- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
- Beat sugar and butter together in a large bowl with an electric mixer until light and fluffy; add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next. Add vanilla with the last egg.
- Sift flour, baking powder, and baking soda together in a bowl. Pour flour mixture alternately with the sour cream into the butter mixture, mixing until just incorporated. Fold chocolate chips into the batter. Pour batter into prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 30 minutes.

- Dissolve cocoa in boiling water; cool. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda, baking powder and salt; gradually add to creamed mixture alternately with sour cream, beating well after each addition. Add cocoa mixture and mix well. , Pour into 3 greased and floured 9-in. round baking pans. Bake at 350° until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely. , In a microwave, melt chocolate chips and butter; stir until smooth. Cool for 5 minutes. Transfer to a large bowl. Beat in sour cream and vanilla. Add confectioners' sugar; beat until light and fluffy. Spread between layers and over top and sides of cake. If desired, decorate with sprinkles. Store in the refrigerator.

- Preheat oven to 350 degrees.
- Coat a 9 X 13 inch pan with cooking spray.
- In a large bowl, combine flour, 1 1/2 cups sugar, baking powder, baking soda, salt, sour cream, butter, vanilla and eggs. Blend at low speed of electric mixer for 3 minutes.
- Pour one-half of the batter into prepared pan. Combine the remaining 1/2 cup sugar and cinnamon. Sprinkle one-half of sugar mixture and one-half chocolate chips over batter. Repeat with remaining batter, sugar mixture and chocolate chips.
- Bake 35 to 40 minutes or until a wooden toothpick comes out clean. Remove from oven and cool on wire rack.

- Position an oven rack in the middle of the oven and preheat to 350 degrees F. Lightly grease an 8-inch square pan with nonstick cooking spray. Line the bottom with parchment, leaving a 2-inch overhang on the sides (to make it easier to remove the cake after baking) and grease the parchment.
- Combine the all-purpose flour, sweet rice flour, baking powder, baking soda and salt in a medium bowl and whisk until combined.
- Beat the butter in a large bowl with an electric mixer until smooth. Add the sugar and cream the mixture until light and fluffy, 2 to 3 minutes. Scrape down the bowl with a rubber spatula. Add in the eggs one at a time, beating after each addition until combined. Scrape the bowl once more, then beat in the vanilla. Sift half of the dry ingredients over the egg mixture and beat just until combined. Beat in the sour cream and milk, then sift in the rest of the dry ingredients and beat just until the batter is smooth. Fold in the chocolate chips.

- Stir flour with baking powder, baking soda and salt.
- Beat butter with brown sugar in a separate bowl until light and fluffy.
- Beat in eggs, one at a time, add vanilla.
- Whisk 1/2 cup sour cream with milk.

- Sift togetehr the flour, sugar, baking powder, baking soda, and salt into a large mixing bowl.
- Add shortening, sour cream, vanilla, eggs, water and chocolate (melted then cooled).
- Beat with an electric mixer at low speed, scraping bowl constantly, for 1/2 minute.
- Increase speed to high and beat an additional 3 minutes, scraping bowl occasionally.
- Pour batter into 2 greased and waxed-paper lined 9-inch round cake pans.
- Bake in a preheated 350 degree F.
- Oven for 35 minutes or until cake tests done.
- Cool in pans on racks for 10 minutes.
- Remove from pans and cool completely on the racks.
- Place one cake layer on serving plate.
- Spread with Sour Cream / Chocolate Frosting.
- Top with second cake layer.
- Frost sides and top of the cake with the remaining Sour Cream/Chocolate Frosting.
- SOUR CREAM/CHOCOLATE FROSTING: Combine the softened butter or margarine, confectioners' sugar, and sour cream in a mixing bowl; blend well.
- Add chocolate which has been melted and cooled and vanilla.
- Beat until smooth.
- Try this little trick when making this cake.
- Take the layer that has the least amount of rise on the top and trim it to be flat with a sharp knife.
- Place the trimmed side down (layer should be upside down).
- Then frost between layers and place the other layer on right side up and finished frosting.
- It will give the illusion of having a cake with only one domed layer and will sit better on your cake plate.
- Also the trimmings are great eating just plain for the cook or for the kids.

- Adjust oven rack one-third up from the bottom of the oven; preheat oven to 325°.
- Butter a 9x5 inch loaf pan; dust it lightly with fine, dry bread crumbs; invert pan over paper and top to shake out excess.
- Place the chocolate and instant coffee in a small mixing bowl; add in the boiling water; stir occasionally until the chocolate is melted.
- Then let stand to cool to room temperature; it is all right if the chocolate settles to the bottom.
- Sift together the flour, baking soda, and salt; set aside.
- In a large bowl of an electric mixer cream the butter.
- Add in the vanilla and brown sugar; beat to mix well.
- Add the eggs one at a time, beating after each addition until it is thoroughly incorporated.
- On low speed gradually add the sifted dry ingredients, scraping the bowl with a rubber spatula and beating only until smooth.
- Then add the sour cream and again beat only until smooth.
- Finally, stir the cooled chocolate and gradually, on low speed, beat it inches.
- The batter will be thin; pour it into the prepared pan.
- Bake for 60-75 minutes, until pick comes out clean.
- Cool the cake in the pan for several minutes; then cover with a rack, invert pan and rack, remove pan, and let cake cool upside down.
- When the cake is cool, prepare icing.
- Icing: place the chocolate in the top of a small double boiler over hot water on low heat.
- Cover and let the chocolate melt.
- Meanwhile, place the butter, vanilla, powdered sugar, and the egg in the small bowl of an electric mixer; beat until smooth.
- Add in the warm melted chocolate; continue to beat until smooth and creamy.
- Spread the icing over the top of the cake; smooth it, or you can make deep zigzag ridges by moving a spatula or the back of a spoon through this thick, creamy icing.
- Let the cake stand for an hour or so until the icing is set (if you refrigerate this cake, the icing will become firm fudge candy).

- Preheat oven to 350°F. Butter a 10- to 12-cup Bundt pan; dust with flour.
- For topping:
- In a medium bowl, combine brown sugar, chocolate chips, chopped pecans, and cinnamon, and set aside.
- For batter:
- Sift flour, baking powder, and baking soda into a medium bowl and set aside.
- Using an electric mixer, cream butter and sugar until completely blended. Beat in eggs and then sour cream until the mixture is creamy and smooth. Slowly add the sifted dry ingredients, making certain to scrape the sides of the bowl into the mixture. Stir in the cinnamon and vanilla. Mix until batter is well blended.
- Sprinkle whole pecans on the bottom of the prepared pan. Evenly distribute 1/4 cup of topping in the pan. Fold the remaining topping into the batter until mixed well. Pour the batter into the pan, spread evenly, and bake 35-40 minutes. To test that the cake is done, insert a tester (I use a toothpick) into the center. If the cake is done, it will come out clean, without any batter sticking to it.
- Cool the cake for at least 20 minutes in the pan. Once the cake has cooled, put a plate or serving piece you will use upside down on top of the cake pan, so that the face of the plate covers the open portion of the cake pan completely. Invert the plate and pan at the same time and place on a flat surface. Using pot holders, slowly raise the pan so that the cake stands upright on the serving plate. Sprinkle with powdered sugar to decorate.

- Add nuts if desired (I don't).
- Place on a lightly greased cookie sheet by the teaspoon, 2 inches apart.
- Bake at 350 for 10 minutes.
- Makes 40-50 cookies.
