NO-ROLL MEXICAN RICE ENCHILADAS



No-Roll Mexican Rice Enchiladas image

Take the mess out of making a Mexican favorite: just fill, fold, and bake these vegetarian rice-bean-cheese enchiladas.

1 box (6.4 oz) rice and vermicelli mix with Spanish seasonings
2 tablespoons butter or margarine
2 1/4 cups water
1 can (19 oz) Old El Paso™ mild enchilada sauce
1 can (16 oz) pinto beans, drained, rinsed
1 can (11 oz) Southwestern style corn, drained
1 package (8.2 oz) Old El Paso™ flour tortillas for soft tacos & fajitas (ten 6-inch tortillas)
2 cups finely shredded Mexican cheese blend (8 oz)

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 12-inch nonstick skillet, cook rice and vermicelli with butter over medium heat until rice mixture is golden brown, stirring frequently. Stir in water and seasoning mix from rice box. Heat to boiling. Cover; reduce heat to low. Cook 15 to 20 minutes or until rice mixture is tender. Stir in 1/2 cup of the enchilada sauce, the pinto beans and corn.
  • Heat oven to 350°F. Place about 1/2 cup rice mixture on center of each tortilla; top rice mixture in each tortilla with about 1 tablespoon of the cheese. Fold each in half. Arrange tortillas in 2 rows of 5 in baking dish, placing tortillas open end up, slanting and overlapping. Pour remaining enchilada sauce evenly over enchiladas. Cover tightly with foil.
  • Bake 30 to 35 minutes or until hot and sauce begins to bubble. Uncover; sprinkle with remaining cheese. Bake uncovered about 5 minutes longer or until cheese is melted.

1 tablespoon extra virgin olive oil
1 onion (diced)
1 green bell pepper (diced)
3 garlic cloves (minced)
1/2 cup enchilada sauce (recipe follows)
1 cup black beans (rinsed and drained)
1 cup frozen corn (thawed)
1/2 cup salsa
3 cups brown or white rice (cooked)
1 tablespoon fresh cilantro (chopped)
salt and pepper
1 tablespoon extra virgin olive oil
1 tablespoon all purpose flour
1 cup chicken stock
2 tablespoons chili powder
1/2 teaspoon light brown sugar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cumin
1/4 teaspoon oregano
salt and pepper

Steps:

  • Heat oil in a large pot.
  • Add in onion and green pepper and sauté until tender, 3-4 minutes.
  • Add in garlic and cook for an additional minute.
  • Stir in enchilada sauce, black beans, corn, salsa, rice and cilantro.
  • Season with salt and pepper to taste.
  • Heat oil in a medium pot.
  • Add flour and stir for one minute.
  • Stir in the seasoning.
  • Slowly whisk in stock. Simmer for 10-15 minutes or until thick.
  • Season with salt and pepper to taste.

1 package (6.8 ounces) Spanish rice and pasta mix
1 pound ground beef
2 cans (10 ounces each) enchilada sauce, divided
10 flour tortillas (8 inches), warmed
1-2/3 cups shredded cheddar cheese, divided

Steps:

  • Prepare rice mix according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in Spanish rice and 1-1/4 cups enchilada sauce. , Spoon about 2/3 cup beef mixture down the center of each tortilla. Top each with 1 tablespoon cheese; roll up., Place in an ungreased 13x9-in. baking dish. Top with the remaining enchilada sauce and cheese. Bake, uncovered, at 350° until the cheese is melted, 20-25 minutes.

