2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt

1 cup unsalted butter, room temperature
1 cup packed dark brown sugar
1 large egg
1 1/2 cups blanched slivered almonds (about 6 ounces)
3/4 cup sugar
1/4 cup unsalted butter, room temperature
1 large egg
2 teaspoons grated lemon peel
2 teaspoons fresh lemon juice
1 teaspoon vanilla extract
3/4 teaspoon almond extract
powdered sugar
apricot preserves

Steps:

  • For filling:.
  • Blend first 8 ingredients in processor until nuts are finely chopped.
  • Transfer to small bowl.
  • Cover; chill at least 2 hours and up to 2 days.
  • For dough:.
  • Sift first 6 ingredients into medium bowl.
  • Using electric mixer, beat butter and sugar in large bowl until blended; beat in egg.
  • Add flour mixture and beat until moist clumps form.
  • Gather dough into ball; divide into 2 pieces, 1 slightly larger than the other. Flatten dough into disks; wrap and chill at least 2 hours. (Can be made 2 days ahead; keep chilled. Soften slightly before rolling.).
  • Preheat oven to 325°F
  • Butter 9-inch-diameter springform pan.
  • Roll out larger dough piece on lightly floured surface to 13-inch round. Transfer to pan and press gently over bottom and up sides, pressing any tears together.
  • Spread filling in dough.
  • Trim dough on sides to 1/2 inch above level of filling.
  • Fold dough in over filling.
  • Roll out second dough disk on lightly floured surface to 12- to 13-inch round.
  • Using bottom of cake pan as aid, cut out 9-inch-diameter round of dough. Slide dough round onto plate and freeze 5 minutes to firm. (Reserve dough scraps for cookies.)
  • Place chilled dough round on tart; press to adhere and seal edges.
  • Bake tart until crust is brown, about 50 minutes.
  • Remove sides of springform pan; cool tart completely on pan bottom. Maintain oven temperature.
  • Line 2 baking sheets with parchment paper.
  • Roll out dough scraps on lightly floured surface to scant 1/4-inch thickness.
  • Using 2-inch gingerbread-man cutter, cut out cookies.
  • Transfer cutouts to prepared sheets. Repeat, using all of dough.
  • Bake cookies until golden, about 8 minutes. Cool cookies on sheets. (Tart and cookies can be made ahead; cover and store at room temperature 1 day or refrigerate up to 3 days.).
  • Sift powdered sugar over top of tart.
  • Place small dab of preserves on back of 1 cookie; place at top edge of tart; repeat with more cookies, forming border around tart.
  • Transfer tart to platter.
  • Let stand at room temperature at least 1 hour.

1/4 cup pure almond paste (2 ounces)
1/4 cup granulated sugar
3 tablespoons unsalted butter, softened
2 large eggs
1/4 teaspoon vanilla
1/4 teaspoon almond extract
2 tablespoons all-purpose flour
1 (17 1/4-oz) package frozen puff pastry sheets, thawed
1 dried bean such as a lima bean (optional)
1/2 tablespoon confectioners sugar

Steps:

  • Preheat oven to 450°F.
  • Purée almond paste, granulated sugar, butter, and a pinch of salt in a food processor until smooth. Add 1 egg, vanilla, and almond extract and purée until incorporated. Add flour and pulse until incorporated.
  • Roll out 1 puff pastry sheet into an 11 1/2-inch square on a lightly floured surface with a floured rolling pin, then brush off excess flour from both sides. Cut out an 11-inch round by tracing around an inverted plate with tip of a paring knife. Transfer round to a buttered large baking sheet (not dark metal, or pastry may brown too much), discarding trimmings, and chill. Repeat procedure with second pastry sheet, leaving round on floured surface.
  • Beat remaining egg with a fork and brush some over top of second round. Score round decoratively all over using tip of knife, then make several small slits all the way through pastry, at about 2-inch intervals, to create steam vents.
  • Brush some of egg in a 1-inch-wide border around edge of chilled pastry round (on baking sheet). Mound almond cream in center of chilled round, spreading slightly, and bury bean in cream. Immediately cover with decorated round and press edges together lightly. Holding a small spoon with side at an angle, press around edge to seal galette decoratively.
  • Bake galette in lower third of oven until puffed and pale golden, 13 to 15 minutes. Dust galette with confectioners sugar and bake in upper third of oven until edge is deep golden brown and shiny, 12 to 15 minutes more. Transfer to a rack to cool slightly, 5 to 10 minutes. Serve warm.

