- Place strawberries in an even layer in the bottom of a 9x9-in. baking dish; set aside., In a small saucepan, combine water and agar agar powder. Bring mixture to a boil; reduce heat and simmer, stirring constantly for 2 minutes. Remove from heat; stir in cider. Pour mixture over strawberries; let stand 5 minutes. Refrigerate, covered, until set, about 2 hours. , To serve, cut into 1-in. cubes and place in serving bowls. Top with additional sparkling cider if desired.

This wonderful strawberry lemonade and ginger ale punch has been a family favorite for years! Always a big hit with both adults and children at any gathering, and very easy to make. Garnish with orange slices.

Steps:
- Place a 6-quart punch bowl in the freezer to chill thoroughly while preparing the punch, at least 20 minutes.
- Combine strawberries and lemonade concentrate in a blender. Blend on high speed until strawberries are pureed. Pour into the chilled punch bowl.
- Add ginger ale, club soda, ice cubes, and sugar. Stir until sugar is completely dissolved.

PANCAKE "CAKE" WITH SPARKLING STRAWBERRIES
Steps:
- For the pancake batter: Preheat the oven to 200 degrees F; place a dinner plate in the oven.
- Whisk together the water, milk, eggs, flour, baking powder, salt, sugar and 1/4 cup melted butter in a large bowl until completely smooth. Do not overmix.
- Brush the surface of a nonstick pan set over medium heat with some of the remaining melted butter. Spoon 1/3 cup of the batter into the pan and tilt the pan so the pancake is thin and about 6 inches in diameter. Flip once it looks crispy on the edges and air holes appear in the center. Cook another minute until cooked through. Remove the pancake to the plate in the oven to keep warm. Continue making pancakes until all the batter is gone, brushing the pan with butter as needed. Pile the pancakes one on top of the other in an organized stack as you go. You should have about 10 total.
- For the sparkling strawberries: In a medium bowl, combine the strawberries and sugar and gently toss to coat. Pour the sparkling wine over the strawberries and let sit for 10 to 15 minutes in the refrigerator. Serve over the pancakes.

This recipe comes from the fabulous Moosewood New Classics cookbook and is a perfect summer treat. The recipe says that the strawberry puree can be kept for up to four days in the refrigerator.I don't actually know--it's never lasted that long.

- 3 large lemons usually makes at least a cup of juice. Zap the lemons for 1 minute in the microwave to make them as juicy as possible before squeezing.
- In a small saucepan over medium heat combine sugar and water. Stir until sugar is completely dissolved and the liquid is clear.
- Pour the sugar syrup into a blender with the strawberries and lemon juice and puree.
- If serving immediately combine the puree and sparkling water in a pitcher and serve in tall glasses over ice. Or refrigerate the puree and prepare individual servings by mixing equal parts puree and sparkling water.

SPARKLING STRAWBERRY KIWI SANGRIA RECIPE BY TASTY
Here's what you need: strawberry, kiwi, light rum, white wine, sparkling wine, sugar, water, oranges, large pitcher

- Hull the strawberries and cut them in half. Peel the kiwis and cut them into slices.
- Combine half of the halved strawberries, the sugar and water in a saucepan and turn the heat up to medium. Bring the mixture up to a boil and then let simmer, stirring occasionally, for 10 minutes, or until the strawberries seem like they're about to fall apart. 3.Let cool for a few minutes, and then, using a mesh sieve, strain the strawberry goodness into a bowl. Use a spoon to press the strawberries up against the mesh so you get every last beautiful drop of strawberry syrup. Place the syrup in the refrigerator to cool a bit.
- Combine the kiwi slices and the remaining strawberries in a pitcher, and add the rum, white wine, strawberry syrup, and the juice of three oranges (in a pinch, you could also sub a few splashes of bottled orange juice, or even lemonade, for the fresh orange juice).
- Give it all a good stir and then pop the pitcher in the refrigerator for at least four hours to let all of the flavors come together.
- When you're ready to serve, add around three-quarters of the chilled sparkling wine to the pitcher. Pour into glasses and spoon in fruit, topping each glass off with a bit of the remaining champagne so it's nice a bubbly when you hand the glass to a friend. Cheers!
