WHITE BEAN AND ASPARAGUS SALAD

- Mix one 15-ounce can cannellini beans (drained and rinsed) with 1 grated garlic clove, 1/4 cup olive oil and 2 tablespoons tarragon vinegar or white wine vinegar in a large bowl; let stand 15 minutes. Shave 1 bunch trimmed jumbo asparagus into ribbons with a vegetable peeler. Add to the bowl along with 1 tablespoon chopped tarragon and another 1 teaspoon vinegar; season with salt and pepper and toss. Toast 3 tablespoons panko in 1 tablespoon olive oil in a skillet; sprinkle over the salad.

White asparagus has a much milder taste and works well with the sweet fruitiness of strawberries. This salad is served with a creamy yogurt-mayo dressing with orange juice.

- Fill a pot with water; add 1/2 teaspoon each salt and sugar. Bring to a boil. Add white asparagus, reduce heat to low, and simmer until soft and cooked through, 10 to 15 minutes. Drain and let cool.
- Combine orange juice, yogurt, mayonnaise, and creme fraiche in a large bowl. Season with remaining salt, sugar, and pepper. Add cooled asparagus and strawberries and mix well.
- Arrange lettuce leaves on plates and distribute asparagus salad on top. Sprinkle with chives.

Phase II recipe As one review indicated, this is a bit on the bland side. For those of you not watching your salt intake, the flavor is improved by using tomato paste with the salt included. This is not a recipe to impress dinner guests, but an easy healthy weekday recipe. Its a good way to eat zucchini without realizing you are eating it.

- Preheat the oven to 350. Combine the tomato paste, wine, water, garlic, basil, oregano, and salt in a small saucepan. Bring to a boil, then reduce the heat to low. Simmer, uncovered for 15 minute Set aside.
- Combine the turkey, oatmeal, egg substitute, zucchini, and 1/2 cup of the tomato mixture ina large bowl. Mix well. Shape into a loaf and place into an ungreased 8"x4" loaf pan. Bake for 45 minute Discard any drippings. Pour 1/2 cup of the remaining tomato mixture on top of the loaf. Bake for an additional 15 minute.
- Place on a serving platter. Cool for 10 min before slicing. Serve the remaining tomato sauce on the side.
WHITE ASPARAGUS AND PORCINI SALAD

- Snap off ends of asparagus. Trim triangular leaves from sides, and peel spears. Place in pot of simmering salted water, and cook 6 to 8 minutes until very tender. Drain well on paper towels. Arrange on platter, drizzle with 2 tablespoons olive oil and refrigerate.
- Wipe mushrooms with damp paper towel. Pare off outside of porcini stems, trim ends and slice very thin. If using cremini, trim bottoms of stems; slice very thin.
- Place mache or purslane in bowl. Toss with 1 tablespoon lemon juice and 1 1/2 tablespoons olive oil. Season with salt and pepper. Toss again.
- To serve, arrange asparagus side by side on 4 large salad plates. Place mushroom slices across the center of asparagus. Season with salt and pepper. Drizzle with hazelnut oil and remaining lemon juice. Place a cluster of mache or purslane on top of mushrooms, arrange shavings of cheese over salad and serve.

- Bring water to a boil in the bottom of a steamer.
- Fit the basket in the steamer.
- Steam the asparagus over medium-high heat for about 6 minutes, until bright green and tender.
- Remove from heat and let asparagus cool in the steamer.
- Combine yogurt and blue cheese in a small saucepan.
- Warm over low heat for 1 to 2 minutes, whisking constantly, just until the blue cheese has melted.
- Remove pan from the heat and whisk in the lemon juice, chives, and garlic.
- Arrange the asparagus in the center of a serving plate and ring with the tomato wedges.
- Drizzle the yogurt dressing over the asparagus.

- Soften gelatin in cold water or 1/2 cup of the juice drained from the asparagus tips.
- Heat undiluted soup to boiling and add gelatin mixture.
- Stir to thorougly dissolve gelatin.
- Cool to room temperature.
- Mix mayonnaise and cream cheese and add to soup mixture.
- Add onion, olives, asparagus tips and toasted pecans.
- Pour into serving dish and chill until set.
- Serve on lettuce leaf.
- NOTE: Cooking time refers to chilling time.

- Thinly slice the mushrooms.
