BLACK BEAN TORTILLA CASSEROLE

- In a large saucepan, combine the onions, peppers, tomatoes, picante sauce, garlic and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Stir in the beans. , Spread a third of the mixture in a 13x9-in. baking dish coated with cooking spray. Layer with four tortillas and 2/3 cup cheese. Repeat layers; top with remaining beans., Cover and bake at 350° for 30-35 minutes or until heated through. Sprinkle with remaining cheese. Let stand for 5 minutes or until cheese is melted. Serve with toppings.

- Heat 1 tablespoon oil in a skillet over medium heat, and saute the onion and garlic until soft. Mix in beans, bell pepper, tomatoes, and corn; cook until heated through.
- Spread 6 tortillas with equal amounts of the bean and vegetable mixture. Sprinkle with equal amounts of the Cheddar cheese, and top with the remaining tortillas to form quesadillas.
- Heat 1/4 cup oil in a large skillet over medium-high heat. Place quesadillas in the skillet and cook, turning once, until cheese is melted and both sides are lightly browned.

- In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. On a lightly floured surface, roll each portion into a 7-in. circle., In a greased cast-iron or other heavy skillet, cook tortillas over medium heat until lightly browned, 1 minute on each side. - Combine dry ingredients in medium bowl.
- Add eggs and water.
- Set aside and let sit for 20 minutes.
- Spray small skillet with cooking spray.
- Pour 1/4 cup for one tortilla in pan.
- Cook on one side until golden brown.
- Turn over, barely cook for 30-40 seconds on second side.
- Place on wax paper.
- (Keep wax paper between each tortilla for easy seperation.).
- Store in fridge or freezer.

- Heat the oven to 250. Place the tortillas, one at a time, in a large nonstick skillet over medium heat and warm for 1 minute, flipping once or twice, until soft. Wrap them in a dish towel and keep them warm in the oven.
- To make the beef filling, heat the oil in the skillet over medium. Add the onion and saute for 3 minutes or until soft.
- Add the ground beef and cook, stirring to break up the meat, until it's no longer pink (about 4 minutes). Pour off the liquid.
- Add the garlic, chili powder, cumin, coriander, salt, and tomato sauce. Cook, stirring occasionally, over low heat for 10 minutes. (If the sauce is too thick, add a few tablespoons of water.)
- Meanwhile, place your toppings in separate small bowls and set them on the table. Choose four or more toppings, depending on your family's tastes.
- Place the warm tortillas in a basket and the beef filling in a bowl. Allow each person to layer ingredients into his or her own tortilla, then fold them up.

- Cook the ground lamb in a frying pan for 2 minutes.
- Add the onion and cook for 7 minutes until brown.
- Add the chilli powder and cum and cook for 1 minute.
- Tip in the tomatoes and kidney beans and bring to a boil.
- Reduce the heat, cover and cook for 30 minutes.
- Warm the tortillas in the microwave on High for 45 seconds.
- Spoon the lamb into the center of the tortilla and let everybody add their own extras (such as lettuce, cheese, sour cream, etc).
- Fold the edges over to enclose the filling.

- Add the chopped onion and saute for 3 to 5 minutes.
- Add the garlic and chile and cook for 1 minute.
- Put all the beans into a bowl, mash with a potato masher, then stir into the pan with the cilantro.

- Cook the beans, stirring, for 5 minutes, until soft.
- Place the tortillas on a cookie sheet and heat through in a warm oven for 1 to 2 minutes.
- To make the relish, put all of the ingredients into a bowl and mix together well.
- Spoon the beans into serving dishes and top with the cheese- Season well.
- Roll the warm tortillas and serve with the relish and beans.
