This is a very quick and simple no bake dessert cake. It uses graham crackers and a pudding mixture. It tastes just like an eclair, but there is enough for a crowd!! It is a great recipe for children who are learning to cook, there is no baking involved or any power kitchen tools. Just a bowl and a spoon!

2 (3.5 ounce) packages instant vanilla pudding mix
1 (8 ounce) container frozen whipped topping, thawed
3 cups milk
1 (16 ounce) package graham cracker squares
1 (16 ounce) package prepared chocolate frosting

Steps:

  • Stir pudding mix, whipped topping, and milk together in a medium bowl until well blended.
  • Arrange a single layer of graham cracker squares in the bottom of a 13x9 inch baking pan. Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers.
  • Spread the frosting over the whole cake up to the edges of the pan. Cover, and chill at least 4 hours before serving.

2 (3 ounce) packages instant vanilla pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) package chocolate graham crackers
¼ cup milk
⅓ cup unsweetened cocoa powder
1 cup white sugar
2 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine pudding mix and 3 cups milk; mix well. Fold in whipped topping and beat with mixer for 2 minutes.
  • In a buttered 9x13 inch baking dish, spread a layer of graham crackers on the bottom of the dish.
  • Spread 1/2 of the pudding mixture over crackers, then top with graham crackers. Spread remaining pudding over crackers; top second pudding layer with another layer of crackers.
  • To make topping: In a medium saucepan over medium-high heat, combine 1/4 cup milk, cocoa and sugar and allow to boil for 1 minute; remove from heat and add butter and vanilla. Mix well and cool.
  • Pour sauce over graham cracker layer and refrigerate until set; serve.

An adaptation of a TOH recipe that is as easy as can be. Nice when you need to bring a sweet treat but do not have time the night before, b/c this is best made and refrigerated 2-3 days ahead of time. If you like less pudding, then use 2 packages of pudding and 3 1/2 cups milk. Enjoy!

3 (3 1/2 ounce) packages vanilla instant pudding mix
5 1/4 cups skim milk
8 ounces whipped topping, thawed

  • Cover the bottom of a 13 X 9 inch pan with whole graham crackers; set aside.
  • Combine pudding mixes and milk in large bowl; fold into whipped topping.
  • Spread pudding mixture over the graham crackers.
  • Top with another layer of crackers.
  • Spread frosting over the crackers.
  • Cover and refrigerate.

3 cups skim milk
6 ounces fat-free sugar-free vanilla pudding mix
12 ounces Cool Whip Free, thawed
1 cup low-fat graham cracker, crumbs
16 ounces reduced fat milk chocolate frosting

Steps:

  • Arrange 1 1/2 cups of the graham cracker crumbs on bottom of 13 x 9" pan.
  • In a mixing bowl, combine milk and vanilla pudding mixes.
  • Beat with a wire whisk for two minutes.
  • Gently stir in whipped topping.
  • Spread pudding mixture over graham cracker crumbs.
  • Place remaining graham cracker crumbs over pudding.
  • Remove top and foil from frosting container.
  • Microwave frosting in container on high 1 minute or until pourable.
  • Spread evenly over cracker crumbs.
  • Refrigerate 4 hours or overnight.

1 cup water
1 cup flour
4 eggs
1.5 (3 1/2 ounce) packages instant vanilla pudding
3 cups milk
8 ounces hot fudge topping
2 -4 tablespoons brewed coffee, cooled

Steps:

  • Boil water and butter. Add flour and stir till ball forms. Transfer to mixing bowl. Mix in eggs one at a time. Spread into greased 9x13 pan. Bake at 375 degrees for 30 minute Let crust cool. Mix pudding and milk. Pour over crust and refrigerate for 5 minute Thin hot fudge with coffee until pourable but not runny. Refrigerate.

2 Jello Instant Vanilla Pudding Mix (small packages)
3 cups milk
8 ounces non-dairy whipped topping
1 (16 ounce) box graham crackers (you will have some leftovers)
1 (15 ounce) container chocolate frosting

Steps:

  • Mix together vanilla pudding mix and milk.
  • Fold in whipped topping.
  • Line 9 x 13 pan with one layer of graham crackers.
  • Put half of the pudding mixture over the graham crackers.
  • Place a second layer of graham crackers over the pudding mixture.
  • Put the remaining pudding mixture over the graham crackers.
  • Place a third layer of graham crackers over the pudding mixture.
  • Heat the tub of frosting in the microwave for 30 seconds to soften. (Don't forget to remove the foil seal or you'll get fireworks).
  • Spread frosting on the top of the last layer of graham crackers.
  • Cover with plastic wrap and let set a couple hours or overnight in the refrigerator.
  • Cut in squares.

This is a popular recipe that has won blue ribbons at local county fairs!

BOTTOM LAYER
1 c water
1 stick butter or margarine
1 c flour
4 eggs
FILLING
1 pkg 8 ounce cream cheese, softened
3 c cold milk
2 small packages french vanilla instant pudding
TOPPING
16 oz container of cool whip
chocolate syrup

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Boil water and butter. Add flour and stir until it leaves the side of the pan.
  • 3. Add eggs, one at a time, beating well after each egg.
  • 4. Spread into a greased 11x16 jelly roll pan.
  • 5. Bake for 30 minutes or until golden brown. Cool.
  • 6. Beat cream cheese with 1 cup of milk until smooth. Add the 2 remaining cups of milk with the instant pudding mixes and beat until thick. Spread on cooled crust.
  • 7. Top with cool whip. Drizzle with chocolate syrup. Refrigerate until serving time. You may top each slice when serving with a marachino cherry!

It is so easy and I get many compliments on it every time I make it! I love it because it is NO BAKE and takes only a few minutes to prepare!

  • 1. Line the bottom of a 9x13-inch pan with graham crackers. In a large bowl, combine pudding mix and milk. Stir well. Stir in whipped topping to pudding mixture. Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding. Top all with a final layer of graham crackers.
  • 2. Take lid and protective foil off can of frosting. Microwave for 30 seconds. Pour on top of layered pudding/graham crackers. Refrigerate until time to serve.

2 pkg vanilla flavor instant pudding & pie filling, 4 serving size
1 tub cool whip, thawed, 12 oz
1 container ready to spread chocolate fudge frosting,16 oz

  • 1. Arrange 1/3 of the crackers on bottom of 13 x 9 inch baking pan, breaking crackers to fit, if needed. Pour milk into large bowl. Add pudding mixes. Beat with wire whisk 2 minutes. Gently stir in whipped topping. Spread 1/2 of the pudding mixture over crackers. Place 1/2 of the remaining crackers over pudding. Top with remaining pudding mixture and crackers. Remove top and foil from frosting container. Microwave frosting in container on high 1 minute or until pourable. Spread evenly over crackers. Refrigerate 4 hours or overnight. Cut into squares to serve. Garnish wit strawberries. You could make pistachio, banana flavored or even double chocolate éclairs by simply changing the pudding flavors. Makes 18 servings