GEVULDE SPECULAAS
Speculaas spices
1 tablespoon cinnamon
1 tablespoon pumpkin spices
¼ teaspoon nutmeg
¼ teaspoon mace
¼ teaspoon allspice
¼ teaspoon cloves
¼ teaspoon ginger
Almond paste for two recipes
10 oz blanched almonds (1 16 oz bag whole almonds, need to take skin off, easiest way is to boil water and dump almonds into boiling water for 20 seconds, drain and rinse in cold water and peel, can also put in large bowl and just grab almonds and squeeze a few times. This will get most skins off quickly. Rest just takes time to do).
10 oz sugar (use 5/8 to ¾ cup)
2 large eggs
2 teaspoons almond extract
1 teaspoon fresh lemon zest
Speculaas dough
2 cups all purpose flour
1 ½ sticks of butter
2/3 cup light brown sugar
¼ teaspoon baking soda
½ teaspoon orange zest
½ teaspoon lemon zest
2 tablespoons milk
¼ teaspoon salt
¼ teaspoon vanilla extract
1 ½ tablespoons mixed spices
¼ teaspoon almond extract

Steps:

  • Speculaas spices Mix together - this makes enough spices for 2 cakes, but only going to use half of this for one recipe. Almond paste for two recipes Place into a food processor, grind almonds very fine, add sugar, eggs, lemon zest and almond extract. Pulse until it forms a ball. Put into a jar or container and place in the freezer, keeps a while (don't know how long, usually doesn't last that long). Speculaas dough Mix into one small ball of dough. In spring form, divide dough in half. Roll or smooth in bottom of spring form. Use ½ of almond paste mix for next layer. Then top layer gets rest of dough and cover till you see no more almond paste. Then take 2 tablespoons sugar, some almond extract and little water and mix till you have a thick paste. Brush this over the top to cover. Then add slivered almonds to decorate (optional). Preheat oven to 375 and bake for 20 minutes. Need to watch so doesn't burn. If you want to make 2 Gevulde Speculaas's, then just double dough mix. Enjoy!

1 1/2 cups all purpose flour
1/2 cup semolina flour (pasta flour)*

1/2 cup (1 stick) unsalted butter, room temperature
1/3 cup (packed) golden brown sugar
2 tablespoons honey
1 teaspoon finely grated lemon peel
1 large egg
Caramel-nut filling
3/4 cup (packed) golden brown sugar
1/4 cup sugar
1/4 cup (1/2 stick) unsalted butter
1/4 cup honey
1/2 cup dried cherries
1/2 cup coarsely chopped dried apricots
1/2 cup whole almonds, toasted, coarsely chopped
1/4 cup dried cranberries
1/4 cup whipping cream
1 (15-ounce) can apricot halves, drained, patted dry
1 cup chilled whipping cream
1 cup crème fraîche
*Available at some supermarkets and at specialty foods stores and Italian markets.

Steps:

  • For crust:
  • Preheat oven to 350°F. Whisk both flours and salt in medium bowl. Using electric mixer, beat butter, brown sugar, honey, and lemon peel in another medium bowl to blend. Beat in egg. Add flour mixture; beat just to blend. Gather dough into ball. Roll out on floured surface to 1/4-inch-thick round. Transfer to 9-inch-diameter tart pan with removable bottom. Press onto bottom and up sides of pan. Trim edges. Press edges so sides rise 1/4 inch above pan. Bake crust until golden brown, pressing with back of fork if bubbles form, about 13 minutes. Cool on rack.
  • For caramel-nut filling:
  • Preheat oven to 350°F. Bring both sugars, butter, and honey to boil in heavy medium saucepan, stirring to dissolve sugars. Boil 1 minute without stirring; remove from heat. Stir in cherries, apricots, almonds, cranberries, and whipping cream. Transfer filling to cooled crust. Arrange apricot halves, cut side down, atop filling.
  • Bake tart until bubbling all over, about 1 hour 20 minutes. Cool on rack 15 minutes. Remove pan sides. Cool to lukewarm, about 1 hour.
  • Using electric mixer, beat cream until peaks form. Add crème fraîche and beat until peaks form. Serve tart slightly warm or at room temperature with crème fraîche.

My Favorite Sweet Shortcrust Pastry image

Blind baking the pastry case before any filling has been added allows it to crisp up, stopping any wet fillings seeping through.

Yield Makes enough to line a 23cm (9-inch) tart tin

Number Of Ingredients 5

200g (1 2/3 cups) plain flour
20g (about 1/4 cup) ground almonds
35g (1/3 cup) confectioners' sugar
125g (1/2 cup/1 stick) cold butter, diced
1 egg, separated

Steps:

