CHRISTMAS CREAMY EGGNOG

4 egg yolks
1 (5 ounce) can sweetened condensed milk
1 tablespoon white sugar
1 teaspoon vanilla extract
4 ½ cups milk
4 egg whites
1 fluid ounce rum
¼ teaspoon ground nutmeg

Steps:

  • In a large mixing bowl, beat egg yolks until they are thickened and light. Gradually stir in condensed milk, sugar, vanilla and milk. Beat the egg whites until stiff, then add them to the milk mixture. Stir rum into the mixture (to taste). Garnish with nutmeg.

A giant hotel-silver punch bowl holds Martha's signature eggnog, rich with cream and laced with rum, bourbon, and Cognac.

6 large eggs, separated
3/4 cup superfine sugar
2 cups whole milk
3 cups heavy cream, plus more for garnish
1/2 cup bourbon, preferably Maker's Mark
1/4 cup dark rum, preferably Mount Gay
1/4 cup Cognac, preferably Remy Martin Grand Cru
Freshly grated nutmeg, for sprinkling

Steps:

  • Beat yolks in a very large bowl until thick and pale. Slowly beat in sugar. Whisk in milk and 2 cups cream. Mix in bourbon, rum, and Cognac. Cover, and refrigerate for up to 1 day.
  • Just before serving, beat whites until stiff peaks form. Fold whites into eggnog. Whisk remaining 1 cup cream until stiff peaks form, and fold into eggnog. (Alternatively, you can fold half the whipped cream into eggnog, and top with remaining half.) Sprinkle with nutmeg.

12 eggs, separated
1 1/2 cups sugar
1 quart milk
1 quart whipping cream, lightly whipped
1 1/2 quarts Bourbon
1 pint cognac
2 tablespoons dark rum
fresh ground nutmeg
maraschino cherry, with stems (optional)

Steps:

  • Beat the egg yolks until they are light.
  • Gradually beat in the sugar until the mixture is thick& light colored.
  • Beat the egg whites until stiff.
  • Pour the egg mizture into a punchbowl that is sitting in crushed ice.
  • Blend in the milk and the beaten cream (the cream should not be solid just half beaten so it is thick but not stiff) Slowly pour in the bourbon& Cognac.
  • Fold in the egg whites.
  • Sprinkle the punch with the 2 tbsp of dark rum.
