- Cook noodles according to package directions. Meanwhile, in a large bowl, combine the milk, tuna, soups, cheese and chiles. Drain noodles; gently stir into tuna mixture., Transfer to an ungreased 13x9-in. baking dish. Sprinkle with tortilla chips. Bake, uncovered, at 350° for 30-35 minutes or until bubbly.

Canned Tuna just had a glow up, with this Southwestern Tuna Casserole recipe. And in my option this is the Best Tuna Noodle Casserole!

Steps:
- Preheat Oven to 375 degrees
- Heat olive oil in a medium sized skillet, add chopped onion and minced garlic. Stir until fragrant
- Add diced red bell pepper, jalapeno, frozen corn, and frozen peas
- Stir in Chili Powder and Cumin, cook until peppers have softened
- Season with salt and pepper
- In Medium/Large casserole dish add cooked skillet ingredients, tuna, cooked pasta, cream of mushroom, and water
- Mix with large wooden spoon until equally distributed
- Sprinkle cheese, followed by breadcrumbs over the top
- Pop in the oven for 25 minutes
- When done cooking top with whatever toppings you would like!
- Enjoy

- In a large skillet, heat 1 tablespoon butter over medium-high heat. Add carrots, onion, red pepper and mushrooms. Cook and stir until tender, 8-10 minutes. Add tuna, spinach and peas; cook until spinach is just wilted, 2-3 minutes. , Meanwhile, cook pasta according to package directions for al dente. Drain pasta, reserving 1 cup pasta water. In a large bowl, place pasta and tuna mixture; toss to combine. Wipe skillet clean., In the same skillet, melt remaining butter over medium heat. Stir in flour until smooth; gradually whisk in broth and cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes, adding reserved pasta water if needed. Stir in cheese, salt and pepper. Pour over pasta; toss to coat.

TUNA NOODLE CASSEROLE
Ree's easy tuna noodle casserole uses pantry and refrigerator staples like egg noodles, canned tuna, bread crumbs and mushrooms to get a family-friendly dinner on the table in just an hour.

- Preheat the oven to 400 degrees F.
- Bring a pot of water to a boil and cook the egg noodles to al dente according to the package instructions. Drain and set aside.
- Meanwhile, melt 4 tablespoons of the butter in a large skillet over medium heat. Add the onion and cook until starting to soften, 3 to 4 minutes. Add the mushrooms and cook, stirring, for a couple of minutes. Sprinkle the flour evenly over the mixture and stir so that the flour coats the onions and mushrooms thoroughly. Cook, stirring, for another minute. Add the milk and sherry and whisk to combine. Cook the sauce until it's nice and thick, 3 to 4 minutes. Sprinkle in salt and pepper to taste and stir. Adjust the seasoning to make sure the sauce is adequately salted.
- Add the tuna and stir it into the sauce. Then stir in the bell pepper and 1 tablespoon of the parsley. Stir in the noodles until they're coated. Butter a 9-by-13-inch baking dish and transfer the noodle mixture to the dish.
- Melt the remaining 4 tablespoons butter in a bowl in the microwave; stir it around with the breadcrumbs and remaining tablespoon of parsley.
- Top the casserole with the breadcrumbs and bake until golden, 25 to 30 minutes. Serve piping hot with a green salad and warm crusty bread.
SOUTHWESTERN TUNA CLAMATO CASSEROLE

- Preheat oven to 350° F.
- Mix Clamato, tomato paste, garlic powder, cumin, chili powder, and paprika in a medium bowl.
- Heat oil in a medium skillet, and sauté onion and red peppers until just softened.
- In a large bowl, mix together tuna, corn, tomatoes, beans, onion and pepper mixture, and rice.
- Stir in the Clamato mixture, and place in a 13x9-inch casserole dish.
- Cover with aluminum foil and place in the oven. Bake for 40 to 45 minutes, until hot throughout.
- Top with cheese and tortilla strips.
- Serve with sour cream on the side.

- Cook macaroni according to package directions to "al dente", then drain and rinse with cool water, and let drain again.
- Meanwhile, combine soup, mayonnaise and milk, and stir until smooth.
- Preheat oven to 350 degrees and slightly grease a 2 quart glass baking dish.
- Mix macaroni, soup mixture, cheddar cheese, salt & pepper, and flaked tuna thoroughly in a large bowl.
- Pour mixture into baking dish, sprinkle bread crumbs evenly on top, and then dot with margarine on top.
- Bake, uncovered at 350 degrees for 30 minutes.

- Preheat the over to 350 degrees F. Coat a 2-quart casserole dish with non-stick cooking spray and set aside.
- Cook the pasta according to package directions.
- Place a large skillet over medium-high heat. Coat with the canola oil, and when the oil is hot, add the onion and celery. Cook and stir until the vegetables soften, about 3 minutes.
- Stir in corn and cook 2 minutes longer to incorporate.
- Stir in the mayonnaise, salsa and chili powder until well blended. If it seems too thick, thin with a few teaspoons of non-dairy milk (almond milk, rice milk or soy milk) or some gluten-free chicken stock.
- Add the tuna and cooked pasta, stirring just to coat.
- Pour into the prepared casserole dish.
- Sprinkle top evenly with cheese (optional).
- Bake for about 25 minutes or until bubbling. Remove from oven and serve immediately.