1 tablespoon olive oil
1 green bell pepper, chopped
1 onion, chopped
3 cloves garlic, minced
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes and green chilies
¼ cup picante sauce
1 tablespoon chili powder
1 teaspoon ground cumin
¼ teaspoon red pepper flakes
2 cups cooked brown rice
8 (6 inch) flour tortillas, warmed
1 cup salsa
1 cup shredded Cheddar cheese
3 tablespoons chopped fresh cilantro leaves
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Heat oil in a large skillet over medium heat; cook and stir green pepper, onion, and garlic until tender, about 7 minutes. Stir in beans, tomatoes, picante sauce, chili powder, cumin, and red pepper flakes; bring to a boil. Reduce heat to low and simmer, uncovered, until heated through and mixture thickens, about 5 minutes. Fold in rice and 1 cup Cheddar cheese; cook until heated through, about 5 minutes.
  • Spoon a rounded 1/2 cup bean mixture down the center of each tortilla. Fold sides over filling and roll up. Place enchiladas seam side down in baking dish; spoon salsa over each tortilla. Cover baking dish with aluminum foil.
  • Bake in preheated oven for 25 minutes. Uncover and sprinkle with cilantro and 1/4 cup Cheddar cheese. Bake until cheese is melted, 2 to 3 minutes.

2 cups chicken broth

  • Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
  • Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

1 envelope taco seasoning, divided
1 small onion, chopped
2 cloves garlic, minced
2 1/2 cups water, divided
1 (6 7/8 ounce) package Spanish rice, and vermicelli mix
2 tablespoons butter or 2 tablespoons margarine
1 (14 1/2 ounce) can diced tomatoes, undrained
6 flour tortillas (10 inches)
2 cups shredded cheddar cheese, divided
1 (8 ounce) can tomato sauce
diced avocado
sliced ripe olives
shredded lettuce
sour cream
taco sauce

Steps:

  • In a skillet,cook beef,onion and garlic until meat is browned, drain.
  • Set aside 1 tablespoon of taco seasoning; add remaining seasoning to beef.
  • Stir in 3/4 c.
  • water; cover and simmer for 15 minutes.
  • In a saucepan, saute rice mix in butter over medium heat until golden brown.
  • Add the tomatoes, contents of rice seasoning packet and remaining water.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 15 minutes or until rice is tender.
  • Stir in beef mixture.
  • Spread over tortillas to within 1/2 inch of edge.
  • Sprinkle with 1 cup cheese.
  • Roll up and place seam side down in a greased 13x9 inch baking dish.
  • Combine tomato sauce and reserved taco seasoning; pour over the enchiladas.
  • Sprinkle with remaining cheese.
  • Cover and bake at 350 degrees for 30 minutes or until heated thoroughly.
  • Serve with toppings of your choice.

It's basically a spicy Spanish Rice in a Tortilla covered in Enchilada Sauce sprinkled with cheese. PS. I made up my own Enchilada sauce. I added a bit more Cayenne pepper to my sauce.

1 lb ground beef
1/2 large onion
1 4oz mild green chilies-undrained
1 8oz tomato sauce
3 tsp chili powder
3 Tbsp tomato paste
1 14.5 oz. diced tomato undrained
2 dash(es) cayenne pepper
1 c white rice
2 c water or chicken broth
10 soft flour tortillas
2-1/2 c mild sharp shredded cheee divided
1 24 oz. can of enchilada sauce

Steps:

  • 1. In a skillet, brown Ground Beef. Drain off fat. Salt and pepper to taste. Add onion. Stir until onion is translucent. Transfer to a Bowl, and set aside.
  • 2. Using the same skillet On med/High heat, pour 2 T oil in Skillet. Brown Rice in oil on med/ high heat. Once browned, lower heat. Add in Tomato paste, sauce,and diced tomatoes.
  • 3. Also, add in chili powder and cayenne and mild green chilies. Stir to combined. Add back in Meat. Stir. Add in 2 c. water. Simmer on low until rice is tender.
  • 4. place about 1/2 c. enchilada sauce on the bottom of a 13x9 casserole dish. Place meaty spicy Spanish rice in each tortilla then sprinkle a bit of cheese, and place seem side down. My 13x 9 dish holds 8 tortillas.
  • 5. Pour sauce evenly over top and bake at 350 for 25 min. or until hot and bubbly.
