A Healthy Southwest Chicken Casserole Recipe that is so easy to make! This Mexican Chicken Casserole is perfect for a one-pan dinner.

1 cup uncooked long grain white rice
1 teaspoon minced garlic
½ cup chopped onion
1 cup chicken broth
1.5 lbs chicken breasts (cut into 1 inch cubes)
1 cup black beans (cooked, rinsed & drained)
1 cup frozen corn (defrosted)
16 oz jarred salsa
1/2 teaspoon chili powder
1/2 teaspoon paprika
1 cup cheddar cheese

Steps:

  • Preheat the oven to 350 degrees.
  • In a large casserole dish, lay down white rice, minced garlic, onion and chicken broth. Stir until combined.
  • Add chicken breasts, black beans, corn, salsa, chili powder and paprika on top. Try to keep the rice on the bottom and covered so it can cook correctly.
  • Top with cheddar cheese.
  • Cover and bake for 45 minutes.
  • Bake uncovered for an additional 10 minutes or until the cheese is melted.

4 large bone-in chicken thighs
1/2 tablespoon(s) mild paprika, or as needed
1 teaspoon(s) ground himalayan sea salt, or as needed
1 teaspoon(s) freshly ground black pepper, or to taste (i always use mixed peppercorns)
1 tablespoon(s) olive oil
1 tablespoon(s) oliclarified butterve oil
3/4 cup(s) red onions, finely chopped
3/4 cup(s) celery, finely chopped
3/4 cup(s) red peppers, finely chopped
2 large cloves garlic, pressed
1/4 cup(s) dry white wine
1 tablespoon(s) fresh rosemary, chopped
1 tablespoon(s) chipotle in adobo, puréed
1/4 cup(s) freshly squeezed lemon juice
2/3 cup(s) low-sodium chicken broth
1/2 tablespoon(s) lemon zest
1 can(s) (12 oz./341 ml.) corn kernels, drained
2/3 cup(s) 35% heavy cream

Steps:

  • Preheat oven to 350ºF.
  • Season chicken generously with paprika, salt and pepper; set aside. In a large ovenproof skillet over medium-high heat, add oil and clarified butter. Place thighs skin side down and cook until brown, about 4 to 5 minutes per side; remove and place them on a plate.
  • Reduce heat to medium and holding paper towels with tongs, remove most of the fat in the skillet, leaving about 1 ½ tbsp. Add red onion and celery; sauté for 3 minutes. Add red pepper and cook for 3 minutes. Add garlic and sauté for 1 minute. Add wine to deglaze and remove any brown bits at the bottom of the pan. Cook it down for about 1 minute.
  • Add rosemary, chipotle purée, lemon juice and chicken broth; stir well and bring to a boil. When it starts, add lemon zest and continue stirring for another 2 minutes before adding corn kernels. Place chicken thighs skin side up back to the skillet, cover and transfer in the preheated oven for 45 minutes or until internal temperature reaches 165ºF; baste every 15 minutes.
  • When cooking time is up, remove from the oven and transfer chicken thighs onto a plate, covering loosely with foil to keep them warm. Turn the burner to medium heat and pour in heavy cream. Stir well and cook until sauce thickens about 5 to 7 minutes. Spoon sauce over the chicken thighs and serve immediately.

3/4 cup celery, finely chopped
3/4 cup red pepper, finely chopped
2 large garlic cloves, pressed
1/4 cup dry white wine
1 tablespoon fresh rosemary, chopped
1 tablespoon chipotle chile in adobo
1/4 cup lemon juice
2/3 cup low sodium chicken broth
1/2 tablespoon lemon zest
1 (12 ounce) can corn kernels, drained
2/3 cup heavy cream

Steps:

This is a recipe I developed after tweaking many other recipes. It has become a real favorite in my household! Easily adjustable to your preference of spiciness as well. Also easy to change to your liking by adding other veggies or peppers. Save time by cooking extra chicken ahead of time when making other chicken dishes. Serve with your choice of toppings, like sour cream, guacamole, sliced avocados, sliced black olives, or whatever else you like!

1 pound skinless, boneless chicken breast halves
½ cup water, or as needed
1 large onion, chopped
1 red bell pepper, chopped
1 (15 ounce) can black beans, partially drained
1 (14 ounce) can whole kernel corn, drained
¾ cup picante sauce
1 (4 ounce) can chopped green chiles
2 tablespoons chili powder
1 tablespoon ground cumin
4 (8 inch) flour tortillas
1 (10.75 ounce) can condensed fiesta-style nacho cheese soup
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 cup shredded Mexican cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring chicken breasts and water to a boil in a large skillet; cook over medium heat until chicken juices run clear and meat is no longer pink inside, about 10 minutes. Transfer chicken breasts to a large plate, reserving pan juices in skillet, and shred chicken with 2 forks.
  • Cook onion and red bell pepper in reserved drippings over medium heat until onion is translucent, 5 to 8 minutes. Return shredded chicken to skillet. Stir black beans, corn, picante sauce, chopped green chiles, chili powder, and cumin into chicken mixture until thoroughly combined. Bring mixture to a simmer and cook until heated through, about 5 minutes. Pour chicken mixture into prepared baking dish.
  • Arrange flour tortillas in a single layer over chicken mixture. Stir fiesta soup with diced tomatoes and green chiles in a bowl until thoroughly combined; spread soup mixture over tortillas. Top casserole with Mexican cheese blend.
  • Bake in the preheated oven until cheese topping has melted and casserole is hot, about 30 minutes. Cool 5 minutes before serving.

  • In a small bowl, combine the garlic powder, chili powder, salt and paprika. Rub over both sides of chicken. In a large skillet coated with cooking spray, brown chicken on both sides; drizzle with lime juice. Cover and cook for 5-7 minutes or until chicken juices run clear.
