SPICED LAMB SHANKS WITH BLOOD ORANGE RELISH

Spiced Lamb Shanks with Blood Orange Relish image

Provided by Food Network Kitchen

Categories     main-dish

Time 3h30m

Yield 4 servings

Number Of Ingredients 38

3 tablespoons olive oil
4 lamb shanks, about 1 1/2 pounds each
1 1/2 teaspoons kosher salt, plus more as needed
Freshly ground black pepper
4 cloves garlic, smashed and peeled
3 ribs celery, cut into 2 1/2-inch pieces
2 large carrots, cut into thirds
1 large onion, cut into large wedges
1 orange
1 cup dry red wine
1/2 cup currants
4 sprigs fresh flat-leaf parsley, leaves picked for relish (see below), stems reserved
3 sprigs fresh thyme
2 bay leaves
6 whole cloves
3 cinnamon sticks
1 teaspoon juniper berries
1 teaspoon whole black peppercorns
1 whole star anise
5 cups chicken broth, homemade or low-sodium canned
1 tablespoon freshly squeezed lemon juice
Blood Orange Relish, recipe follows
Creamy Cheese Polenta, recipe follows
2 blood or navel oranges
1 small fennel bulb, trimmed, halved and cored
1/2 Granny Smith apple, diced small, about 1/2 cup
1/4 cup roughly chopped flat-leaf parsley leaves
1 teaspoon fennel seeds, lightly toasted, optional
1 to 2 teaspoons white wine vinegar
2 teaspoons kosher salt
Freshly ground black pepper
3 cups milk
2 cups chicken broth, homemade or low-sodium canned
2 teaspoons kosher salt
1 cup instant polenta
1/2 cup mascarpone cheese
1/4 cup freshly grated Parmesan
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees.
  • Heat a large Dutch oven (preferably oval) or soup pot with a lid, over high heat. Add half the olive oil and heat. Pat the lamb shanks dry with paper towels and season generously with salt and pepper. Add 2 of the lamb shanks to the hot oil and brown on all sides, about 4 to 5 minutes per side. Transfer shanks to a plate. Repeat with the remaining olive oil and shanks. Add the garlic, celery, carrots and onions and to the pot, and cook, stirring occasionally, until browned, about 8 minutes.
  • Meanwhile, use a vegetable peeler to strip the zest (just the orange skin, not the white pith underneath) from the orange in large pieces. Halve and juice the orange and set aside.
  • Add the red wine to the vegetables and stir with a wooden spoon, scraping up any browned bits that cling to the pot. Stir in the orange zest, currants, salt, and pepper. Bring to a boil and cook until the wine is syrupy, about 5 minutes.
  • Cut a square of cheesecloth and place the parsley stems, thyme, bay leaves, cloves, cinnamon, juniper berries, peppercorns and star anise in the center. Tie into a bundle with kitchen twine. Add the spice bundle, chicken broth, orange juice and the shanks, along with any collected juices, to the pot, bring the mixture to a boil, cover, and transfer to the oven. Cook about 1 1/2 to 2 hours, turning the shanks occasionally, until the meat is just falling off the bone.
  • Transfer the shanks to a plate. Scoop the vegetables from the liquid using a slotted spoon and set aside. Boil the cooking liquid over high heat until thickened, about 15 minutes. Add the lemon juice, and season the sauce with salt and pepper, to taste. Return the shanks to the sauce and warm over medium heat, turning to coat evenly.
  • To serve, mound some of the polenta in the centers of 4 heated dinner plates. Top with a shank, and spoon some sauce and vegetables over and around the meat. Spoon a bit of Blood Orange Relish over each shank and serve immediately.
  • Cut both ends from the oranges. Stand them on a flat end and cut away all of the peel and white pith. Quarter them top to bottom. Lay the wedges on their sides and slice them thinly crosswise. Slice the fennel crosswise into very thin slices.
  • Gently toss the oranges, fennel, apple, parsley, fennel seeds and vinegar together in a small bowl. Season with the salt and pepper. (This can be made a day ahead and refrigerated until ready to serve.)
  • Bring the milk, chicken broth and salt to a boil in a large saucepan. Whisk in the polenta in a slow stream and cook, whisking constantly, until the polenta thickens, 3 to 5 minutes. When large bubbles begin to surface, remove from heat and stir in the cheeses and pepper. Taste and season with additional salt, if necessary.

