ASPARAGUS AND CHEESE POPOVER WITH SPICY HERB OIL



Asparagus and Cheese Popover with Spicy Herb Oil image

1 serrano chile, finely diced
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh mint
1 tablespoon finely chopped fresh flat-leaf parsley
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
Kosher salt
8 ounces asparagus, trimmed
4 large eggs
1/2 cup whole milk, at room temperature
1/2 cup all-purpose flour
Freshly ground black pepper
1 cup coarsely shredded fontina cheese
2 tablespoons butter
1/4 cup grated Parmesan

Steps:

  • For the oil: In a medium bowl, mix together the chiles, basil, mint and parsley. Add in the oil and season with salt and pepper.
  • For the popover: Preheat the oven to 425 degrees F. Place a 10-inch cast-iron skillet in the oven to heat. Prepare an ice bath in a large bowl and line a plate with paper towels.
  • Bring a pan of salted water to a boil, add the asparagus and cook until just tender, 1 to 2 minutes, depending on size. Drain, drop into the ice bath and dry on the prepared plate.
  • Whisk together the eggs and milk until smooth. Slowly whisk in the flour and whisk until smooth. Sprinkle the egg mixture with some salt and pepper. Add 1/2 cup of the fontina cheese.
  • Using pot holders, carefully remove the pan from the oven. Add the butter to the hot pan and stir until melted. Arrange the asparagus in the bottom of the pan and then season with salt and pepper. Pour the egg mixture over the top. Bake until puffed and golden brown, about 15 minutes.
  • Remove the pan from the oven. Sprinkle the remaining fontina and the Parmesan on top, and put it back in the oven until the cheese is melted, 2 to 3 minutes. Remove from the oven and drizzle with some of the herb oil. Serve immediately.

4 tablespoons salted butter
2 large leeks, halved lengthwise and thinly sliced
Kosher salt and freshly ground black pepper
One 14-ounce package refrigerated rolled pie dough (2 crusts)
2 cups grated fontina cheese
1 cup ricotta
1 teaspoon chopped fresh thyme
12 ounces asparagus, trimmed and chopped into 1-inch pieces
1 large egg

Steps:

  • Heat a large skillet over medium heat and add the butter. When the butter has melted, add the leeks, then sprinkle with salt and pepper and cook, stirring occasionally, until soft and golden brown around the edges, 8 to 10 minutes. Set aside.
  • Preheat the oven to 450 degrees F.
  • Unroll the two pie crusts and lay on a sheet pan so that the pieces overlap slightly. Trim the edges of the pastry where it rides up the sides of the sheet pan and press these trimmings into the bare areas so that you are left with a 10-by-16-inch pastry rectangle.
  • Sprinkle over the fontina, leaving a 1-inch border, then top with the leeks. Dollop on the ricotta. Scatter the thyme and asparagus pieces over the ricotta and sprinkle with salt and pepper. Fold the uncovered pastry edge inwards to make a 1/2-inch border all the way around the tart, in the style of a galette.
  • Whisk the egg with a splash of water in a small bowl. Brush it all around the pastry edge.
  • Bake the tart until it is a deep golden brown, 15 to 18 minutes. (If the crust is browning too fast, reduce the heat to 425 degrees F.)
  • Remove the tart from the oven, then allow it to sit for 5 minutes. Cut into pieces and serve.

1 1/2 pounds pencil-thin asparagus (or substitute small or medium asparagus, split lengthwise)
1 tablespoon vegetable oil
Salt and pepper
3 garlic cloves, minced
1 tablespoon grated ginger
1 serrano or other fresh hot chile, finely chopped
A large handful of basil, mint and cilantro leaves

Steps:

  • Snap off and discard the tough bottoms of each asparagus spear. Cut the asparagus into 2-inch lengths
  • In a wok or cast-iron skillet, heat the oil until nearly smoking. Add the asparagus, season generously with salt and pepper and stir well, making sure the asparagus is coated and glistening with oil. Continue to stir-fry over high heat for about 1 minute, until the asparagus looks bright green and barely cooked. Add the garlic, ginger and chile and stir-fry for 30 seconds more.
  • Transfer to a serving platter and scatter leaves on top. Serve immediately.

3 Tbsp butter, melted
1 Tbsp grated Parmesan cheese
3/4 c shredded mozzarella cheese
Italian seasoning
1/2 tsp house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)

Steps:

  • 1. Line a baking sheet with some tinfoil. Place the asparagus on the baking sheet and drizzle with the melted butter.
  • 2. Sprinkle the house seasoning and Parmesan cheese over the top.
  • 3. Place in a 400 degree oven for 15 minutes.
  • 4. Remove and top with the mozzarella cheese and a little sprinkling of Italian seasoning over the top.
  • 5. Return to the oven for an additional 5-7 minutes to melt the cheese and let it begin to brown.

5 teaspoons mixed pickling spices
2 quarts water
3 cups cider vinegar
2/3 cup sugar

  • Wash, drain and trim asparagus; cut into 5-3/4-in. spears (discard ends or save for another use). Pack asparagus into five 1-quart jars to within 1/2 in. of top. Place 1 tablespoon dill seed and 1 teaspoon pickling spices in each jar., In a Dutch oven, bring water, vinegar, sugar and salt to a boil. Carefully ladle hot liquid over asparagus mixture, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. 1 shallot, diced
1 1/2 tablespoons ground cayenne pepper
1 bunch asparagus
1/2 cup white wine
4 tablespoons honey
1 1/2 tablespoons butter
1 1/2 tablespoons flour
3/4 cup milk
1 cup grated gouda cheese, divided, more if desired
salt and pepper
olive oil

Steps:

  • Preheat oil in frying pan. Preheat broiler.
  • Add pine nuts and shallots to frying pan and saute for about 1 minute.
  • Add asparagus to pan and season with cayenne pepper. Cook for about two minutes.
  • In a small mixing bowl, combine the white wine, honey, salt and pepper (to taste). Add to asparagus and cook until asparagus is done (in my opinion, crispy to the bite).
  • In a small saucepan, melt butter over medium heat. Add flour and whisk until well blended.
  • Whisk in milk gradually until mixture is smooth. Add salt and pepper to taste and simmer for about 3 minutes.
  • Remove the pan from heat and whisk in 3/4 cup cheese until melted and blended.
  • Spoon sauce on top of asparagus.
  • Add remaining gouda and place under broiler until cheese is bubbly.
