning every 5 minutes for even browning.
- Squeeze juice from lemon wedges over fillets & serve.
