BABY BACK RIBS (SMOKER, OVEN, OR OVEN-TO-GRILL)

- Make the Spice Rub: In a medium bowl, whisk together the sugar, salt, smoked paprika, garlic powder, onion powder, cumin, oregano, ground mustard, and cayenne pepper.
- Preheat the smoker to 225°F or the oven to 300°F. (If using the oven, set one rack in the middle position and one rack in the top position.)
- Remove the membrane that coats the underside of each rack of ribs. Using a butter knife, loosen the membrane around one of the end bones, scraping it away from the ribs. Once you get under it, grab the membrane with a paper towel and peel it off. If you're lucky, it will come off all in one piece. (Alternatively, ask your butcher to do this for you.)
- Coat the ribs evenly on both sides with about half of the spice rub. Allow the ribs to sit for about 15 minutes to "sweat" and absorb the rub, then coat the racks with the remainder of the rub. It will seem like too much rub but it's not - use it all.
- Smoker Method: Place the spice-coated ribs in the smoker and cook for 2 hours. Remove the ribs from the smoker and double wrap each rack in heavy-duty foil. Return to the smoker for 1½ hours. Remove the foil-wrapped ribs from the smoker (hot grease may drip out of the foil, so be careful). Carefully unwrap, leaving the ribs on the foil, and brush to the top of each rack with about 3 tablespoons of the BBQ sauce. Fold the edges of the foil around the ribs, creating a makeshift "pan" for each rack. Place the racks back in the smoker on the foil and cook for 45 minutes to 1 hour more, or until the racks are tender. To determine if they're done, lift them from the center with tongs - if they bend easily and the meat "cracks" on top, they are ready. Let the ribs cool for about 10 minutes, then slice and serve.
- Oven or Oven-to-Grill Method: Line a baking sheet with heavy-duty aluminum foil. Place the spice-coated ribs on the prepared pan, cover the pan tightly with foil, and bake until tender, about 2 hours. Turn the oven to broil. Remove the foil from the ribs and brush each rack with 3 tablespoons of the barbecue sauce. Broil until the sauce just starts to bubble and caramelize, 2 to 4 minutes. Keep a close eye on the ribs while they're under the broiler; because of the sugar in the rub and sauce, they will quickly go from nicely caramelized to burnt. (Alternatively, you can skip the broiling and finish the ribs on the grill. Preheat the grill to medium and grill the baked racks for 10 to 15 minutes, brushing occasionally with the BBQ sauce until charred in spots and heated through. Adjust heat as necessary to prevent burning.) Let the ribs cool for about 10 minutes, then slice and serve.
- Reheating/Freezing Instructions:The cooked ribs will keep in a covered container in the refrigerator for 3 to 4 days, or they can be frozen for up to 3 months. To reheat, thaw the ribs overnight in refrigerator if necessary, then place on a foil-lined baking sheet. Brush the ribs with another layer of BBQ sauce and cover tightly with foil. Warm in a 250°F oven for 30 to 35 minutes, or until warmed through. Remove the foil and continue cooking for 10 to 15 minutes to allow the sauce to set and the bark to crisp up.

SOUTHWESTERN-STYLE BABY BACK RIBS
I once considered making more authentic smoked ribs for a tailgate party and, in the planning, realized that not only would I need to be at the parking lot hours before everyone else, but my grill was not large enough to smoke enough ribs for everyone in my party. And to try to pass off just "a taste" of barbecued ribs is like trying to arm-tackle Priest Holmes. So it was a choice between shelling out for another grill or devising another method of cooking the ribs. Baking them first in a slow oven produced moist, flavorful meat I then had only to finish on the grill.

- At home
- In a small bowl, mix together the thyme, garlic, onion powder, brown sugar, paprika, chili powder, rosemary, salt, and black pepper. Rub the spice mixture over both sides of the ribs. Wrap in plastic and refrigerate overnight or up to 24 hours.
- Preheat the oven to 325°F. Unwrap the ribs and place them on a baking sheet. Cover completely with foil. Bake for 1 hour and 10 minutes. Remove the foil and let the ribs cool. Refrigerate them, wrapped in plastic, until you are ready to pack, up to 24 hours.
- Just before leaving, cut the racks into individual ribs and place them in a large, sealable plastic container. Add 1 cup of the barbecue sauce and stir so all the ribs are coated.
- At the tailgate
- Prepare coals for a medium fire. When the coals are hot, grill the ribs for 10 minutes, until they are lightly charred and heated through, turning them several times and applying several more moppings of sauce.
- Serve the ribs hot, accompanied by more sauce.

