SHRIMP BURGERS WITH OLD BAY MAYO

1 pound peeled and deveined medium shrimp
1/3 cup panko breadcrumbs
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
2 scallions, white and green parts, thinly sliced
1 large egg, lightly beaten
1/4 cup canola oil
1/2 cup mayonnaise
1 teaspoon to 1 tablespoon Old Bay seasoning
4 brioche buns, halved and lightly toasted
Avocado slices, for topping
Lettuce leaves, for topping
Tomato slices, for topping

Steps:

  • For the shrimp burgers: Coarsely chop half of the shrimp. Put the remaining shrimp in a food processor and pulse until smooth. Combine both shrimp in a large bowl with the breadcrumbs, lemon juice, salt, garlic powder, pepper, scallions and egg and mix. Refrigerate for 10 minutes, and then form into 4 patties. Refrigerate 10 more minutes.
  • Heat the oil in a large cast-iron skillet over medium-high heat. Cook the burgers, about 3 minutes per side.
  • For the Old Bay mayo: Combine the mayonnaise and Old Bay to taste in a small bowl.
  • To serve, spread the buns with the mayo and place the burgers on the buns. Top the burgers with the avocado slices, lettuce leaves and tomato slices.

¾ cup Duke's Mayonnaise (strongly preferred) or Best Foods / Hellman's - any other brands will get you sent to the Siberian salt mines!
1 Tbsp. minced garlic
2 Tbsp. fresh lemon juice
1 Tbsp. minced fresh Italian parsley leaves
2 Tbsp. minced shallots
1 ½ tsp. drained sweet pickle relish + ½ tbsp. brine - TFD endorses Wickle's brand
1 ½ tsp. minced cornichons
1 tsp. Old Bay Seasoning (or to taste)
½ Tbsp. Dijon mustard
2 Tbsp. minced capers + ½ tbsp. brine
¼ tsp. Tabasco
2 tsp. minced fresh tarragon
¼ tsp. horseradish (optional but TFD loves it)
***
Burgers:
1 cup panko bread crumbs
1 ¼ pounds peeled and deveined large shrimp (26 to 30 per pound), tails removed
2 tablespoons mayonnaise - TFD endorses only Duke's (preferred) or Hellman's/ Best Foods
¼ teaspoon freshly-ground white pepper
⅛ teaspoon salt
⅛ teaspoon radhuni seeds, fried gently in oil, dried and ground in a spice grinder - use regular celery seeds if unavailable
2 dashes Tabasco
1 scallion, chopped fine
¼ bunch of chives, chopped fine
¼ piece of celery, de-stringed and chopped fine
⅛ cup celery leaves, chopped fine
3 tablespoons vegetable oil
4 hamburger buns - TFD endorses only potato buns!
4 leaves Bibb lettuce
Slices of fresh tomato, red onion, sweet pickle slices (optional)

Steps:

  • For the tartar sauce: Combine all ingredients in bowl and refrigerate until needed.
  • For the burgers: Pulse panko in food processor until finely ground, about 15 pulses; transfer to shallow dish. Place one-third of shrimp (1 cup), mayonnaise, and all the seasonings in the now-empty processor and pulse until shrimp are finely chopped, about 8 pulses.
  • Add remaining two-thirds of shrimp (2 cups) to shrimp mixture in processor and pulse until coarsely chopped, about 4 pulses, scraping down sides of bowl as needed. Transfer shrimp mixture to bowl and stir in scallions.
  • Divide shrimp mixture into four ¾-inch-thick patties (about ½ cup each). Working with 1 patty at a time, dredge both sides of patties in panko, pressing lightly to adhere, and transfer to plate.
  • Heat oil in 12-inch nonstick skillet over medium heat until shimmering. Place patties in skillet and cook until golden brown on first side, 3 to 5 minutes. Carefully flip and continue to cook until shrimp registers 140 to 145 degrees and second side is golden brown, 3 to 5 minutes longer.
  • Transfer burgers to paper towel-lined plate and let drain, about 30 seconds per side. Spread tartar sauce on bun bottoms, then place burgers and lettuce on top with optional tomato, onion and sweet pickle slices. Cover with bun tops. Serve.

1 slice hearty white bread, torn into large pieces
1 1/2 lbs raw extra-large shrimp, peeled, deveined and patted dry (21 to 25 per pound)
1/4 cup mayonnaise
2 scallions, minced
2 tablespoons minced fresh parsley
2 teaspoons grated lemon zest
1 pinch cayenne pepper
1/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons canola oil (for brushing)
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon cilantro, minced
2 teaspoons sriracha hot sauce
2 teaspoons lime juice
1/2 teaspoon salt
1 garlic clove, minced

Steps:

  • Pulse bread in food processor to coarse crumbs, about 10 pulses. Transfer to bowl and set aside.
  • Pulse shrimp in now-empty processor until some pieces are finely minced and others are coarsely chopped, about 7 pulses. Transfer shrimp to large bowl.
  • Combine mayonnaise, scallions, parsley, lemon zest, cayenne, salt and pepper in large bowl until uniform, then gently fold into processed shrimp until just combined. Sprinkle bread crumbs over mixture and gently fold until incorporated.
  • Scrape shrimp mixture onto small baking sheet, divide it into 4 equal portions, and loosely pack each into 1-inch-thick patty. Cover and refrigerate the patties for at least 30 minutes or up to 3 hours.
  • To Grill: Clean and oil cooking grate. Lightly brush tops of patties with oil, lay them on grill, oiled side down and lightly brush other side with oil. Cook patties, without pressing on them, until lightly browned and cooked through, 10 to 14 minutes, flipping them halfway through grilling. Transfer burgers to platter, tent loosely with aluminum foil and let rest for 5 minutes before serving.
  • Stovetop: Cook in a 12 inch nonstick skillet over medium-high heat using 1-2 teaspoons vegetable oil until shimmering. Gently lay the shrimp burgers in the skillet and cook until crisp and browned on both sides, 8 to 10 minutes.
  • Sauce: Combine all ingredients together. Stir until well mixed.

