TEX-MEX TATER TOT CASSEROLE
A Southwest seasoned ground beef filling with black beans and corn is topped with cheese and crunchy tater tots in this remake of a classic hot dish.

- Preheat oven to 400 degrees.
- In a large skillet brown ground beef, onion and garlic and cook until beef is no longer pink. Add the peppers and saute until just tender.
- Add the flour and taco seasoning and cook a few minutes more. Gradually stir in the milk and bring to a simmer. Simmer 2-3 minutes until mixture is thickened.
- Add half the cheese, along with the black beans and corn. Season with salt and pepper, to taste.
- Sprinkle the remaining cheese over the ground beef mixture. Top with frozen tater tots.
- Place skillet on a sheet pan and bake for 20-30 minutes, or until tater tots are golden brown and crispy. Let stand 5 minutes before serving.

Steps:
- Preheat the oven to 350°F (180°C).
- Cut the head of cauliflower in half, remove the stem, and chop into small pieces. Set aside.
- Heat the oil in a large cast-iron skillet over medium heat. Add the garlic and onion and cook until fragrant, about 2 minutes.
- Add the corn, carrots, black beans, and 2 cups (600 g) of cauliflower and cook, stirring often, for another 3 minutes, until the corn starts to brown around the edges.
- Add the flour, chili powder, and salt and stir until the vegetables are evenly coated.
- Add the milk and diced tomatoes and cook, stirring constantly, until thickened, about 3 minutes.
- Add the mozzarella cheese and stir until melted.
- Turn off the heat and arrange the tater tots on top of the vegetable mixture.
- Transfer to the oven and bake until browned and bubbling, about 30 minutes.
- Garnish the casserole with tomato, red onion, jalapeño, and cilantro, if using.

- Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch casserole dish with cooking spray.
- Spread 20 potato nuggets in the casserole dish.
- Bake in preheated oven until warmed through, about 10 minutes.
- Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until beef is completely browned, 5 to 7 minutes; drain and discard grease. Season beef mixture with 2 teaspoons Worcestershire sauce, steak seasoning, garlic powder, and black pepper.
- Stir cream of mushroom soup, milk, 1/2 cup Cheddar cheese, and 1 teaspoon Worcestershire sauce together in a bowl.
- Smash the warmed potato nuggets in the casserole dish to cover the bottom completely. Spread ground beef mixture over the mashed potato nuggets. Pour soup mixture evenly over the beef layer. Top with remaining potato nuggets and sprinkle 1 cup Cheddar cheese evenly over the nuggets.
- Bake in preheated oven until casserole is bubbly and potatoes golden brown, 30 to 40 minutes.

- Brown the hamburger meat and the sausage together in a skillet. Drain the canned veggies and mix all together in a casserole dish with the cheese sauce. After the meat is browned and the grease is drained stir it in with the mixture. Top with the tater tots then sprinkle the cheese on top.