- If necessary, remove thin membrane from ribs and discard. Combine broth, soy sauce, 1/2 cup sugar, vinegar, olive oil and garlic. Place ribs in a shallow baking dish; pour two-thirds of the marinade over ribs. Turn to coat; refrigerate overnight, turning occasionally. - Preheat oven to 350 degrees. Juice one lemon and slice the other.
- Combine lemon juice, ketchup, molasses, chipotle pepper, cumin, and oregano.
- Measure out 1/2 cup of the sauce mixture and brush ribs all over. Place in a roasting pan.
- Scatter lemon slices over ribs. Sprinkle with onion and garlic. Add ginger ale and cover tightly.
- Place in oven and cook 1-1/2 hours or until very tender.
- Cool ribs in liquid, about 25 minutes.
- Preheat grill to medium-high and grease lightly.
- Remove ribs from cooking liquid (discard liquid, lemons, and onion).

- Before you do anything with your ribs, remove silver skin from the back of the rib racks. Unlike other connective tissue — like collagen, which slowly dissolves into gelatin during cooking — silver skin does not break down. When left attached to the meat, it cooks up tough and chewy. You don't want that. I find that the easiest way to remove silver skin is to pry it up at the bone with the tip of a handle of a small fork or spoon, then I run my fingers between the skin and the rack. You want to start somewhere in the middle of the rack. If it breaks just grab the side and slowly pull away to one of the sides. You can use a paper towel to get a good grip if it's too slippery.
- Cut the racks into two-rib sections. This is not the typical procedure when cooking baby back ribs, but I prefer doing that. The simple reason is that I don't have to mess with slicing hot rib racks afterward. It's not easy and the meat tends to tear when it's fall-off-the-bone tender. Pre-cut ribs look neat and presentable. Try this, you will thank me later.
- Apply dry rub and garlic. I always apply the dry rub to the meaty side of the rib rack. There is no meat on the other side so applying seasonings there is pointless. Some folks like to wet the ribs with a couple of teaspoons of vegetable oil or yellow mustard to make the spices stick better. I used to do that but not anymore. I find that my dry rub sticks to the meat just as well without oil or mustard. That said, either approach is fine so pick whichever you like best.
- Place the ribs on a baking sheet or dish and cover with foil. Make sure that whatever you will be baking the ribs in has at least 1 inch-high walls as the ribs will release some water during baking. The ribs are now ready to be baked. If time permits, let them sit at room temperature for about an hour. This will allow the seasoning to penetrate the meat and the meat will come up to room temperature and won't sweat in the hot oven once you put it in.

- Preheat oven to 275°F with rack in middle position. Stir together salt, brown sugar, smoked paprika, pepper, garlic powder, and dry mustard in a bowl. Remove thin outer membrane on back of ribs by loosening with a butter knife and pulling it off; discard. Brush slabs evenly with oil; sprinkle with spice mixture, gently patting to adhere. (If desired, wrap ribs with plastic wrap; place on a baking sheet, and chill at least 4 hours or up to 24 hours.)
- Line a baking sheet with aluminum foil; set a wire rack inside sheet. (If you wrapped and chilled the ribs, remove and discard plastic wrap.) Wrap each slab with heavy-duty aluminum foil; place on prepared wire rack. Bake in preheated oven until tender, 2 1/2 to 3 hours. Remove from oven, and unwrap ribs; discard foil and drippings. Place ribs directly on wire rack; brush 1/2 cup barbecue sauce on top of each slab. Return to oven; bake at 275°F until ribs are tender and meat is pulling away from bones, 45 minutes to 1 hour.
- Remove from oven; brush slabs evenly with remaining barbecue sauce. Increase oven temperature to broil, and return ribs to middle rack. Broil until sauce bubbles and starts to caramelize, 3 to 5 minutes. Remove from oven; let rest 5 minutes. Serve.
