TRICOLORE SALAD WITH ORANGES

Steps:
- Place the shallots in a small shallow bowl and pour the vinegar over them. Set aside for 10 minutes to macerate.
- In a large shallow serving bowl, combine the radicchio, endive, arugula, oranges, and olives. Lift the shallots from the vinegar with a slotted spoon, sprinkle them on the salad, and toss lightly (discard the vinegar).
- In a 1-cup glass measuring cup, whisk together the lemon juice, mustard, 1 teaspoon salt, and 1/2 teaspoon pepper. While whisking, slowly add the olive oil. Pour enough of the vinaigrette over the salad to moisten well. Sprinkle with one more teaspoon salt, toss well, and taste for seasonings. Serve at room temperature.

When cooking sledging biscuits you simply need to avoid overcooking them. They should be pale yellow in colour rather than brown as most biscuits. Whole wheat: 120 grams in one cup of whole wheat flour, so 150 grams = 1.25 cups Butter: 14.2 grams per tablespoon, so scant 2 T. for 30 grams Water: 50 ml = 3.35 tablespoons (US), so about 3 T. + 1 tsp. - re-heat the oven to 190C (375 F.).
- Sieve the flour and baking soda together into a mixing bowl, then add the salt. Rub in the butter with your finger tips until you have combined the ingredients to resemble breadcrumbs.
- Slowly mix in the water until a malleable ball of dough forms. All the dry ingredients must be evenly incorporated, yet the dough should not be sticky.
- Lightly flour a smooth surface and roll out the dough so it is 2 cm thick (0.8 inches) and fits a large baking tray. Transfer the dough onto a lightly greased baking tray and cut into 5cm (2-inch) squares. Prick each square with a fork.
- Bake in the oven for 15 minutes or until the dough just starts turning golden brown. Remove from the oven and place on a cooling rack.
- Serve the sledging biscuits with sweetened tea or with pemmican spread on top.

This recipe is from week 10 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Antarctica is my 10th stop (yes I know Antarctica is technically not a country, but I do love a challenge). These cookies are so famous that Air National Guard pilots have been known to detour to the South Pole just to get some.

- First, cream the butter and the two kinds of sugar:.
- Now add the eggs and the vanilla.
- In a separate bowl, mix together the flour, baking soda and salt. Then add to the sugar/butter/egg mixture and blend until a soft dough forms.
- Add the chips and the chopped nuts.
- Drop the dough by teaspoons onto a baking sheet, about two inches apart. The recipe doesn't say to grease the baking sheet, but my cookies stuck pretty badly so I would definitely put a little butter on the pan next time I make these.
- Bake at 375 degrees for 12 to 14 minutes, or until the bottom edges are lightly browned.

ANN'S FANTASTIC FRUIT SALAD
This is a fruit salad my mother-in-law makes, and it is just wonderful and probably the best I have ever had. If you don't like a particular fruit, just substitute it with one that you like! Sometimes my mother-in-law uses peeled and chopped pear in this recipe, you can use pomegranate seeds, mandarin oranges...just whatever seasonal fruit is available to you, it's a very forgiving recipe and completely full of vitamins.