  • Put the flour, almonds, and confectioners' sugar into a large bowl and mix together until well combined.
  • Add the butter to the dry ingredients and rub into the flour until you get a mixture that looks like fine breadcrumbs.
  • Add the egg yolk (save the white for glazing) and 1 tablespoon of cold water and stir into the flour with a round-ended knife. The mixture will start to clump together after you have mixed for a minute or so, but there will still be some floury patches in the bowl. Turn the contents of the bowl onto a large piece of cling film and knead briefly until all the pastry has come together into a ball. Wrap in the cling film and place in the fridge for 30 minutes, or until you are ready to use it.
  • Blind baking:
  • Preheat the oven to 375°F/190°C/170°C fan/gas 5. Roll out the chilled pastry between two pieces of cling film until it is a few centimeters larger than your tin. You could also do this on a floured surface, but the pastry is so fragile I find it easier to handle between cling film. Peel off the top layer of cling film then invert the pastry circle into the prepared tart tin, gently pressing it into all the edges. Put the pastry-lined tin into the fridge for at least 30 minutes before baking.
  • Remove the cling film from the pastry, prick the base all over with a fork then line the inside with baking parchment and baking beans (you could also use uncooked lentils or rice if you don't have baking beans-anything that will weigh the paper down).
  • Bake for ten minutes, then carefully remove the paper and beans and bake for a further ten minutes, until the base is crisp. You are now ready to fill the case.

2 pounds rainbow or orange carrots, peeled, cut into 3 1/2x1/4-1/2" sticks; plus 1 cup coarsely chopped tops
1 teaspoon finely grated orange zest
1/2 cup fresh orange juice
1/2 cup (1 stick) unsalted butter, divided
2 tablespoons sugar, divided
2 1/4 teaspoons kosher salt, divided
2 teaspoons red wine vinegar, divided
1/2 teaspoon ground allspice, divided
1/4 teaspoon plus 1/8 teaspoon freshly ground black pepper, divided
2 large eggs
1 1/4 cups whole-milk ricotta
2 tablespoons thyme leaves
1 (14-17-ounce) package frozen puff pastry, preferably all-butter, thawed
All-purpose flour (for dusting)
1 tablespoon olive oil
1 small shallot, thinly sliced

Steps:

  • Preheat oven to 400°F. Spread almonds on a rimmed baking sheet and bake until lightly toasted, about 5 minutes. Let cool.
  • Meanwhile, cook carrots, orange juice, 4 Tbsp. butter, 1 Tbsp. sugar, 1 tsp. salt, 1 tsp. vinegar, 1/4 tsp. allspice, and 1 1/2 cups water in a large skillet over medium-high heat, stirring occasionally, until crisp-tender, 10-12 minutes. Using a slotted spoon, transfer carrots to a plate, reserving liquid in skillet, and let cool.
  • Transfer 1/4 cup almonds to a small bowl; set aside. Process 1 tsp. salt, 1/4 tsp. pepper, and remaining almonds, 1 Tbsp. sugar and 1/4 tsp. allspice in a food processor until finely chopped. Add eggs, ricotta, thyme, orange zest, and remaining 4 Tbsp. butter and process until smooth.
  • Gently roll pastry to an 18x13" rectangle on a lightly floured sheet of parchment. Transfer with parchment to a rimmed baking sheet. Using a sharp knife, lightly score a 1/2" border around pastry (for a decorative border, make small shallow diagonal cuts within that border).
  • Spread egg mixture evenly within border of pastry, then arrange carrots over in a geometric pattern. To create a chevron (zigzag) pattern, form 6 carrots into 3 even "V" shapes so points are touching the long border of the crust. Fill with additional rows of "V" shapes, cutting carrots to fit as needed.
  • Bake tart until filling is puffed and golden brown, about 25 minutes. Transfer to a cutting board and let cool slightly.
  • Meanwhile, heat reserved carrot-cooking liquid in skillet over high; cook, stirring, until reduced to a thick syrup, about 10 minutes. Brush top of tart with syrup while still warm. Cut into 12-16 pieces.
  • Whisk oil and remaining 1 tsp. vinegar, 1/4 tsp. salt, and 1/8 tsp. pepper in a medium bowl. Add shallot, carrot tops, and reserved almonds and toss to combine. Arrange over tart to serve.

12 ounces ripe red-skinned plums, pitted, cut into 3/4-inch-thick wedges
1/4 cup red currant jelly
Whipped cream (optional)

Steps:

  • Make crust:
  • Preheat oven to 375°F. Combine first 3 ingredients in processor. Using on/off turns, cut in butter until mixture resembles coarse meal. Mix 2 tablespoons ice water and vanilla in small bowl. Pour water mixture over dough. Process until moist clumps form. Gather dough into ball; flatten into disk. Roll out on floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim overhang to 1/2 inch. Fold overhang in and press, forming double-thick sides. Using fork, pierce dough all over. Freeze 15 minutes.
  • Bake crust until pale golden, about 30 minutes (crust may shrink slightly). Cool on rack. Maintain oven temperature.
  • Make filling:
  • Finely grind almonds with sugar in processor. Add egg, butter and 2 teaspoons framboise. Process until batter forms. Pour filling into crust. Arrange plums atop filling. Bake until plums are tender and filling is golden and set, about 50 minutes.
  • Melt jelly with remaining 2 teaspoons framboise in heavy small saucepan over medium-low heat. Brush jelly mixture over plums. Cool tart. Serve at room temperature with whipped cream, if desired.
