CHIPOTLE CITRUS CHICKEN
Steps:
- Get rice going. Heat iron skillet to medium-high. Ground spices in mortar and pestle, in order: coriander seeds, cumin seeds, then add rest (salt, pepper, garlic powder, and cumin). Pour spices onto dinner plate. Mix in flour to spice mixture. Coat chicken with spice/flour dredge. Brown butter in hot skillet. Add chicken. Let cook on first side 4-6 minutes, or until dark golden brown. Flip chicken to other side. Cook another 2-3 minutes. Add citrus juices to deglaze pan. Coat breasts with sauce and remove from skillet. Top breasts with cheese and broil until nicely melted with a little bit of char marks on them. Just don't burn and don't simply melt the cheese over it. Serve over bed of rice. Garnish with lime wedge and fresh cilantro.

- Fry the onion and garlic in the oil in a deep, wide frying pan until soft. Add the chipotle paste (use 1 tbsp for a mild flavour and 2 tbsp for a hotter, stronger one). Stir and cook for 1 min, then add the tomatoes and cider vinegar. Bring to a simmer and cook for 10 mins with the lid half on. Stir to make sure it doesn't get too dry.
- Add the chicken and cook for 10 mins or until cooked through, turning once. Scatter with coriander and serve with rice and soured cream.

Steps:
- Combine chopped chile peppers with 2 tablespoons sour cream. Mix together and spread mixture over chicken breasts. Sprinkle lightly with salt to taste, cover and marinate in refrigerator for at least 2 hours.
- Place marinated chicken in an ungreased 9x13 inch baking dish and broil for about 5 minutes (rack should be about 6 inches from the top.) Pour 1 cup sour cream around edges of chicken and turn over chicken breasts. Broil for an additional 5 minutes. Sour cream should be lightly brown on the edges. Move breasts into a separate dish and cover to keep warm. Set aside.
- Pour leftover broiled sour cream into a medium saucepan over high heat. Add spinach, broth and salt to taste. Boil for about 1 minute until all melted and mixed together. Pour mixture over chicken breasts and serve.

- Prepare the glaze - Add the glaze ingredients to a small food processor. Pulse until smooth. Taste for sweetness and seasoning. Add to a large bowl.
- Prepare the chicken and vegetables - Cut the squash in fairly thick slices, and the sweet potatoes in thinner slices (they require more time). If the shallots are large, cut in half lengthwise. Cut the bell peppers in chunks. See photos for reference. Cut away any excess fat on the chicken thighs. Add the prepared vegetables and chicken to the glaze. Toss to coat.
- Roast the chicken and vegetables - Using a slotted spoon, add the vegetables and chicken thighs to 1 or 2 sheet pans in a single layer. Don't pour the remaining glaze or you'll have boiled not roasted food. Every 10 minutes or so, brush with remaining glaze. Roast until chicken juices are clear (160-165 degrees internal temperature). Vegetables should be tender. I find this takes 30-40 minutes.
