1 1/2 teaspoons whole black peppercorns, coarsely crushed
1 teaspoon whole coriander seeds, coarsely crushed
1 1/2 teaspoons whole dill seeds, coarsely crushed
1/4 to 1/2 teaspoon red-pepper flakes, coarsely crushed
1 1/2 teaspoons coarse salt
4 bone-in strip steaks (10 to 12 ounces and 1 to 1 1/2 inches thick each)
Vegetable oil, for grates

Steps:

  • Combine peppercorns, coriander, dill, red-pepper flakes, and salt in a small dish. Rub spice mixture evenly over both sides of steaks.
  • Heat grill to medium-high; lightly oil grates. Place steaks on grill; cover. Cook, turning once, until meat is desired doneness, about 8 minutes for medium-rare.

3 tablespoons smoked paprika
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons dried oregano
2 tablespoons coarsely ground black pepper
1 tablespoon light brown sugar
1 tablespoon ground cumin

Steps:

  • Mix kosher salt, smoked paprika, onion powder, garlic powder, oregano, black pepper, brown sugar, and cumin together in a sealable container. Seal container and shake to mix.

From the Washington Post - another great grill recipe. "This is a homemade take on the popular Montreal steak rub. If your grill is covered in snow, you can always broil these steaks." Serve with a Caesar salad & voila! I recommend Recipe#26431 - made up the day before over a simple Romaine & crouton salad.

4 New York strip steaks, 1 1/2 to 2 inches thick (2 1/2 pounds total New York strip)
1 -2 teaspoon olive oil
2 teaspoons kosher salt
2 teaspoons black pepper, coarsely ground
1 teaspoon garlic powder
1 teaspoon sweet paprika
1/2 teaspoon cayenne pepper (hot paprika fine too)
1/2 teaspoon thyme, ground
1/2 teaspoon brown sugar
1/2 teaspoon orange peel, dried (optional)

Steps:

  • Let the steaks come to room temperature. Pat dry with paper towels. Rub both sides of each steak with the oil and set aside.
  • In a small bowl, combine the remaining ingredients with the orange peel, if desired, to create the spice rub. Sprinkle the rub on both sides of the steaks, pressing to adhere to the surface of the meat (some spice rub will be left over).
  • If using a gas grill, preheat to medium- to medium-high, depending on your grill. If using a charcoal grill, distribute the hot charcoal or wood briquettes evenly under the cooking area for direct heat. Oil the grate.
  • Grill for about 7 minutes per side, or until an instant-read thermometer registers 140 degrees for medium-rare. Let steaks rest, covered, for 5 minutes before serving.

1 tablespoon paprika
2 teaspoons chili powder
1 teaspoon ground coriander
Salt and freshly ground black pepper
4 strip steaks, about 8 ounces each
3 tablespoons olive oil
2 onions, sliced
2 cloves garlic, grated
1 tablespoon tomato paste
1/2 teaspoon crushed red pepper flakes
1/2 cup beef broth
1 tablespoon hot sauce
1 tablespoon Worcestershire sauce

Steps:

  • Mix together the paprika, chili powder, coriander, 1 teaspoon black pepper and 1 teaspoon salt in a small bowl. Sprinkle the steaks on both sides with the spice mixture. Refrigerate for 1 hour.
  • Heat the olive oil in a large skillet over medium-low heat. Add the onions and sprinkle with salt and pepper. Cook, stirring occasionally, until soft and slightly golden, 10 to 15 minutes. Add the garlic, tomato paste and pepper flakes, and cook for 2 minutes. Stir in the beef broth, hot sauce and Worcestershire. Cook until thickened, about 5 minutes. Keep warm.
  • Prepare a grill or grill pan for medium-high heat.
  • Grill the steaks for 3 to 4 minutes per side for medium rare. Let rest for 5 minutes. Serve topped with the onion sauce.

New York Strip Steak with Spicy Coffee Rub image

1 pound double New York strip steak
1/2 tablespoons brown sugar
1/2 tablespoon apricot salt
1/2 tablespoon freshly ground black pepper
1/2 tablespoon regular salt
1/2 tablespoon red chili pepper flakes
1/2 tablespoon coffee grounds
1/2 tablespoon granulated garlic
1/2 tablespoon smoked paprika

Steps:

  • Apply the olive oil to the entire steak and then sprinkle the rub onto the meat. Allow the flavors to develop for 2 hours.
  • Heat coals on a grill. When the coals are hot, move them to one side of the grill. Sear the steak for 2 minutes on each side over the coals. Move the steak to the cool part of the grill and cook with the lid on for 20 minutes.
  • Rest the steak for 10 minutes before slicing.
