These breakfast sliders combine all of your favorite morning foods-like eggs, bacon and bagels-into one tasty package. —Rashanda Cobbins, Milwaukee, Wisconsin

8 large eggs
1/4 cup 2% milk
2 green onions, thinly sliced
1/4 teaspoon pepper
8 tablespoons spreadable chive and onion cream cheese
8 miniature bagels, split
8 slices cheddar cheese, halved
8 slices Canadian bacon
8 cooked bacon strips, halved
GLAZE:
2 tablespoons butter, melted
1-1/2 teaspoons maple syrup
1/8 teaspoon garlic powder
2 tablespoons everything seasoning blend

Steps:

  • Preheat oven to 375°. Heat a large nonstick skillet over medium heat. In a large bowl, whisk eggs, milk, green onions and pepper until blended; pour into skillet. Cook and stir until eggs are thickened and no liquid egg remains; remove from heat., Spread cream cheese over bagel bottoms; place in a greased 13x9-in. baking dish. Layer each with a half-slice of cheese and Canadian bacon. Spoon scrambled eggs over top. Layer with remaining halved cheese slices, cooked bacon and bagel tops. Stir together butter, maple syrup and garlic powder; brush over bagel tops. Sprinkle with everything seasoning blend., Bake until tops are golden brown and cheese is melted, 12-15 minutes.

12 dinner rolls or Hawaiian sweet rolls
9 eggs, scrambled
6 slices ham
6 slices white cheddar cheese
6 strips cooked bacon
3 oz baby spinach
2 tablespoons butter, melted
1 teaspoon black pepper

Steps:

  • Preheat the oven to 350°F (180°C).
  • Slice the rolls in half lengthwise. Place the bottom half in a 9 x 13-inch (23 x 33 cm) rimmed baking dish. Spread the eggs evenly over the rolls, then add the ham, cheddar, bacon, and spinach. Top with the remaining rolls.
  • Brush the tops of the rolls with melted butter and sprinkle the pepper on top. Bake for 20 minutes, or until the bread is golden brown. Slice into individual sliders, then serve.

12 eggs
salt and ground black pepper to taste
2 tablespoons butter
1 (12 count) package Hawaiian bread rolls (such as King's®)
18 slices provolone cheese, or as needed
12 slices deli ham, or as needed
¼ cup butter
1 ½ tablespoons brown sugar
1 tablespoon prepared yellow mustard

Steps:

  • Whisk eggs, salt, and pepper together in a bowl until frothy. Melt 2 tablespoons butter in a large skillet over medium-low heat. Pour eggs into skillet; cook and stir with spatula until set, 3 to 6 minutes. Remove from heat.
  • Cut rolls in half horizontally; lay bottoms in a single layer in a 9x13-inch baking dish. Add a layer of provolone cheese, then scrambled eggs, then a layer of ham, then provolone cheese, then ham, then provolone cheese again. Cover with roll tops. Cut through ham and provolone cheese layers to make individual sandwiches.
  • Melt 1/4 cup butter, brown sugar, and mustard together in a small saucepan over medium heat; cook and stir until sugar is dissolved. Spread mixture over roll tops. Cover baking dish with aluminum foil and let stand, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Remove aluminum foil from baking dish.
  • Bake in preheated oven until tops are golden brown and cheese has melted, 15 to 20 minutes.

  • In a large bowl, combine the bread, milk, salt, pepper, cumin, coriander, chili powder, smoked paprika, garlic, and Worcestershire sauce. Using a fork, mash into a paste.
  • Add the ground beef, jalapeno, scallions, and cheese. Using your hands, mix until well combined. Shape the beef mixture into 8 patties slightly wider than the diameter of the buns. Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill. Refrigerate until ready to cook.
  • Preheat the grill to medium-high heat and oil the grates. Brush the cut sides of the buns lightly with oil and set aside.
  • Grill the burgers, covered, until nicely browned on the first side, about 3 minutes. Flip burgers and add cheese (if desired); continue cooking for about 2 minutes more for medium rare. Remove the patties from the grill and let rest on a plate. Add the buns to the grill, oiled side down, and grill for about 1 minute, or until lightly toasted with grill marks. Remove from the grill. Mound the arugula (if using) on the bottom halves of the buns. Top each bottom half with a patty, followed by a generous amount of the Roasted Tomato Peach Jam (or ketchup or salsa) and the upper half of the bun. Serve hot.
