BLACK BEAN TORTILLA CASSEROLE

2 large onions, chopped
1-1/2 cups chopped green peppers
1 can (14-1/2 ounces) diced tomatoes, drained
3/4 cup picante sauce
2 garlic cloves, minced
2 teaspoons ground cumin
2 cans (15 ounces each) black beans, rinsed and drained
8 corn tortillas (6 inches)
2 cups shredded reduced-fat Mexican cheese blend
TOPPINGS:
1-1/2 cups shredded lettuce
1 cup chopped fresh tomatoes
1/2 cup thinly sliced green onions
1/2 cup sliced ripe olives

Steps:

  • In a large saucepan, combine the onions, peppers, tomatoes, picante sauce, garlic and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Stir in the beans. , Spread a third of the mixture in a 13x9-in. baking dish coated with cooking spray. Layer with four tortillas and 2/3 cup cheese. Repeat layers; top with remaining beans., Cover and bake at 350° for 30-35 minutes or until heated through. Sprinkle with remaining cheese. Let stand for 5 minutes or until cheese is melted. Serve with toppings.

1 tablespoon vegetable oil
1 onion, finely diced
2 cloves garlic, minced
1 (15 ounce) can black beans, rinsed and drained
1 green bell pepper, chopped
2 tomatoes, chopped
½ (10 ounce) package frozen corn
12 (12 inch) flour tortillas
1 cup shredded Cheddar cheese
¼ cup vegetable oil

Steps:

  • Heat 1 tablespoon oil in a skillet over medium heat, and saute the onion and garlic until soft. Mix in beans, bell pepper, tomatoes, and corn; cook until heated through.
  • Spread 6 tortillas with equal amounts of the bean and vegetable mixture. Sprinkle with equal amounts of the Cheddar cheese, and top with the remaining tortillas to form quesadillas.
  • Heat 1/4 cup oil in a large skillet over medium-high heat. Place quesadillas in the skillet and cook, turning once, until cheese is melted and both sides are lightly browned.

Number Of Ingredients 4

2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup water
3 tablespoons olive oil

Steps:

  • In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes., Divide dough into 8 portions. On a lightly floured surface, roll each portion into a 7-in. circle., In a greased cast-iron or other heavy skillet, cook tortillas over medium heat until lightly browned, 1 minute on each side. Serve warm.

These are great for making sandwiches for school lunch for those who are allergic to wheat. They are my sons most favorite. You can get bean flour at a health food store or grind your own if you have the time.

1/2 cup cornstarch
1/3 cup bean flour
2 tablespoons tapioca starch
1/2 teaspoon salt
2 eggs
1 1/2 cups water

Steps:

  • Combine dry ingredients in medium bowl.
  • Add eggs and water.
  • Set aside and let sit for 20 minutes.
  • Spray small skillet with cooking spray.
  • Pour 1/4 cup for one tortilla in pan.
  • Cook on one side until golden brown.
  • Turn over, barely cook for 30-40 seconds on second side.
  • Place on wax paper.
  • (Keep wax paper between each tortilla for easy seperation.).
  • Store in fridge or freezer.
  • Can be warmed in microwave.

  • Combine meat, beans, taco seasoning& soup.

10 flour tortillas
2 tablespoons vegetable oil
1/2 small red onion, minced
1 1/2 lbs ground beef
2 garlic cloves, crushed
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon salt
1 1/2 cups tomato sauce
1/2 small head iceberg lettuce, shredded
1 cup monterey jack cheese, shredded
1 small yellow bell peppers or 1 small red bell pepper, sliced
1 cup canned black beans, rinsed
salsa
1 avocado, sliced
1 tomatoes, chopped
1 cup sour cream
1/2 cup thinly sliced radish
4 fresh jalapeno peppers, seeds removed and sliced

Steps:

  • Heat the oven to 250. Place the tortillas, one at a time, in a large nonstick skillet over medium heat and warm for 1 minute, flipping once or twice, until soft. Wrap them in a dish towel and keep them warm in the oven.
  • To make the beef filling, heat the oil in the skillet over medium. Add the onion and saute for 3 minutes or until soft.
  • Add the ground beef and cook, stirring to break up the meat, until it's no longer pink (about 4 minutes). Pour off the liquid.
  • Add the garlic, chili powder, cumin, coriander, salt, and tomato sauce. Cook, stirring occasionally, over low heat for 10 minutes. (If the sauce is too thick, add a few tablespoons of water.)
  • Meanwhile, place your toppings in separate small bowls and set them on the table. Choose four or more toppings, depending on your family's tastes.
  • Place the warm tortillas in a basket and the beef filling in a bowl. Allow each person to layer ingredients into his or her own tortilla, then fold them up.

These look really yummy. I am sure if you like things with more of a kick you could use a hotter chilli powder but I am a spice wimp so this is right on target for my taste buds. I found this in the Winter 2008 copy of the BBC Easy Cook magazine.

17 5/8 ounces ground lamb
1 onion, chopped
1 teaspoon mild chili powder
1 teaspoon ground cumin
1 (14 ounce) can chopped tomatoes
7 ounces kidney beans, canned
8 flour tortillas

Steps:

  • Cook the ground lamb in a frying pan for 2 minutes.
  • Add the onion and cook for 7 minutes until brown.
  • Add the chilli powder and cum and cook for 1 minute.
  • Tip in the tomatoes and kidney beans and bring to a boil.
  • Reduce the heat, cover and cook for 30 minutes.
  • Warm the tortillas in the microwave on High for 45 seconds.
  • Spoon the lamb into the center of the tortilla and let everybody add their own extras (such as lettuce, cheese, sour cream, etc).
  • Fold the edges over to enclose the filling.

1 onion, finely chopped

1 green chili pepper, seeded and chopped
14 ounces canned red kidney beans, drained
14 ounces canned pinto beans, drained
2 tablespoons chopped fresh cilantro
2/3 cup vegetable broth
8 wheat flour tortillas
1/4 cup grated colby cheese
salt and pepper
4 scallions, chopped
1 red onion, chopped
1 green chili pepper, seeded and chopped
1 tablespoon garlic wine vinegar
1 teaspoon superfine sugar
1 tomatoes, chopped

Steps:

  • Heat the oil in a large skillet.
  • Add the chopped onion and saute for 3 to 5 minutes.
  • Add the garlic and chile and cook for 1 minute.
  • Put all the beans into a bowl, mash with a potato masher, then stir into the pan with the cilantro.
  • Stir in the bouillon.
  • Cook the beans, stirring, for 5 minutes, until soft.
  • Place the tortillas on a cookie sheet and heat through in a warm oven for 1 to 2 minutes.
  • To make the relish, put all of the ingredients into a bowl and mix together well.
  • Spoon the beans into serving dishes and top with the cheese- Season well.
  • Roll the warm tortillas and serve with the relish and beans.
