These little bites are a crowd-pleaser for social events, but we also like to make a big batch and freeze them to take to work during the week. They reheat in 20 to 40 seconds in the microwave. Very versatile!

1 ½ cups shredded cooked chicken
¼ cup hot Buffalo wing sauce (such as Frank's® REDHOT Buffalo Wing Sauce), or to taste
2 ounces cream cheese, softened
1 egg, beaten
1 egg white
1 cup shredded Cheddar cheese
2 tablespoons sliced green onion
1 cup cooked quinoa

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 24 mini-muffin cups.
  • Stir chicken, Buffalo wing sauce, cream cheese, egg, and egg white together in a large bowl until well-mixed. Add Cheddar cheese and green onion; stir. Stir quinoa into chicken mixture. Spoon mixture into prepared mini-muffin cups.
  • Bake in the preheated oven until browned around the edges, 18 to 22 minutes.

1 egg
2 cups shredded cooked chicken
1 cup panko bread crumbs
⅓ cup Buffalo wing sauce
⅓ cup minced celery
¼ cup crumbled blue cheese
¼ cup minced carrot
¼ cup vegetable oil

Steps:

  • Whisk egg in a large mixing bowl. Add chicken, bread crumbs, wing sauce, celery, blue cheese, and carrot. Mix well until evenly combined.
  • Form mixture into 6 patties and place on a baking sheet. Freeze until firm, about 30 minutes.
  • Heat oil in a large skillet over medium-high heat. Add fritters and cook, undisturbed, about 5 minutes. Carefully flip fritters and cook for 5 minutes more. Transfer patties to a paper towel-lined plate. Repeat with any remaining fritters.

2 cups water
2 cups shredded cooked chicken
1/2 cup KRAFT Natural Blue Cheese Crumbles
2 stalks celery, chopped
1 cup KRAFT Classic Ranch Dressing
1/2 cup milk
1/4 cup Buffalo wing sauce
1 pkg. (8 oz.) KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA, divided

Steps:

  • Heat oven to 350°F.
  • Bring quinoa and water to boil in medium saucepan; cover. Simmer on medium-low heat 15 min. or until tender.
  • Spoon quinoa into large bowl. Add all remaining ingredients except 1 cup shredded cheese; mix lightly. Spoon into 13x9-inch baking dish sprayed with cooking spray; top with remaining shredded cheese. (Or if preparing ahead of time, spoon into freezer-proof 13x9-inch pan sprayed with cooking spray. Wrap with foil. Freeze up to 3 months.)
  • Bake 25 to 30 min. or until heated through. (Or if baking frozen casserole, unwrap casserole; cover with additional foil. Bake 1 hour 20 min. or until heated through, uncovering after 1 hour. Or thaw frozen casserole in refrigerator overnight. Bake, uncovered, 35 to 40 min. or until heated through.)

1/2 cup quinoa, rinsed
1 cup water
1 cup chicken, cooked and shredded
1/4 cup hot sauce (to taste)
1/4 cup onion, finely diced
1/2 cup cheddar cheese, shredded
1/4 cup blue cheese, crumbled
1 egg
1/4 cup panko breadcrumbs
salt and pepper
oil (for frying)

Steps:

  • Simmer the quinoa in the water until the liquid has been absorbed and the quinoa is tender, about 15 minutes and let cool enough to handle.
  • Mix the cooked quinoa with the chicken, hot sauce, onion, cheddar cheese, blue cheese, egg, breadcrumbs, salt and pepper, adding more breadcrumbs if required to allow it to hold its shape.
  • Heat the oil in a pan over medium heat.
  • Spoon the mixture into the pan and form patties of any size that you desire and cook until golden brown on both sides, about 2-4 minutes per side, and set aside on paper towels to drain.

I created this recipe when I was on a highly restricted diet for 5 months, but I loved it so much that I adapted it a little and it's now a staple for us. It goes especially well with soup. They are also really good dipped in pretty much any kind of mustard, and my little one year old boy loves them. Feel free to experiment with any kind of rice you have on hand for this. I've used 11 different types of rice for it, and each time it was wonderful. It's a simple side dish, and sure to please anyone that comes through my door for a snack or a meal.

2 cups cooked rice
2 cups cooked quinoa
1 cup onion, chopped
1 cup cheddar cheese, grated
1/4 cup kernel corn
4 large eggs
1/4 cup fresh parsley, chopped
1 teaspoon salt
1/4 teaspoon pepper
oil (for frying)

Steps:

  • Put all ingredients except oil in bowl.
  • Let mixture sit while you warm the pan to medium high. You don't want the oil to smoke.
  • Put oil in pan and heat.
  • Drop batter mixture (it should be quite thick and chunky) by teaspoonfuls in to the pan.
  • Flatten each fritter slightly with a fork.
  • Fry each side until golden brown.
  • Blot excess oil on paper towel.
  • Serve
  • Note: These re-heat really well.
