GRILLED PIEROGIES AND KIELBASA

Steps:
- Preheat a grill to medium. Grill the kielbasa, turning, until marked, 8 to 10 minutes. Transfer to a baking sheet or platter.
- Meanwhile, whisk the mustard and vinegar in a large bowl. Slowly whisk in 2 tablespoons olive oil until smooth.
- Toss the onion and pierogies with the remaining 2 tablespoons olive oil and season with salt and pepper. Grill, covered, until the pierogies thaw and the onion begins to soften, about 5 minutes. Turn the pierogies and onion and continue to grill, covered, until the pierogies are cooked through and the onion is tender, 4 to 6 more minutes. Transfer to the baking sheet or platter.
- Slice the kielbasa into pieces and add to the bowl with the mustard dressing. Roughly chop the onion and add to the bowl along with the pierogies and parsley. Season with salt and pepper and toss. Divide among shallow bowls.

HAWAIIAN KIELBASA
NOTE: This recipe has been revamped due to the reviews. Everyone has said it's REALLY sweet. I did some playing and decided that depending on your baked beans, you probably don't need all that sugar (especially if feeding this to the kids. Too much will give them a high they may never come down off of!) Give this dish a try for something different and delicious! It's also easy-it's made in a crock pot! This recipe serves 4, but is easily doubled to feed a crowd.

- Place ingredients into a crockpot. Cook on high for 15 minutes.
- Turn heat to low and simmer for 15 minutes or until time to serve.

CALYPSO KIELBASA
A sweet and spicy and very colorful island-ish tasting treat. It'll make your taste buds dance. I created this recipe when I was running really low on groceries and had to throw something together for dinner. It has evolved a bit since, but same basic concept

Steps:
- Heat olive oil and add red pepper flakes in a large skillet
- Brown kielbasa on both sides in olive oil, and pepper flakes
- Add peppers and onion to skillet. Sautee until peppers sbegin to soften
- Add reserved pineapple juice and brown sugar and black beans to skillet. Reduce heat to simmer, and simmer for about 20 minutes.
- Add pineapple chunks. Cook down until you have desired sauce consistency
- Prepare egg noodles according to package directions. Drain
- Serve kielbasa mixture over egg noodles.
