CHAMPAGNE CHEDDAR SPREAD



Champagne Cheddar Spread image

Perfect for a holiday party, this lightly spiced sharp Cheddar spread is easy to make with just a little Champagne. Use white Cheddar cheese for an elegant appearance.

Number Of Ingredients 6

1 pound Cheddar cheese, cut into 1-inch chunks
4 ounces (1/2 package) cream cheese, softened
1/2 cup Champagne
1 teaspoon McCormick® Parsley Flakes
1/2 teaspoon McCormick® Nutmeg, Ground
1/8 teaspoon McCormick® Red Pepper, Ground

Steps:

  • 1. Place all ingredients in food processor; cover. Process until smooth. Spoon into serving bowl. Cover.
  • 2. Refrigerate at least 2 hours to allow flavors to blend. Let stand at room temperature to soften slightly. Serve with assorted cut-up vegetables, crackers or French bread slices.

2 packages (8 ounces each) cream cheese, softened
2 to 3 tablespoons apricot preserves
3 green onions (green portion only), chopped
3 tablespoons crumbled cooked bacon
1/2 to 1 teaspoon minced garlic
Dash pepper
Assorted crackers

Steps:

  • In a small bowl, beat cream cheese and preserves until blended. Stir in the onions, bacon, garlic and pepper. Refrigerate until serving. Serve with crackers.

BENEDICTINE SANDWICH SPREAD

Number Of Ingredients 7

6 ounces cream cheese
1 medium cucumber, peeled, seeded, and grated
1 medium yellow onion, peeled and grated
2 tablespoons mayonnaise
1/4 teaspoon Tabasco sauce
Salt to taste
Green food coloring

Steps:

  • Place cream cheese in a bowl and mash with a fork until smooth. Wrap cucumber in cheesecloth, then squeeze out and discard juice. Add cucumber to cream cheese and mix thoroughly. Wrap onions in cheesecloth and squeeze juice into cream cheese mixture, then discard onions. Mix mayonnaise and Tabasco sauce into cream cheese mixture. Season to taste with salt, then add 1 drop food coloring and mix well. Serve on thinly sliced white sandwich bread, topped with another slice of bread, trimmed, and cut into finger sandwiches.

Number Of Ingredients 10

6 bacon strips, chopped
3 cups water
1 cup whole milk
3/4 teaspoon salt
1 cup uncooked old-fashioned grits
2 cups shredded Colby-Monterey Jack cheese, divided
2 large eggs, room temperature, lightly beaten
1 cup fresh or frozen corn, thawed
1/4 teaspoon pepper
Sliced avocado, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels., Meanwhile, in a Dutch oven, bring water, milk and salt to a boil. Slowly stir in grits. Reduce heat to low; cook, covered, until thickened, 15-20 minutes, stirring occasionally. Remove from heat. Stir in 1-1/2 cups cheese until melted. Slowly stir in eggs until blended. Stir in bacon, corn and pepper. Transfer to a greased 2-qt. baking dish. Sprinkle with remaining 1/2 cup cheese., Bake, uncovered, until edges are golden brown and cheese is melted, 35-40 minutes. Let stand 10 minutes before serving. If desired, serve with avocado. , Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove casserole from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake grits as directed until heated through and a thermometer inserted in center reads 165°, increasing time to 45-55 minutes.
