MY MOM'S FAMOUS CALICO BEANS



My Mom's Famous Calico Beans image

1 (15-ounce) can red pinto beans
1 (15-ounce) can white kidney/cannellini beans
1 (15-ounce) can black beans
8 ounces bacon (chopped)
1 cup chopped onion
1/2 cup ketchup (see note)
1 teaspoon Worcestershire sauce
2 teaspoons dry mustard
1/3 cup brown sugar
3/4 teaspoon salt
1 tablespoon apple cider or red wine vinegar
1/3 cup water or low-sodium broth
1 teaspoon cornstarch (optional, helps thicken the sauce a bit)

Steps:

  • Preheat the oven to 325 degrees F. Lightly grease a 3-quart baking dish (see note).
  • Drain and rinse all the beans (go ahead and throw them all together in one colander) and set aside.
  • In a large skillet, cook the bacon until crisp. Drain on paper towels, leaving about 1 teaspoon grease in the skillet.
  • Add the onion to the skillet over medium heat and cook until softened, 4-5 minutes. Off the heat, add the beans and bacon.
  • In a liquid measuring cup or bowl, combine the ketchup, Worcestershire, dry mustard, sugar, salt, vinegar, water (or broth) and cornstarch, if using, and whisk to combine thoroughly. Pour the sauce into the skillet and stir well.
  • Scrape the entire mixture into the prepared baking pan. Cover with aluminum foil and bake for 45-60 minutes. Serve immediately.

1 can (15 or 15.5 oz) dark red kidney beans, drained
1 can (15 oz) black-eyed peas, drained
1 box (9 oz) frozen baby lima beans
1 cup Old El Paso™ Thick 'n Chunky salsa
1 package (1 oz) Old El Paso™ taco seasoning mix

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook sausage over medium heat, stirring frequently, until no longer pink; drain.
  • In 3-quart casserole, combine sausage and remaining ingredients; stir.
  • Bake uncovered 60 to 70 minutes or until hot and bubbly.

1 pound lean ground beef (90% lean)
1 small onion, chopped
1 can (21 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (16 ounces) butter beans, rinsed and drained
1/2 cup packed brown sugar
1/2 cup ketchup
4 bacon strips, cooked and crumbled
1 tablespoon cider vinegar
1 teaspoon prepared mustard
1 teaspoon salt

Steps:

  • Preheat oven to 325°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 5-7 minutes, breaking up beef into crumbles; drain. Stir in remaining ingredients. Transfer to a greased 2-qt. cast-iron pan or baking dish. , Bake, uncovered, until the beans are as thick as desired, 45-60 minutes.

1 pound lean ground beef
4 ounces bacon (4 slices)
2/3 cup diced white onion
1/2 cup brown sugar (100 grams)
2 tablespoons white vinegar (31 grams)
1 tablespoon mustard (15 grams)
1 teaspoon salt (5 grams)
1/2 cup ketchup (4 ounces)
15 ounces lima beans (1 can, drained)
15.5 ounces kidney beans (1 can, rinsed and drained)
28 ounces pork and beans (with juice)

Steps:

  • In a skillet over medium high heat, brown the ground beef along with the bacon and onion. Cook and stir until the beef and bacon are fully cooked. Then drain off any fat.
  • In a medium bowl, whisk together the brown sugar, vinegar, mustard, salt and ketchup. Set aside.
  • In a large dutch oven or oven safe casserole dish, add the drained lima beans, rinsed and drained kidney beans and then add the whole can of pork and beans, juice and all.
  • Add the beef/bacon mixture and then add the sauce. Mix well until it is all combined.
  • Preheat the oven to 300ºF.
  • Cover the beans (if you don't have a lid that works, use aluminum foil), then bake for 45 minutes or until heated through and bubbling.
  • Serve warm.
  • Store any leftovers in an airtight container in the refrigerator for up to 4 days.

This is one of my favorite cookout side dishs! My Aunt Char makes these all the time and I finaly got the recipe from her! They are a great side dish with hamburgers, hotdogs, potato salad...the list goes on and they are yummy!

1 lb ground beef
6 slices bacon
1/2 cup chopped onion
1/2 cup ketchup
1 teaspoon salt
1 teaspoon dry mustard
2 teaspoons vinegar
3/4 cup brown sugar (packed)
1 (15 ounce) can kidney beans
1 (15 ounce) can pork and beans
1 (15 ounce) can butter beans

Steps:

  • Fry bacon until crisp.
  • Drain.
  • Fry ground beef in fat until tender.
  • Combine onion, ketchup, salt, mustard, vinegar, brown sugar, and partly drain beans in a 3 quart oven container.
  • Mix well.
  • Add hamburger and crumbled bacon.
  • Bake at 350 degrees for 40 minutes.

1 tablespoon white vinegar
4 slices bacon, cooked and cut into 1-inch pieces
3 -4 chipotle chiles in adobo, seeded and chopped
2 tablespoons adobo sauce (from the canned chipotles)
1 large onion, chopped
3 -4 garlic cloves, minced
1/2 cup ketchup
1 (12 ounce) can beer
1/4 cup packed brown sugar
1 tablespoon mustard
1 teaspoon ground cumin
2 1/2 cups water

Steps:

  • Add beans to a saucepan; add enough water to cover; add in the vinegar; soak overnight.
  • Drain and rinse beans.
  • Add beans and remaining ingredients to a slow cooker; stir to combine.
  • Cover and cook on HIGH for 4 hours.
  • Stir, then continue cooking on LOW for 3-4 more hours or until the beans are tender.
