ITALIAN BEEF STEW



Italian Beef Stew image

A warm and hearty Italian feast.

2 oz pancetta (*diced)
2 tbsp olive oil
1 1/2- 1 3/4 lbs top sirloin (*cubed )
1 tsp salt
1/4 tsp pepper
1/4 cup balsamic vinegar
1/2 cup red wine
4 cups beef broth
1/2 cup flour
1 tbsp tomato paste
1 14.5 can diced tomatoes
1 tsp thyme
1 tsp basil
1/2 tsp oregano
4 lg cloves garlic (*about 2 tbsp minced or crushed)
24 oz button mushrooms (*roughly cut )
3 sm brown onions (*cut into wedges)
3-4 sm carrots (*roughly cut )
3-4 celery stalks (*roughly cut)
1 fresh rosemary sprig
1 bay leaf
1 lb gnocchi
1 can black olives (*cut in halves)

Steps:

  • Cut top sirloin into cubes and salt and pepper. Set aside.
  • Heat a dutch oven over medium-high heat. Add pancetta and cook stirring occasionally until browned, about 4 mins. Remove from pan and set aside. Add 1 tbsp oil and half of beef to pancetta drippings. Cook over same heat until browned, stirring occasionally. Remove from pan and repeat with second half of beef. Remove beef and set aside.
  • In the same heated pan add balsamic, wine and 2 cups of beef broth. Bring to a simmer and stir in flour. Cook for about 3 mins stirring consistently until thickened. Stir in tomato paste, canned tomatoes, thyme, basil, oregano and garlic. Add browned pancetta and beef. Stir in mushrooms, onions, carrots, celery, remaining broth, rosemary and bay leaf.
  • Cover and lower heat to medium-low. Simmer, stirring occasionally for 2 hours or until veggies and meat are tender but still whole.
  • Add in olives and gnocchi and cook for an additional 20 mins covered, over same heat, stirring occasionally.

3/4 cup all-purpose flour
1 1/2 tbsp garlic powder
Salt and freshly ground pepper
1 1/2 lb beef chuck roast, fat-trimmed, and cut into roughly 1 1/2 inch cubes
Private Reserve extra virgin olive oil
1 large red onion, cut into large pieces
6 garlic cloves, chopped
4-5 large rainbow carrots (about 12 oz), cut into large pieces
1 cup red wine
2 cups vegetable broth
28 oz can whole peeled tomato
4-5 sprigs fresh thyme
2 sprigs fresh rosemary
16 oz white or cremini mushrooms, cleaned and sliced

Steps:

  • Mix the flour and garlic powder together.
  • Pat the meat dry and season with salt and pepper. Dredge the meat into the flour mixture to coat.
  • In a large cast-irons skillet, heat 2 tbsp olive oil. Brown the meat deeply for about 3-4 minutes on each side; crust should form. Remove from heat.
  • Now, place the browned meat in the bottom of a large crock pot. Add the remaining ingredients except the mushrooms. Stir with a wooden spoon.
  • Cover the crock pot and cook on high for 4 1/2 hours. Add the sliced mushrooms. Cover and cook for another 30 minutes or so.
  • Enjoy with your favorite Italian bread or even homemade challah!

3 pounds beef stew meat, cut into 1-inch pieces
⅓ cup Italian salad dressing
2 cups water
2 teaspoons beef bouillon granules
1 (14.5 ounce) can diced tomatoes, undrained
1 (10.5 ounce) can condensed beef broth
1 (8 ounce) can tomato sauce
1 clove garlic, minced
1 bay leaf
1 teaspoon salt
1 teaspoon dried oregano
½ teaspoon ground black pepper
6 small potatoes, quartered
6 carrots, cut into 1-inch pieces
1 green bell pepper, cut into 1/2-inch dice
1 onion, chopped
3 tablespoons all-purpose flour
3 tablespoons cold water

Steps:

  • Heat a large skillet or Dutch oven over medium heat; cook and stir beef stew meat and Italian dressing until meat is evenly browned, about 5 minutes. Add 2 cups water, beef bouillon, diced tomatoes, beef broth, tomato sauce, garlic, bay leaf, salt, oregano, and pepper to skillet; bring to a boil. Reduce heat to medium-low, cover, and simmer until meat is tender, about 1 1/2 hours.
  • Place potatoes, carrots, bell pepper, and onion in stew; cover and simmer over medium-low heat until vegetables are tender, about 45 minutes.
  • Combine flour and cold water in a small bowl; mix until smooth. Stir flour mixture into stew, bring to a boil; cook and stir until stew is thickened, about 2 minutes. Discard bay leaf before serving.

My niece shared this recipe with me, and whenever I've served it, I get requests for the recipe. The sausage, tortellini, tomatoes, zucchini and herbs make it different from typical stews featuring meat and potatoes. It's a hearty one-dish meal that's simple to prepare.

