SPEEDY HUMMUS PIZZA
What started as an appetizer is now one of my favorite Mediterranean meals. I make sure I always have the ingredients, so I can whip it up in a hot minute. I like to use fresh tomatoes instead of sun-dried ones when they're in season, and sometimes I throw in some chopped artichoke hearts, too. -Nikki Haddad, Germantown, Maryland

- Preheat oven to 450°. Place crust on an ungreased baking sheet or 12-in. pizza pan., In a small bowl, mix hummus, oregano and pepper flakes; spread over crust. Sprinkle with cheese, tomatoes and olives. Bake 8-10 minutes or until heated through. Drizzle with oil.

Personalize these pizzas after cooking them by adding your favorite toppings, such as prosciutto, basil, arugula, or roasted vegetables. Active time: 20 min Start to finish: 20 min

- Preheat oven to 475°F.
- Cook onion in oil in a large heavy skillet over moderate heat, stirring, until softened, about 6 minutes. Stir in peppers and salt and pepper to taste.
- Toast tortillas directly on burner (gas or electric) over moderately low heat, turning once with tongs, until puffed slightly and browned in spots, about 30 seconds on each side.
- Arrange tortillas in 1 layer on a large baking sheet and spoon one fourth of onions and peppers onto each tortilla, leaving a 1/4-inch border around edge. Sprinkle pizzas with cheese and bake in middle of oven until cheese is melted and edges of tortillas are browned, about 5 minutes. Season pizzas with black pepper.
QUICK AND EASY PIZZA CRUST
This is a great recipe when you don't want to wait for the dough to rise. You just mix it and allow it to rest for 5 minutes and then it's ready to go!! It yields a soft, chewy crust. For a real treat, I recommend you use bread flour and bake it on a pizza stone, but all-purpose flour works well too. Enjoy!

- Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
- Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.
- Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker's peel dusted with cornmeal. Spread with desired toppings and bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.

- In large bowl, mix first 4 ingredients.
- Mix water and oil; add to flour mixture.
- Turn onto floured surface; knead for 2 minutes.
- Place in a greased bowl; turning to grease top.
- Cover and let rise for 20 minutes.
- Punch down; place on 12in, greased pizza pan.
- Pat into a circle.
- Topping: Mix first 5 ingredients and spread over crust.
- Put a few pepperoni slices on top of sauce.
- Sprinkle with 1/2 the mozzeralla; 1/2 the monterey jack, and 1/2 the parmesan.
- Put the rest of the pepperoni on.
- Repeat the cheese layer.

EASY PIZZA DOUGH WITH INSTANT YEAST

Steps:
- Combine 1 1/2 cup (187.5 g) of flour, instant yeast, sugar, and salt in a large bowl.
- Add olive oil and warm water and use a wooden spoon to stir well very well.
- Add any additional flour as needed, stirring until the dough is forming into a cohesive, elastic ball and is beginning to pull away from the sides of the bowl. The dough will still be slightly sticky but still should be manageable with your hands.
- Drizzle a separate, large, clean bowl generously with olive oil and use a pastry brush to brush up the sides of the bowl.
- Lightly dust your hands with flour and form your pizza dough into a round ball and transfer to your olive oil-brushed bowl.
- Allow dough to rise for 30 minutes or until doubled in size. If you intend to bake this dough into a pizza, I also recommend preheating your oven to 425F (215C) at this point so that it will have reached temperature once your pizza is ready to bake.
- Once the dough has risen, use your hands to gently deflate it and transfer to a lightly floured surface and knead briefly until smooth (about 3-5 times). Use either your hands or a rolling pin to work the dough into 12" circle.
- Use a fork to poke holes all over the center of the pizza to keep the dough from bubbling up in the oven.
- Add desired toppings and bake in a 425F (215C) preheated oven for 13-15 minutes or until toppings are golden brown. Slice and serve.
