CHUNKY CHEESE BREAD
A chunky cheese bread, both in appearance and in the use of a generous amount of cheese chunks. This bread freezes well.

- Generously grease two 8x4-inch or 9x5-inch loaf pans and set aside.
- In a large bowl or the bowl of a stand mixer fitted with a kneading hook, combine warm water and yeast. Stir and let stand 2-3 minutes, until foamy. Add the sugar, salt, mustard, eggs, oil, butter and 3 cups of the flour. Mix together until combined. Begin adding more of the flour, in small increments (1/2 cup at first, then 1/4 cup, then tablespoons), until you have a moist, smooth and elastic dough. Remove dough to a greased bowl and cover with plastic wrap. Allow to rise until doubled, about 30-60 minutes.
- Remove risen dough to a floured surface. Divide into two equal pieces. Roll one piece of the dough into a rectangle about 10x16-inches. Scatter one half of the shredded cheese evenly over top of the dough. Starting with the long side, roll the dough up jelly-roll style. Using a sharp knife, cut down the middle of each roll lengthwise. Then, using the knife, cut the two long pieces into smaller irregular pieces, about 1-inch-ish. Scatter about half the dough pieces onto the bottom of one of the prepared loaf pans. Scatter with 1/4 of the cheese cubes. Top with the rest of the dough pieces and then another 1/4 of the cheese cubes. Set aside and repeat this process with the same process with second dough piece, filling up the second loaf pan. Don't worry if it looks sparse. It will rise and all cook together wonderfully.
- When both loaf pans are filled, drizzle with melted butter, dividing it between the two loaves. Sprinkle with a pinch of garlic salt (or dried herb blenand some sesame seeds. Cover with greased plastic wrap and set to rise 30-45 minutes, or until puffy.
- Preheat oven to 350° Place loaf pan on a baking sheet (to catch any bubble-overand bake until well browned, 35-40 minutes. Check at 30 minutes. If top is brown enough, cover loosely with aluminum foil to stop additional browning and continue baking.
- Allow to cool in pans for about 20 minutes, then run a knife around the outside and remove to a cooling rack to cool completely. These freeze well!

- In blender container food processor bow with metal blade, finely chop tomatoes Add beans, yogurt, cumin, oregano parsley and garlic process 10 to 15 seconds or until beans are mashed. Set aside. In large bowl, combine 1 1/2 cups flour, sugar, salt and yeast mix well. In small saucepan, heat water and oil until very warm (120 to 130°F.). Add warm liquid and egg to flour mixture. Blend at low speed until moistened beat 3 minutes at medium speed. Add bean mixture beat until well mixed. By hand, stir in green chiles and an additional 3 1/2 to 4 cups flour to form a stiff dough.On floured or cornmeal-coated surface, knead in 1/2 to 1 cup flour for about 5 minutes or until dough is smooth and elastic. Place dough in greased bowl cover loosely with greased plastic wrap and cloth towel. Let rise in warm place (80 to 85°F.) for 45 to 60 minutes or until light and doubled in size.Grease two 8- or 9-inch round cake pans or 1 large cookie sheet. Punch down dough. Divide dough in half shape each half into 6-inch round loaf. Place in greased pans. Using sharp knife, 1 1/2 inches from edge, cut 2 1/2-inch-deep ring around each loaf. Cut another 2 1/2-inch-deep ring 1 inch inside of first cut. Insert cheese in cuts pinch cut edges to seal. Cover let rise in warm place 30 to 40 minutes or until light and almost doubled in size.Heat oven to 375°F. Uncover dough. Bake 35 to 45 minutes or until loaves are deep golden brown and sound hollow when lightly tapped. Immediately remove from pans cool on wire racks.TIP: Bread can be frozen. Thaw at room temperature. To reheat, heat oven to 375°F. - Preheat oven to 400 degrees F ( 200 degrees C ). Grease a 15x10x1 inch jellyroll pan.
- In a heavy saucepan combine the sugar and eggs. Cook over medium heat, stirring constantly until sugar is dissolved. Remove from heat, stir in the flour, salt, vanilla, and pecans.
- Spoon mixture into the prepared baking pan and bake for 15 minutes in the preheated oven. Cool and cut into squares.

SOUTHWESTERN GREEN CHILE CHEESE BREAD
This is a wonderful bread to pair with any southwestern dish! It is pretty labor-intensive, but the reward is well worth it. We kept the leftover green chilis and put them on top of the bread, and it turned out well. We did try locating the green chili powder, but to no avail. To be honest, though, I cannot imagine that...

Steps:
- 1. Stir yeast & juice (or water) in a large bowl until dissolved.
- 2. In another bowl, stir together the 1 cup flour, milk powder, salt and chile powder, if used. Stir in yeast mixture & beat with electric mixer until it forms a sticky mass, about 3 minutes. Cover & let rest for 1 hour. Beat in egg & additional flour until dough begins to come together.
- 3. Plop onto a lightly floured counter & gradually knead in additional flour only as needed to prevent sticking and forms a soft dough. Too much flour will make your bread dry. Knead until soft & smooth, about 5 minutes. Knead in cheese & chile.
- 4. Coat ball of dough with olive oil and place in bowl. Cover with damp cloth & let rise in a warm spot until doubled, about 1 hour.
- 5. Reshape into a ball tucking in the ends & place on a greased cookie sheet. Let rise again until almost doubled, 15 to 30 minutes. Preheat oven 425 degrees & place baking pan filled with 1-1/2 inches of water on the lowest shelf of oven.
- 6. Sprinkle loaf with additional grated cheese, if you wish and place in middle of oven. Immediately reduce temperature to 375 and bake 20-30 minutes until golden brown & bread sounds hollow when tapped with your fingers. Remove from oven & cool somewhat, for better slicing. It is great served warm but great at any temperature.
- 7. DON't worry if you can't find the Green chile powder, it will work without it.