Number Of Ingredients 12

2 large oranges, segmented
1/3 cup red wine (such as Pinot Noir)
1/4 cup unsweetened pomegranate concentrate (found at gourmet markets)
3 tablespoons honey
1 tablespoon olive oil
2 cloves garlic, thinly sliced
1 teaspoon dried oregano
16 baby lamb chops, frenched (ask your butcher to do it), fat trimmed to 1/8 inch
1 cup pomegranate seeds
1/3 cup finely diced Vidalia onion
1/4 cup chopped fresh mint
1 1/2 teaspoons fresh lemon juice

Steps:

  • Cut orange segments into 1/8-inch pieces over a bowl; collect juice (about 1/3 cup); set orange segments aside. Whisk orange juice, wine, pomegranate concentrate, 2 tablespoons of honey, oil, garlic and oregano in a bowl. Arrange lamb in a 9" x 13" baking dish; pour marinade over lamb. Cover; chill 1 to 2 hours, turning once. Combine cut orange, pomegranate seeds, onion, mint, remaining 1 tablespoon honey and lemon juice in a bowl. Toss gently; chill. Heat a grill or grill pan to medium-high. Remove lamb from dish, pat dry and grill to desired doneness (3 minutes per side for medium-rare). Let rest 1 to 2 minutes. Serve topped with relish.

Grilled Leg of Lamb with Hot Red Pepper Relish image

Categories     Food Processor     Lamb     Marinate     Backyard BBQ     Bell Pepper     Hot Pepper     Grill     Chill     Grill/Barbecue     Gourmet

Yield Serves 8

Number Of Ingredients 15

a 7- to-8 pound leg of lamb, trimmed of excess fat, boned, and butterflied by butcher (4 to 4 3/4 pounds boneless)
2 onions, chopped
6 large garlic cloves, chopped
3/4 cup red wine vinegar
1/2 cup honey
1/3 cup Worcestershire sauce
Accompaniment: hot red pepper relish
HOT RED PEPPER RELISH
2 pounds red bell peppers, chopped fine (about 4 cups)
2 onions, chopped (about 2 cups)
2 cups cider vinegar
3/4 cup sugar
2 teaspoons mustard seeds
2 teaspoons salt
1 teaspoon crushed dried hot red pepper flakes

Steps:

  • Cut lamb into 2 pieces where there is a natural separation in meat and put each piece into a large sealable plastic bag.
  • In a food processor, purée all remaining ingredients (except relish) until smooth and divide marinade evenly between plastic bags. Seal bags, pressing out excess air, and put in a shallow baking pan. Marinate lamb, chilled, turning bags once or twice, at least 8 hours or overnight.
  • Prepare grill.
  • Discard marinade and grill lamb in batches if necessary on an oiled rack set 5 to 6 inches over glowing coals 7 to 10 minutes on each side for medium-rare. Transfer lamb to a cutting board and let stand 10 minutes.
  • Serve lamb, thinly sliced across the grain, with relish.
  • In a heavy saucepan, stir together ingredients and simmer, stirring occasionally, about 1 hour, or until reduced to about 3 cups. Relish may be made 1 month ahead and chilled, covered.
  • Serve relish chilled or at room temperature.

  • Heat a large cast-iron skillet over medium heat. Add lamb and onion. Using a metal spatula (easiest), break lamb apart into little bits, and cook for 5 minutes until lightly browned. Add the garlic and salt and continue browning until the lamb releases all it’s moisture and fat, and begins to brown, about 5-7 more minutes. Drain the fat. Add the cumin seeds, sumac, cinnamon, optional chili flakes and saute 2 more minutes. Add the tomato paste and water, incorporating it into the lamb. Stir in the chopped mint.
  • Assemble the wraps: Lather 4 large wraps with labneh, divide and top with the lamb filling, add the tomatoes, cucumbers, red onion, parsley, mint and peppery greens. Roll them up and cut in half.
