Thai Chicken Pizza with mozzarella, chicken, shredded carrots, and a perfect thai sauce.

1 large thinly rolled out pizza dough
3 Tablespoons peanut butter (smooth or chunky)
2 teaspoons rice vinegar
2 teaspoons low-sodium soy sauce
1 teaspoon olive oil
1/2 teaspoon crushed red pepper flakes
1 Tablespoon freshly grated ginger
2 teaspoons honey
1/2 teaspoon sesame oil
2-3 Tablespoons water
1 heaping cup cooked, shredded chicken
1/4 cup chopped red or green onion
3 Tablespoons shredded carrot (, moisture squeezed out)
1 1/4 cups freshly shredded mozzarella cheese
1/4 cup fresh chopped cilantro

Steps:

  • Preheat oven to 475 degrees F.
  • Peanut Sauce: In food processor or blender, combine peanut butter, vinegar, soy sauce, oil, red pepper flakes, ginger, honey and sesame oil. Add enough water to thin to a smooth sauce spreading consistency. Set aside.
  • Assemble: Spread peanut sauce over the surface of pizza crust.
  • Scatter chicken pieces over top and sprinkle with green onions, carrot and cheese.
  • Bake for 7-12 minutes or until crust is cooked and cheese is bubbly. Remove from oven and garnish with fresh cilantro.

1/4 cup yellow cornmeal
1 (13.8-ounce can) refrigerated classic pizza crust
8 (1-ounce slices) fresh mozzarella cheese
1 cup ricotta cheese
1 cup leftover rotisserie chicken
1 cup cherry tomatoes, halved

Steps:

  • Preheat oven to 450 degrees F. Lightly coat a baking sheet or pizza pan with olive oil. Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. Transfer to prepared baking sheet or pizza pan. Using a small ladle, spread pesto over the surface of the dough in an even layer, leaving a 1/2-inch border. Top with mozzarella, dollops of ricotta, chicken and tomatoes. Place into oven and bake for 15-20 minutes, or until the crust is golden brown and the cheeses have melted. Serve immediately.

1 skinless, boneless chicken breast half
2 tablespoons butter or margarine, softened
2 cloves garlic, minced
2 tablespoons chopped green onion
½ teaspoon dried basil
1 (10 ounce) can refrigerated pizza crust dough
2 roma (plum) tomatoes, diced
½ cup chopped fresh cilantro
½ cup ricotta cheese
¼ cup grated Parmesan cheese

Steps:

  • Place the chicken breast in a saucepan with enough water to cover. Bring to a boil, and cook until no longer pink, about 20 minutes. Drain and cool slightly, then cut into strips.
  • Meanwhile, in a small skillet over medium heat, melt the butter with garlic, onion and basil. Pour into a chilled dish to cool, and refrigerate until set.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roll out the pizza dough, place onto a pizza pan or other baking sheet, and spread the herb butter over the surface using the back of a spoon. Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and Parmesan cheese.
  • Bake for 15 to 20 minutes in the preheated oven, until crust is browned and center is cooked through.

2 teaspoons active dry yeast
1 cup warm water (110° to 115°)
2-3/4 cups bread flour
1 tablespoon plus 2 teaspoons olive oil, divided
1 tablespoon sugar
1-1/2 teaspoons salt, divided
1/2 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
1 small onion, halved and thinly sliced
1/2 each small green, sweet red and yellow peppers, julienned
1/2 cup sliced fresh mushrooms
3 tablespoons prepared pesto
1-1/2 cups shredded part-skim mozzarella cheese
1/4 teaspoon pepper

Steps:

  • In a large bowl, dissolve yeast in warm water. Beat in 1 cup flour, 1 tablespoon oil, sugar and 1 teaspoon salt. Add the remaining flour; beat until combined., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour., In a large nonstick skillet over medium heat, cook the chicken, onion, peppers and mushrooms in remaining oil until chicken is no longer pink and vegetables are tender. Remove from the heat; set aside. , Punch dough down; roll into a 15-in. circle. Transfer to a 14-in. pizza pan. Build up edges slightly. Spread with pesto. Top with chicken mixture and cheese. Sprinkle with pepper and remaining salt. , Bake at 400° for 18-20 minutes or until crust and cheese are lightly browned. Freeze option: Securely wrap and freeze unbaked pizza. Use your favorite pizza dough or store-bought crust (I won't tell..). This is easy and quick - perfect for a simple week night dinner. Sauce and topping are enough for a 12" pizza.

1 tablespoon olive oil
3 cloves garlic
1 (6 ounce) can tomato paste (no salt added)
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/2 teaspoon salt
crushed red pepper flakes, amount depending how spicy you like your sauce to be (I used 2 tsp)
1/2 cup dry white wine
2 tablespoons ketchup
1/2 lemon, juice of
3 tablespoons fresh basil, chopped
3 (2 ounce) boneless skinless chicken breast halves
salt & freshly ground black pepper
1 teaspoon dried basil
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
1 tablespoon olive oil
1/2 lemon, juice of
1 small red bell pepper, diced
1 cup mozzarella cheese, shredded (amount depending on how cheesy you like your pizza)
1/4 cup parmesan cheese, freshly grated (amount depending on how cheesy you like your pizza)

Steps:

  • Sauce: Heat olive oil in a saucepan over medium-high heat; fry garlic for 1 minute, until fragrant
  • Add tomato paste, coriander, oregano, cumin, salt and pepper flakes; give the mixture a good stir
  • Turn the heat down to medium, and add the white wine, ketchup and lemon juice
  • Simmer sauce for 1 minute (low heat), then stir in the chopped basil; remove from heat, cover and set aside
  • Topping: Make sure the chicken breasts are quite flat, if not, pound them between clingwrap with a meat mallet or rolling pin
  • Next sprinkle some salt, black pepper, basil, coriander and oregano over both sides; rub in the seasonings using your fingers
  • Lay the chicken on foil-lined baking tray
  • Combine lemon juice and olive oil; drizzle over the chicken and bake in preheated oven at 200°C / 390°F for 15mins or until just cooked through
  • Remove from oven, cool slightly and slice the chicken, across the grain, into small strips
  • Spread the sauce on your favorite pizza crust, scatter the cooked chicken and diced pepper over the sauce
  • Top the pizza with mozzarella cheese and bake for approx 10-15mins (depending on your crust)
  • Remove from oven, sprinkle with grated Parmesan, and serve immediately
