I wanted to cut back on red meat, but my husband thinks ground turkey can be dry. I think the taco seasoning and jalapeno juice in this recipe give the turkey added flavor and moistness...and he agrees! -Lindsay Ludden, Omaha, Nebraska

Number Of Ingredients 10

1/2 pound ground turkey
3/4 cup black beans, rinsed and drained
1/2 cup water
1/3 cup sliced ripe olives
2 tablespoons reduced-sodium taco seasoning
1 tablespoon juice from pickled jalapeno slices
1 flour tortilla (10 inches), cut into 1-inch pieces
1/2 cup shredded reduced-fat Mexican cheese blend
2 tablespoons pickled jalapeno slices
2 tablespoons reduced-fat sour cream

Steps:

  • In a large skillet, cook turkey over medium heat until no longer pink; drain. Stir in the beans, water, olives, taco seasoning and juice from jalapenos. Bring to a boil. Reduce heat; simmer, uncovered, for 6-7 minutes or until thickened. , Stir in tortilla pieces. Sprinkle with cheese and jalapeno. Remove from the heat and cover for 1-2 minutes or until cheese is melted. Serve with sour cream.

I was inspired to create more Southwestern-flavored foods from our travels there. This is a great way to use leftover chips and salsa. You can substitute chicken cutlets for the turkey if you like. -Lisa Varner, El Paso, Texas

Number Of Ingredients 10

2 large eggs
2 tablespoons water
3 teaspoons ground cumin
1 teaspoon garlic salt
1/2 teaspoon pepper
1-3/4 cups crushed tortilla chips
1 package (17.6 ounces) turkey breast cutlets
2 tablespoons canola oil
1/2 cup pico de gallo
Optional: Sour cream and chopped fresh cilantro

Steps:

  • In a shallow bowl, whisk together the first 5 ingredients. Place crushed chips in another shallow bowl. Dip cutlets in egg mixture, then in chips, pressing to help adhere., In a large skillet, heat oil over medium-high heat. In batches, cook cutlets until golden brown, 2-3 minutes per side. Serve with pico de gallo and, if desired, sour cream and cilantro.

1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (7 ounce) can diced green chile peppers, drained
1 cup sour cream
16 (6 inch) corn tortillas, cut into strips
10 ounces cooked turkey, diced
8 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the chicken soup, mushroom soup, chile peppers and sour cream.
  • Line the bottom of a 9x13 inch baking pan with corn tortillas. Follow with a layer of turkey. Pour soup mixture over turkey, sprinkle with 1/2 of the cheese. Repeat layers and top with cheddar cheese. Bake for 30 to 45 minutes or until cheese is browned and bubbly.
