SOUR CREAM-CRANBERRY BREAD
The addition of sour cream makes this cranberry bread super moist. Don't forget the orange peel!

Steps:
- Heat oven to 375°F. Generously grease bottom only of 9x5-inch loaf pan with shortening or cooking spray.
- In medium bowl, stir all bread ingredients except cranberries with fork or whisk until moistened. Stir in cranberries. Pour into pan.
- Bake 50 to 55 minutes or until toothpick inserted in center comes out clean and top crust is deep golden brown. Cool 15 minutes. Loosen sides of loaf from pan; remove from pan and place top side up on cooling rack. Cool completely before slicing, about 2 hours. Wrap tightly and store at room temperature up to 4 days, or refrigerate.
- In small bowl, stir glaze ingredients until smooth and thin enough to drizzle. Drizzle glaze over bread just before serving.

CRANBERRY BREAD
Cranberry bread with glaze and canned cranberries - a soft loaf of homemade bread that is packed with tart cranberries and topped with a sweet, sugary glaze for a bread that is versatile enough to be enjoyed for breakfast or as a dessert.

- Preheat oven to 350 degrees and grease and flour (3) mini loaf pans and set aside.
- With a Kitchen-aid mixer or hand mixer cream softened margarine, eggs, and granulated sugar together until fully incorporated.
- Add baking powder, salt, baking soda, flour, and 1 tsp of almond extract to softened butter. Mix together until well combined. Then, add sour cream and fold in until fully incorporated.
- Scoop the batter into the loaf pans filling them ⅓ of the way full.
- Layer the cranberries on top of the batter saving ½ of the can.
- Add the remaining batter over the cranberries, leaving room for another layer of cranberries. (Don't forget that the batter will rise in the pan)
- Layer the rest of the can of cranberries over the batter.
- Bake for 40-45 mins. Before removing the bread from the oven use a toothpick to make sure the bread is baked in the middle. Poke the center of the loaf with a toothpick, if it comes out clean it is fully baked. If it comes out dirty bake it longer.
- Let the bread cool for 5 mins. then remove it from the pans and glaze.

- Preheat oven to 350°. In top of a double boiler or a metal bowl over simmering water, whisk the first 5 ingredients until blended; stir in cranberries. Cook and stir until mixture is thickened, 15-20 minutes. Remove from heat; stir in vanilla., Meanwhile, in a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. In another bowl, whisk flour, oats, salt and baking soda; gradually beat into creamed mixture. Stir in coconut. Reserve half of the dough for topping. Press remainder onto bottom of a greased 13x9-in. baking dish. Bake until set, 8-10 minutes., Spread sour cream mixture over crust; crumble reserved dough over top. Bake until filling is set and top is golden brown, 25-30 minutes. Cool in pan on a wire rack. Cut into bars.

- Preheat oven to 400 degrees F (200 degrees C). Grease a large loaf pan.
- Combine flour, 1 3/4 cup sugar, baking powder, salt, and baking soda in a large bowl. Add melted butter; stir until mixture is crumbly. Reserve about 1/4 cup cranberries and 1/4 cup mandarin oranges; stir remaining fruit into flour mixture.
- Beat eggs, milk, sour cream, vanilla extract, and orange extract in another bowl until smooth. Gradually stir egg mixture into flour mixture until batter is thoroughly incorporated. Pour batter into prepared loaf pan. Scatter reserved cranberries and mandarin oranges atop batter and sprinkle with remaining 1 tablespoon sugar.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch springform pan.
- Beat 1/2 cup butter, 1 cup white sugar, and vanilla extract in a large bowl using an electric mixer until creamy and smooth. Add eggs, 1 at a time, beating in the first egg thoroughly before adding the second. Whisk 2 cups flour, baking powder, baking soda, and salt together in a separate bowl; beat flour mixture into creamed butter mixture in several increments, alternating with sour cream, to make a batter.
- Spread half the batter in the prepared pan. Combine cranberries with 1/4 cup white sugar in a bowl and spread the cranberries over batter; top with remaining batter.
