POACHED QUINCE WITH SPICES



Poached quince with spices image

Cooking quince slowly, with its peel and core, helps to achieve its characteristic deep pink colour. If you plan to cook quince a few times in the season, reserve the cooking syrup and add it to the next batch. This will create a deeper colour and flavour.

2 large quince
3 cups caster sugar
5 cups water
2 cinnamon sticks
3 star anise
3 cloves
2 bay leaves
10 black peppercorns
Peel of one lemon
1 cup quince poaching syrup*

Steps:

  • Peel, quarter and remove cores from quince. Reserve peel and cores. Bring remaining ingredients to the boil in a heavy-based saucepan. Add quince, peel and cores and cover with baking paper. Use a plate to keep quince submerged. Cover with a lid and simmer for 2-3 hours or until soft with a deep pink colour. Remove fruit, strain syrup, discarding peel, cores and spices, and serve quince warm with a little syrup, ice-cream or cream. It can also be served chilled. * Reserved from a previously cooked batch of quince. If you don't have it, simply omit from the recipe - no extra liquid is required.

¾ cup raw sugar
1 bay leaf
1 star anise
1 teaspoon vanilla extract
Zest and juice of 1 lemon
2 tablespoons honey
4 cups water
4 large quinces

Steps:

  • Pre-heat oven at 120°C (convention)/ 100°C (fan-forced/convection).
  • Peel the quince using a y-peeler. Place the quinces on a sturdy and heavy wooden board. Using a sharp knife, carefully cut the quinces into quarters. Using a combination of a paring knife and melon peeler, remove the pith and core of the quinces.
  • Add sugar, bay leaf, star anise, vanilla, lemon zest and juice, honey and water to a wide oven-safe cooking pot. Simmer gently on medium-low heat for 5-8 minutes until the sugar has melted. Remove from heat and add all the quince quarters to the pot. Ensure that the quince slices are covered with the poaching liquid. Place a baking paper over the quinces and cover with the pot lid.
  • Poach in a pre-heated oven at 120°C (convection)/ 100°C (fan-forced) for 4 hours.
  • Remove from oven and cool completely. Scoop the poached quince slices gently from the pot and into a clean glass container. Top with some of the poaching liquid. Cover with an air-tight lid and store in the fridge for up to 2 weeks.
  • Strain and pour the remaining poaching liquid in glass jars. Cover with air-tight lids and store in the fridge for up to 2 weeks.

4 cups water
2 cups sugar
2 cinnamon sticks
1 teaspoon ground cardamom
1 teaspoon allspice
5 whole cloves
2 whole star anise
1 teaspoon fennel seed
1-inch piece fresh ginger, whacked open with the flat side of a knife
1 lemon, halved
1 orange, halved
4 quinces, about 3 pounds, peeled, cored, and halved lengthwise

Steps:

  • In a large pot, combine all the ingredients. Bring to a simmer over high heat, stirring several times to dissolve the sugar. Cut a circle of parchment paper just slightly bigger than the opening of your pot. Place the piece of parchment paper on top of the simmering quinces and a small plate on top of the paper to keep the quinces submerged in the syrup. Adjust the heat to keep the quinces simmering but not boiling hard. Simmer for 40 minutes or until the quince halves are easily pierced with a paring knife, but not falling apart. Strain the syrup. Serve the quince halves, warm or at room temperature, in a shallow bowl with some syrup.

HONEY-POACHED QUINCE PIE



Honey-Poached Quince Pie image

Quince is a very aromatic, almost floral-tasting fruit that resembles a cross between an apple and a pear. It's quite tart, and when cooked it turns a lovely blushing pink. Quince needs to be cooked before you use it, so this recipe takes a little longer to prepare than other fruit pies. This recipe also works well using half apples, half quince: just add sliced raw apples to the cooked quince before baking. Serve with whipped cream or ice cream, if desired.