1 pound bulk Italian sausage
1 small onion, chopped
1 garlic clove, minced
3 cups beef broth
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 can (8 ounces) tomato sauce
1 medium carrot, thinly sliced
1 teaspoon dried basil
1 teaspoon dried oregano
1 package (9 ounces) refrigerated cheese tortellini
1 small zucchini, sliced
1/3 cup chopped green pepper
2 tablespoons minced fresh parsley
Grated Parmesan cheese

Steps:

  • In a large saucepan, cook sausage and onion over medium heat until meat is no longer pink and onion is tender. Drain. Add garlic; cook 1 minute longer. , Stir in the broth, tomatoes, tomato sauce, carrot, basil and oregano. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Gently stir in the tortellini, zucchini, green pepper and parsley. Cover and simmer for 20-25 minutes or until tortellini is tender. Serve with cheese.

3 tablespoons olive oil
1 large fennel bulb, thinly sliced
1 onion, chopped
3 large shallots, chopped
2 teaspoons salt
4 large garlic cloves, finely chopped
3/4 teaspoon dried crushed red pepper flakes, plus more to taste
1/4 cup tomato paste
1 (28-ounce) can diced tomatoes in juice
1 1/2 cups dry white wine
5 cups fish stock
1 bay leaf
1 pound manila clams, scrubbed
1 pound mussels, scrubbed, debearded
1 pound uncooked large shrimp, peeled and deveined
1 1/2 pounds assorted firm-fleshed fish fillets such as halibut or salmon, cut into 2-inch chunks

Steps:

  • Heat the oil in a very large pot over medium heat. Add the fennel, onion, shallots, and salt and saute until the onion is translucent, about 10 minutes. Add the garlic and 3/4 teaspoon of red pepper flakes, and saute 2 minutes. Stir in the tomato paste. Add tomatoes with their juices, wine, fish stock and bay leaf. Cover and bring to a simmer. Reduce the heat to medium-low. Cover and simmer until the flavors blend, about 30 minutes.
  • Add the clams and mussels to the cooking liquid. Cover and cook until the clams and mussels begin to open, about 5 minutes. Add the shrimp and fish. Simmer gently until the fish and shrimp are just cooked through, and the clams are completely open, stirring gently, about 5 minutes longer (discard any clams and mussels that do not open). Season the soup, to taste, with more salt and red pepper flakes.
  • Ladle the soup into bowls and serve.

Best beef stew I've ever made! I apologize for the vague instructions, the ingredient amounts are approximate as well as I did this over the weekend but did not note amounts. It turned out so good I wanted to save what I did so I could make again! Chicken broth can be used instead of beef broth if desired.

½ yellow onion, quartered and sliced

Steps:

  • Heat oil in a skillet over medium heat. Cook beef in hot oil until browned on all sides, 5 to 10 minutes. Transfer beef to slow cooker; add carrots, onion, potatoes, celery, and garlic.
  • Whisk red wine, beef broth, tomato paste, and rosemary together in a bowl until smooth; pour over beef and vegetables.
  • Cook on Low until beef and vegetables are tender, 4 to 6 hours.

2 pounds cubed pork stew meat
salt to taste

garlic powder to taste
2 tablespoons cornstarch, or as needed
8 red potatoes
1 green bell pepper, chopped
1 red bell pepper, chopped
1 sweet onion, diced
1 (11 ounce) can whole kernel corn
1 (14 ounce) can stewed tomatoes
1 (10.75 ounce) can cream of mushroom soup
1 ¼ cups milk
1 (14 ounce) can beef broth
1 tablespoon Italian seasoning

Steps:

  • Heat the olive oil in a skillet over medium heat. Sprinkle pork on all sides with salt, pepper, and garlic powder, and lightly coat with cornstarch. Place pork in the skillet, and cook until lightly browned but not done. Transfer to a slow cooker. Place potatoes, green bell pepper, red bell pepper, onion, and corn in the slow cooker.
  • In a bowl, mix the tomatoes, cream of mushroom soup, milk, broth, and Italian seasoning. Pour into the slow cooker.
  • Cover, and cook 1 hour on High. Reduce heat to Low, and continue cooking at least 1 hour.

2 pounds boneless pork loin, cut into 1-inch pieces
4 tablespoons olive oil, divided

1 cinnamon stick (3 inches)

2 tablespoons olive oil
2 pounds lean top round, trimmed and cut into 1-inch cubes
2 large sweet onions, diced
2 cups large chunks of celery
4 large carrots, peeled and cut into large rounds
1 pound crimini mushrooms, sliced
2 tablespoons minced garlic
2 cups dry red wine
4 large tomatoes, chopped
1 ½ pounds red potatoes (such as Red Bliss), cut into 1-inch chunks
1 tablespoon dried basil
1 teaspoon dried thyme
1 teaspoon dried marjoram
½ teaspoon dried sage
1 quart beef stock
2 cups tomato sauce

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Cook beef in batches in hot oil until browned completely, about 5 minutes per batch. Remove browned beef cubes to a plate lined with paper towels, keeping skillet over heat and retaining the beef drippings.
  • Cook and stir onion, celery, and carrots in the retained beef drippings until just softened, 2 to 3 minutes. Stir mushrooms and garlic into the onion mixture.
  • Pour red wine into the pan; bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Continue cooking the mixture until the wine evaporates, 7 to 10 minutes. Stir tomatoes into the mixture.
  • Return beef to skillet with potatoes, basil, thyme, marjoram, and sage. Pour beef stock and tomato sauce over the mixture. Bring the liquid to a simmer.
  • Reduce heat to low and simmer until the beef is very tender and the sauce is thick, 4 to 6 hours.
