8 ounces mascarpone, at room temperature
3/4 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce, such as Tabasco
2 tablespoons tomato paste
1 tablespoon ketchup
1 tablespoon prepared horseradish, liquid squeezed out
Zest of 1 lemon plus 1 teaspoon juice
1/4 teaspoon kosher salt
1/8 teaspoon celery seeds
1 head celery, cut into 4-inch sticks

Steps:

  • Put the mascarpone in the bowl of a food processor fitted with a metal blade and pulse until smooth. Scrape down the sides of the bowl with a rubber spatula and add the Worcestershire sauce, hot sauce, tomato paste, ketchup, horseradish, lemon zest and juice, salt and celery seeds. Process, scraping down the sides of the bowl as needed, until the dip is smooth, about 1 minute.
  • Transfer the dip to a serving bowl and serve with celery sticks for dipping.

SPAM® is not something I eat often but when I do, I like it extra crispy. I found a can in the pantry and decided to give it a go in the air fryer. The outside was far crispier than you get in a skillet on the stovetop and the inside stayed nice and tender.

½ cup mayonnaise
2 teaspoons Sriracha sauce
1 teaspoon ketchup
1 (12 ounce) container fully cooked luncheon meat (such as SPAM®), sliced into fries

Steps:

  • Preheat the air fryer to 400 degrees F (200 degrees C).
  • Whisk mayonnaise, Sriracha, and ketchup together in a small bowl. Set dipping sauce aside.
  • Place luncheon meat fries into the air fryer basket without overcrowding. Work in batches if needed. Fry for 6 minutes. Flip fries using tongs. Cook to desired crispness, about 4 minutes more. Transfer to a paper towel-lined plate. Serve with dipping sauce.

1 bunch kale
1 tablespoon olive oil
1 teaspoon seasoned salt

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a non insulated cookie sheet with parchment paper.
  • With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.
  • Bake until the edges brown but are not burnt, 10 to 15 minutes.

1 clove garlic, minced
½ teaspoon paprika
1 pinch salt
1 cup mayonnaise
1 tablespoon sriracha sauce
1 tablespoon ketchup
1 quart vegetable oil for frying
2 (12 ounce) cans fully cooked luncheon meat (such as SPAM®), sliced into fries

Steps:

  • Process garlic, paprika, and salt in a food processor until smooth. Add mayonnaise, sriracha sauce, and ketchup; process until sauce is well-combined. Transfer sauce to a bowl, cover the bowl with plastic wrap, and refrigerate until chilled.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Rinse luncheon meat 'fries' with cool water and pat dry.
  • Working in batches, cook 'fries' in preheated oil until browned and crispy on the outside and still moist on the inside, 4 to 6 minutes. Remove to a paper towel-lined plate. Transfer 'fries' to a plate and serve with chilled dipping sauce.

1/2 ounce Guinness
5 dashes Tabasco (or Bar Louie Hot sauce)
Fill with 7 ounce Bloody Mary Mix
Box and pour-
Garnish: celery salt (rim), celery stalk
Ultimate garnish: lime, lemon, blue cheese olive, pickle, pepperoncini, salami, provolone.

Steps:

  • In 20 ounce glass filled with ice, add vodka, Guinness, and Tabasco sauce. Fill with Bloody Mary Mix (7 ounces) Rim glass with celery salt. Garnish with celery stalk, blue cheese olive, salami and provolone. Another suggestion is to grate parmesan cheese on top.

1/2 cup spicy V8 vegetable juice
1/2 cup finely minced onion
1/3 cup mayonnaise
1/3 cup tomato puree

2 tablespoons lemon juice
hot sauce
red food coloring (optional)

Steps:

  • Puree until smooth in blender or food processor. Chill before serving.
  • I served this with celery sticks, cucumbers and cherry tomatoes.

  • Add the flour to a mixing bowl. Add in the paprika, garlic, and pepper. Stir until it's well combined. Crack the eggs into a second bowl, and the put the bread crumbs in the third bowl.
  • Using tongs or your hands, dredge the spam in the flour and roll it until it's well coated. Next, put it in the egg mixture. Lastly, dredge it in the bread crumbs. Set the pieces aside on a plate.
  • Add some oil to a frying pan. You'll need it about 2 inches deep. Over medium high heat, bring the oil up to about 350 degrees F. If you don't have a thermometer, sprinkle a small bit of flour in the oil. If it sizzles and bubbles, the oil is up to temperature. Place the spam fries in, in batches, and fry them for about 45 seconds on one side. Using your tongs, flip them, and fry them for an additional 45 seconds on the other side. Set them aside on a plate lined with a paper towel and repeat the process for the remaining batches.