3 pounds quince, peeled, cored and sliced
½ cup honey
1 ½ cups water
1 pinch salt
1 recipe pastry for a 9 inch double crust pie
¾ cup white sugar
½ teaspoon ground cinnamon
½ teaspoon salt
3 tablespoons all-purpose flour
2 tablespoons butter

Steps:

  • Combine the sliced quince, honey, water, and a pinch of salt in a pan (you should have about nine cups of sliced fruit). Cover the pan and bring it to a boil. Reduce the heat to very low. Simmer, covered, until the fruit is tender, about 8 minutes, stirring carefully once or twice to avoid breaking the fruit.
  • Put a strainer over a saucepan and pour the cooked quince into a strainer, reserving the cooking liquid. Set the quince aside to cool.
  • Roll out the pastry and line a 9 inch pie plate. Refrigerate the dough while you prepare the filling.
  • Combine the white sugar, cinnamon, 1/2 teaspoon salt, and flour in a small bowl and mix well. Add the sugar mixture and the butter to the reserved quince cooking liquid and bring it to a boil. Reduce the heat and cook, stirring constantly, until the mixture thickens, about 1 to 2 minutes. Remove the pan from the heat and allow the sauce to cool.
  • Place a sheet pan on the lowest rack of the oven. Preheat an oven to 500 degrees F (260 degrees C). Pour the cooled quince into the pastry-lined pan and cover with the sauce. Add the top crust, crimping the edge to seal. Cut vents or prick the crust with a fork to allow steam to escape.
  • Put the pie on the preheated sheet pan and immediately reduce the oven temperature to 425 degrees F (220 degrees C). Bake until the edges of the crust are golden brown, about 25 minutes. Reduce the heat to 375 degrees F (190 degrees C) and bake until the juices are bubbling and the crust is brown, about 45 minutes more. Cool on a rack at least two hours before serving.

2 cups sugar
1 cup brandy
2 cups white verjus
1 star anise
2 sticks cinnamon
4 cups diced peeled and cored quince (from about 6 quince)

Steps:

  • Place sugar in a small saucepan and add just enough water so that mixture resembles wet sand. Place saucepan over medium-high heat and cook sugar until melted and light golden in color.
  • Carefully add brandy and stir in verjus. Wrap star anise and cinnamon in cheesecloth and tie with kitchen twine to enclose; add cheesecloth packet to saucepan. Bring mixture to a boil; immediately reduce to a simmer. Remove cheesecloth packet and let poaching liquid simmer for 20 minutes.
  • Place quince in a shallow saucepan. Set a strainer over saucepan and pour poaching liquid over quince. Transfer saucepan to medium heat and cook until liquid is heated through and quince is tender, about 1 minute. Remove from heat; let cool to room temperature.

For quince and sauce
2 1/2 cups water
3/4 cup sugar
1 teaspoon fresh lemon juice
1 quince (about 10 oz), peeled, quartered, cored, and cut into 1/2-inch pieces
For lamb
2 (3/4-inch-thick) bone-in lamb steaks from leg (1 1/2 lb total), trimmed of excess fat
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/8 teaspoon ground cinnamon
1 tablespoon olive oil
1 teaspoon fresh lemon juice, or to taste

Steps:

  • Poach quince:
  • Bring water, sugar, and lemon juice to a simmer in a 2- to 2 1/2-quart saucepan, stirring until sugar is dissolved, then add quince. Cut out a round of parchment or wax paper to fit just inside saucepan and cover quince directly with parchment or wax paper. Simmer, gently stirring once or twice, until quince is tender, about 35 minutes. Drain quince in a sieve set over a bowl and reserve 1/2 cup syrup for sauce.
  • Cook lamb (10 minutes before quince is done simmering):
  • Pat lamb dry. Stir together salt, pepper, cumin, coriander, and cinnamon in a small bowl, then sprinkle spice mixture all over lamb. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Cook lamb 4 minutes, then turn over and cook 3 minutes more for medium-rare. Transfer lamb to a cutting board and let stand 5 minutes.
  • Make sauce while lamb stands:
  • Reduce heat to moderate and add reserved quince syrup to skillet, then boil, scraping up any brown bits, until liquid is reduced by almost half, about 2 minutes. Transfer sauce to a gravy boat or small bowl and stir in lemon juice and salt to taste.
  • To serve:
  • Thinly slice lamb and serve with quince and sauce.
