SOUTHERN STYLE SALMON PATTIES



Southern Style Salmon Patties image

Can substitute Lemon-Pepper Seasoning vs. fresh lemon juice and ground pepper (reduce to 1 egg if using this substitute).

1 can(s) salmon, canned, de-boned and de-skinned if preferred.
1/4 lemon juice, fresh
10 saltine cracker crumbs
1/3 c yellow cornmeal
2 eggs
1 Tbsp onion, minced
ground pepper to taste
olive oil, for frying

Steps:

  • 1. Empty the can of Salmon into bowl and remove bones and skin if desired.
  • 2. Squeeze in juice from 1/4 section of fresh lemon.
  • 3. Add 10 finely crumbled saltine crackers.
  • 4. Add yellow cornmeal, eggs, onion and pepper.
  • 5. Mix the above very well. Using hands, make 6 to 8 patties of about 2 inches in diam.
  • 6. Heat olive oil at med to high and carefully place patties in hot oil. Cook until golden brown, flip. Patties are ready to place on paper towels to drain oil, when golden brown on both sides.

1 lb salmon, boned and drained (reserve liquid)
1 egg
2 -3 tablespoons flour
2 -3 tablespoons cornmeal
1 piece whole wheat bread or 1 piece white bread, crumbled

Steps:

  • mix all ingredients, salt and pepper to taste. If patties seem too dry and have trouble sticking together, add in some of the reserved juice.
  • Form into patties and fry in butter or olive oil over medium heat. Brown on one side, then flip and brown on other side.

Salmon patties are quick and easy. I got this recipe from my son's babysitter many years ago. My son is now 20 and we still eat these at least a few times a month. These are very moist when done.

1 (14 3/4 ounce) canned salmon
1/4 cup onion, finely chopped
1/4 cup cornmeal
1/4 cup flour
1 egg
3 tablespoons mayonnaise

Steps:

  • Open salmon and drain thoroughly. Place drained salmon in mixing bowl and flake evenly with a fork.
  • Add onion, corn meal, flour, mayonnaise, and egg. Stir until well blended.
  • Shape the mixture into patties about the size of an average burger or less.
  • Cook in oil in skillet over medium heat until browned on each side. Turn once while frying.
  • Note: The mayonnaise helps the patties hold their shape and keeps them from being too dry.

  • Add cooking oil to 12" cast iron skillet, about 1" deep. Heat on stove top over medium heat. Oil will be hot enough for frying when a little water sprinkled over the surface crackles.
  • While oil is heating, mix together salmon, mayonnaise, lemon, egg & Worcestershire sauce. Add onion, Creole seasoning, salt & pepper and mix well.
  • Crush 13-15 saltine crackers and add to salmon mixture. Mix well again. Finely crush rest of crackers on a small plate to dredge patties in.
  • Gently form small to medium patties from the salmon mixture with your hands, then carefully place in finely crushed saltines and pat to cover on all sides.