You can make a burger out of anything, as most home cooks know; the challenge is in choosing a central element that delivers superior flavor and texture. Shrimp, like scallops, contain a high amount of natural gelatin, which allows you to incorporate a considerable amount of flavorings without worrying about the burger falling apart. If you purée just a portion of the shrimp, leaving the rest - along with the flavorings - just roughly chopped, you produce a good-textured burger with powerful flavor. Feel free to vary the heat, reducing or increasing the amount of chile. And as with any burgers, these can be seasoned pretty much according to your whim. No grill? Go ahead and pan-fry these burgers with a little bit of oil over medium-high heat.

1 large clove garlic, peeled
1 dried or fresh chile, stemmed, seeded and deveined, or more to taste
1 1-inch piece ginger, peeled and roughly chopped
1 1/2 pounds peeled shrimp, deveined if you like
1/4 cup roughly chopped shallots, scallions or red onion
1/4 cup roughly chopped red or yellow bell pepper, optional
Salt and pepper
1/2 cup cilantro leaves, or to taste
Neutral oil, like corn or canola, as needed
Toasted buns, optional
Lime wedges or ketchup for serving

Steps:

  • Start a charcoal or gas grill; fire should be moderately hot and rack about 4 inches from heat source.
  • Combine garlic, chili, ginger and 1/3 of the shrimp in a food processor and purée, stopping machine to scrape down sides of container as necessary. Add remaining shrimp along with shallots, bell pepper, salt, pepper and cilantro, and pulse as many times as necessary to chop shrimp, but not too finely. Shape mixture into 4 patties. Chill for 15 to 20 minutes.
  • Brush grill or patties lightly with oil and place them on grill. Cook undisturbed until a dark crust appears on bottom and they release fairly easily with a spatula, about 5 minutes. Turn and cook an additional 3 to 4 minutes on the other side. Serve on buns or not, as you like, with ketchup or lime juice as a condiment.

I watched a video of these shrimp burgers on Tube and thought they sounded great. I'm going to make these for dinner today with red cabbage coleslaw. I'll cook the burgers on a charcoal grill but pan frying would be tasty too.

1 slice fresh white bread
1 1/2 lb fresh shrimp
1/4 c mayonnaise
2 scallions,sliced thin
2 t minced fresh parsley
2 t. lemon zest
1/8 t salt
1/8 t. pepper
pinch of cayenne
2 t. canola oil or butter
SAUCE:
1/2 c mayo
1/2 c sour cream
1 t. cilantro,minced
2 t. siracha sauce (atk used a chipolte sauce)
2 t. lime juice
1/2 t. salt
1 garlic clove,minced

Steps:

  • 1. Pulse the bread in a food processor to coarse crumbs, about 4 pulses, and transfer to a bowl (you should have about 3/4 cup crumbs). Wipe the food processor clean, and pulse the shrimp until there is an even mix of finely minced and coarsely chopped pieces, about 7 pulses. Whisk the mayonnaise, scallions, parsley, lemon zest, salt, pepper, and cayenne together in a large bowl until uniform. Gently fold into the processed shrimp and breadcrumbs until just combined. Scrape the shrimp mixture onto a small baking sheet, divide it into 4 equal portions, and loosely pack each into a 1inch-thick patty. Cover with plastic wrap and refrigerate for 30 minutes. Brush burgers with oil on both sides.Grill 5-7 minutes on each side on medium heat of gas grill.
  • 2. Note: I saw on another site,these burgers were cooked in in a 12inch nonstick skillet over medium-high heat using 1-2 t.vegetable oil until shimmering. Gently lay the shrimp burgers in the skillet and cook until crisp and browned on both sides, 8 to 10 minutes.
  • 3. Sauce:Combine all ingredients together.Stir until well mixed.

Low Country Shrimp Burger Outside of Beaufort, SC on St. Helena Island there is a restaurant that makes the best shrimp burgers. They will not give out the recipe, so this is my first attempt to figure out this wonderful southern delicacy.

1 lb fresh shrimp (best if caught that day off the coast of South Carolina)
2 tablespoons fresh chives, chopped
3 tablespoons celery, finely chopped
2 tablespoons Italian parsley, chopped
1 1/2 teaspoons lemon zest
3 tablespoons mayonnaise (In South Carolina we like Duke's or Hellman's)
1 egg, beaten
3 dashes Tabasco sauce
salt
pepper
1 cup cornbread breadcrumbs
3 tablespoons oil

Steps:

  • 1. Boil, peel and then chop the shrimp.
  • 2. In large bowl mix shrimp with chives, celery, parsley and lemon zest.
  • 3. In smaller bowl mix mayonnaise with egg, salt and pepper to taste and tabasco sauce.
  • 4. Blend well and then add cornbread crumbs.
  • 5. Pour mayonnaise mixture into chopped shrimp and mix well.
  • 6. Shape into burger size patties and saute in oil until browned on both sides.
  • 7. Place on paper towels to drain.
  • 8. Serve on hamburger buns with tartar sauce.
  • 9. Or serve on hamburger buns with lettuce, tomato and tartar sauce.
  • 10. Or serve on hamburger buns with cole slaw.
