POTATO SALAD WITH WHITE WINE

Steps:
- Preheat oven to 200 degrees.
- Rinse potatoes and place them in a large saucepan with cold water to cover. Bring to a boil and simmer for 20 minutes or longer, depending on the size. Do not overcook.
- Drain potatoes, and when they are cool enough to handle, peel them and cut them into 1/4-inch slices. Place them in a heat-proof mixing bowl. Sprinkle with salt and pepper, wine and oil. Toss while warm. Cover bowl with foil. Place it in oven briefly to warm through. Turn into a serving dish and serve while warm.

- In a large saucepan, cover the potatoes with about 4 quarts water, 4 t salt and bring water to a boil.
- Lower the flame so that the potatoes cook at a medium simmer until they are easily pierced with a fork, approximately 20 minutes.
- Drain and rinse briefly under cool water for 1 minute.
- While the potatoes are still warm, cut them into thirds and add the remaining ingredients except for the scallions and herbs.
- IT IS IMPORTANT TO ADD THE DRESSING WHILE THE POTATOES ARE STILL WARM SO THAT THE FLAVORS ARE ABSORBED.
- Add the scallions and herbs after the salad has cooled or they will discolor.
- Serve at room temperature or chilled.

BRAISED CHICKEN DRUMSTICK WITH WHITE WINE

Steps:
- Sprinkle salt on the chicken drumsticks. In a large skillet, heat butter and oil at medium-high heat until butter has melted. Add chicken and cook for 10 minutes (flip often). With a pair of tongs, remove the chicken from the skillet and put it in a plate.
- In the skillet, add onions, shallots and garlic. Cook, scraping the bottom of skillet to remove the bits, for 5 minutes or until onions are tender.
- Put back the chicken in the skillet and sprinkle with thyme and 1/4 teaspoon pepper. Add white wine, chicken stock and bay leaf. Bring to boil. Reduce heat, cover and let simmer for 45 minutes or until chicken is tender (drizzle with cooking liquid from time to time). Put the chicken in a serving dish, cover and keep warm. Let reduce the cooking liquid, uncovered, for about 10 minutes or until it has the consistancy of a gravy. Add salt and pepper. Remove bay leaf.
- When ready to serve, garnish each serving with the onion gravy and sprinkle with mint, if wanted.

- Bring 1-1/2 qt. water to boil in large saucepan. Add new potatoes; cook 3 min. Add sweet potatoes; cook 10 min. or until all potatoes are tender. Drain potatoes; place in large bowl. Cool.
- Mix mayo, mustard, honey and pepper. Add to potatoes with remaining ingredients; mix lightly.
- Refrigerate 1 hour.
