2 lb ground chuck
8 slice bacon
4 slice your favorite cheese
1 large purple onion, sliced
8 mushrooms, sliced
1 Tbsp olive oil & worchestshire
1/2 tsp coarse sea salt, black pepper, cumin
roasted tomatillo salsa
4 large toasted hamburger buns

Steps:

  • 1. Season & form patties. Cook bacon, saute onions & mushrooms, set aside.
  • 2. On inside griddle or outside grill, cook burgers till doneness wanted.

$200.00 prize winner. I found this in Better Homes & Gardens. I have not tried this recipe, but I'm posting it for safe keeping.

30 -32 ounces canned black-eyed peas, rinsed and drained
1 egg, lightly beaten
1/2 cup finely chopped red sweet pepper
1/4 cup dry bread, crumbs fine ground
1/4 cup finely chopped celery
3 green onions, finely chopped
1/2 teaspoon garlic salt
2 tablespoons olive oil
1/2 cup mayonnaise
1 teaspoon cajun seasoning
12 soft dinner rolls, split and toasted
lettuce leaf

Steps:

  • In large bowl mash black-eyed peas with a potato masher. Add egg, sweet pepper, bread crumbs, celery, green onions, and garlic salt; mix well. Shape bean mixture into twelve 1/2"-inch thick patties about 3"-inches in diameter.
  • In large skillet heat 1 tablespoons of the oil over medium heat. Add half of the patties to the hot oil. Cook 8 minutes or until lightly browned and heated through, turning once. Remove and keep warm. Repeat with remaining oil and patties.
  • In small bowl stir together mayonnaise and Cajun seasoning. Spread cut side of each roll with the mayonnaise mixture. Place a burger on bottom half of each roll; top with lettuce and add roll top.

  • Divide the meat into 4 equal portions and with your hands, form each portion into a patty about 3/4 inches thick. Make a deep depression with your thumb in the middle. (This will keep the patty from puffing up when it cooks.)
  • If grilling the hamburger patties, preheat your grill to high and oil the grates. Grill the burgers for about 3 minutes on the first side, flip them over and cook for an additional 4 minutes or until they are cooked throughout. Top with 1/4 cup of pimento cheese during the last minute of cooking and allow it to melt. Remove the burgers from the grill and keep warm until you are ready to assemble.
  • If cooking the burgers inside, use a cast iron skillet and preheat over medium-high heat. Add the oil and when it is hot, add the patties. Cook the burgers for about 3 minutes on the first side, flip them over and cook for an additional 4 minutes or until they are cooked throughout. During the last minute of cooking top the burgers with 1/4 cup of pimento cheese, place a lid on the pan and let the cheese melt. Remove the burgers from the pan and keep warm until you are ready to assemble.
