4 cups coarsely crushed nacho tortilla chips
2 cups shredded Monterey Jack cheese
1 small onion, finely chopped
1 tablespoon butter
6 large eggs, lightly beaten
2-1/2 cups whole milk
1 can (4 ounces) chopped green chilies, undrained
3 tablespoons ketchup
1/4 teaspoon hot pepper sauce

Steps:

  • Arrange tortilla chips in a greased 13x9-in. baking dish; sprinkle with cheese and set aside. In a large skillet, saute onion in butter until tender. , In a large bowl, whisk the eggs, milk, onion, chilies, ketchup and hot pepper sauce; pour over cheese. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 40-45 minutes until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.

2 medium ripe avocados, peeled and finely chopped
3 tablespoons minced fresh cilantro
1 to 2 red chili peppers, finely chopped
1/4 teaspoon salt
2 small limes
12 slices French bread baguette (1/2 inch thick)
Crumbled Cotija cheese, optional

Steps:

  • In a small bowl, mix avocados, cilantro, chili peppers and salt. Finely grate zest from limes. Cut limes crosswise in half; squeeze juice from limes. Stir lime zest and juice into avocado mixture. Refrigerate 30 minutes., Preheat broiler. Place bread slices on an ungreased baking sheet. Broil 3-4 in. from heat 1-2 minutes on each side or until golden brown. Top with avocado mixture. If desired, sprinkle with cheese.

6 slices thick white bread (remove crust)
6 slices monterey jack cheese
1 can chopped green chili
1 1/2 cups cubed ham
2 cups milk
5 eggs
2 teaspoons chopped green onions
1 teaspoon Tabasco sauce
1 cup shredded cheddar cheese

Steps:

  • Spray 9x13 inch casserole dish.
  • Place bread on bottom and top with monterey jack cheese, green chiles and ham.
  • Mix eggs, milk, green onion& tabasco and pour over bread.
  • Top with cheese and cover over night.
  • Bake 325 for 40 minutes.

A Christmas morning favorite, or anytime you're serving breakfast to overnight guests. Making this dish the day before and refrigerating overnight is recommended to develop flavor.

2 lbs pork sausage
1/4 cup finely chopped green bell peppers (optional) or 1/4 cup red bell pepper (optional)
2 teaspoons prepared yellow mustard
12 slices white bread, crust removed
1 lb shredded cheddar cheese or 1 lb swiss cheese
6 large eggs
4 cups milk
1 teaspoon Worcestershire sauce
1/8 teaspoon black pepper
1/8 teaspoon salt
1/8 teaspoon ground nutmeg (optional)

Steps:

  • The day before:.
  • Grease a 9"x13" baking pan.
  • In a large skillet, saute sausage and peppers. Break up the sausage, stirring and frying until it is well-browned. Drain off the fat. Stir mustard into the sausage.
  • Arrange 6 slices of bread on bottom of baking pan. Top with 1/2 of the sausage and 1/2 of the cheese. Repeat with remaining bread, sausage, and cheese to make a second layer.
  • Beat eggs in large bowl. Beat in milk, Worcestershire sauce, salt, pepper, and nutmeg. Pour beaten mixture over layers in the baking pan.
  • Cover tightly and refrigerate overnight.
  • On serving day:.
  • Remove baking pan from refrigerator one hour before cooking to reach room temperature.
  • Bake uncovered at 350F for 40-50 minutes or until center seems set. Serve immediately.

2 teaspoons corn oil margarine
1 cup sliced white mushroom
1 large onion, diced (2 cups)
16 slices white bread, crust removed
1/2 lb lean bacon, cooked crisp and crumbled
3/4 cup diced celery
2 anaheim chilies, seeds removed and diced
1/2 lb reduced-fat sharp cheddar cheese, grated (2 cups)
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons snipped fresh dill or 2 teaspoons dried dill weed, crushed
1 large tomatoes, peeled and thinly sliced
1 cup liquid egg substitute
2 large eggs, slightly beaten
3 cups low-fat milk
1 tablespoon Dijon mustard

Steps:

  • Melt the margarine in a large skillet over medium heat.
  • Add the mushrooms and onions and cook, stirring, until just slightly tender, 2 minutes.
  • Spray a 9 x 13-inch baking dish with non stick vegetable spray.
  • Place 8 of the bread slices in the prepared dish.
  • Layer half of the mushrooms and the onions, bacon, celery, and chilies on top of the bread and finish with half of the cheese.
  • Sprinkle with half of the salt, pepper, and dill.
  • Repeat the bread layer and the remaining half of the ingredients as above but add the tomato slices before the cheese.
  • Thoroughly mix the egg substitute, eggs, milk and mustard and pour into the dish.
  • Cover with wax paper or plastic wrap and refrigerate overnight.
  • Before baking, allow the strata to stand at least 30 minutes at room temperature.
  • Preheat oven to 350 degrees F.
  • Bake the strata, uncovered, until bubbly and lightly browned, 45 minutes.
  • Remove from the oven and allow to cool for 5 minutes before slicing.

1 lb ground beef
1/2 cup chopped onion
1 jalapeno, minced (optional or more to taste)
2 (8 ounce) cans tomato sauce
1 tablespoon chili powder
1/2 teaspoon salt
6 corn tortillas, cut in half
2 cups cheddar cheese, shredded (8 oz)

Steps:

  • Preheat oven to 325 and grease 1 1/2 qrt casserole dish.
  • Brown meat and drain.
  • Add onion and jalapeno (if using) and cook with meat until tender.
  • Stir in tomato sauce and seasonings.
  • Layer one-third of meat mixture, cheese and one half of tortillas in casserole dish; repeat layers, ending with cheese.
  • Bake at 325 for 20 minutes.
  • Note: Corn tortillas will soften and absorb the sauce.
  • These are recommended.
  • Flour tortillas will expand and the casserole will be too doughy-therefore flour tortillas are not recommended.

1 tablespoon cornmeal
1 loaf (1 pound) frozen bread dough, thawed
1/2 pound lean ground beef (90% lean)
1 medium onion, chopped
1 sweet yellow pepper, chopped
1 garlic clove, minced
1 can (16 ounces) fat-free refried beans
1 cup salsa
1 can (4 ounces) chopped green chilies
1 to 2 teaspoons chili powder
2 cups shredded reduced-fat Mexican-blend cheese
2 medium tomatoes, chopped
2 cups shredded lettuce

Steps:

  • Coat two 12-in. pizza pans with cooking spray; sprinkle with cornmeal. Divide the bread dough in half; roll each portion into a 12-in. circle. , Transfer to prepared pans. Build up edges slightly; prick dough thoroughly with a fork. Bake at 425° for 12 minutes or until lightly browned., Meanwhile, in a large skillet, cook the beef, onion, yellow pepper and garlic over medium heat until meat is no longer pink; drain. Stir in refried beans, salsa, chilies and chili powder; heat through. , Spread over the crusts; sprinkle with cheese. Bake 6-7 minutes longer or until cheese is melted.
